FLUFFY PINEAPPLE PIE

- Drain pineapple, reserving 1/2 cup juice (discard remaining juice or save for another use.) Set the pineapple aside. , In a large microwave-safe bowl, combine juice and marshmallows. Microwave, uncovered, on high for 1 minute; stir. Microwave 1 minute longer or until mixture is smooth. Refrigerate for 30 minutes or until lightly thickened and cooled, stirring occasionally. , Fold in whipped topping and pineapple. Pour into the crust. Cover and refrigerate for 2 hours or until firm. Garnish with cherries if desired.

Steps:
- Drain pineapple, reserving 1/2 cup of the juice & setting the pineapple aside.
- In a large microwave-safe bowl, combine this juice & the marshmallows, then microwave, uncovered, on high for 1 minute. Stir, then microwave another minute or until mixture is smooth.
- Refrigeerate the microwaved mixture for 30 minutes or until lightly thickened & cooled, stirring occasionally.
- When cooled, fold in the whipped topping & pineapple, then pour into the crust. Cover & refrigerate for 2 hours or until firm.
- When ready to serve, garnish with the cherries, if desired.

- 1. Drain pineapple, reserving syrup. Lightly press pineapple with back of spoon to remove excess liquid. Reserve 1/4 cup of pineapple for garnish. Measure syrup. If necessary, add orange or pineapple juice to equal 1 cup total liquid.2. In large bowl combine remaining pineapple, pineapple syrup, sour cream, milk, pudding mix, lemon juice and lemon peel. Beat with wire whisk for 1 minute. Whisk in whipped topping.3. Spread in crust. Refrigerate at least 4 hours or until set. Garnish with reserved pineapple. Store in refrigerator.
