This meatloaf recipe is made with ground beef, bread crumbs, and frozen mixed vegetables, for an interesting and delicious main dish.

3/4 cup evaporated milk
2 cups soft bread cubes
1/4 cup chopped onion
2 pounds lean ground beef
1 1/2 teaspoons kosher salt
2 large eggs, beaten
1 teaspoon dry mustard
1 1/2 cups (10 or 12 ounces) frozen mixed vegetables, steamed according to package

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F.
  • Line a rimmed baking sheet or baking pan with foil.
  • In a large bowl, pour milk over bread cubes and let stand until milk is absorbed.
  • To the bread and milk mixture add the chopped onion , ground beef, salt, eggs, and dry mustard; blend well.
  • Stir in vegetables.
  • Place the meat mixture in the prepared baking pan and shape it into an oblong loaf. Alternatively, pack gently into a large loaf pan.
  • Bake the meatloaf in a preheated oven for 1 1/2 hours.
  • Let stand for 5 minutes before turning out of pan and slicing.
  • Serve and enjoy!

1 pound ground beef
1/2 pound ground pork
1 cup chopped onion
1 green or red bell pepper
1 large baking potato, or russet potato
2 medium carrots
1/2 cup vegetable broth
1/2 teaspoon salt
1/2 teaspoon herb seasoning mixture
1/4 teaspoon freshly ground black pepper
1 large egg
1 cup soft bread crumbs
2/3 cup ketchup, divided

Steps:

  • Heat oven to 350 F.
  • In a large bowl, combine the ground beef and pork; blend well.
  • Peel the onion and chop it finely . Remove the seeds and stem from the bell pepper and chop it finely.
  • Peel and shred the potato and carrots.
  • Add the chopped and shredded vegetables to the meat along with the vegetable broth , salt, herb seasoning , pepper, and breadcrumbs.
  • Beat the egg lightly and add it to the bowl with half of the ketchup (1/3 cup).
  • Use your hands to blend all of the ingredients.
  • Pack the meat and vegetable mixture into a lightly greased 9-by-5-by-3-inch meatloaf pan or loaf pan, or shape the mixture into a loaf shape and place in a rimmed, foil-lined baking pan.
  • Bake the meatloaf in the preheated oven for 1 hour.
  • Carefully pour off and discard excess grease and spread the remaining 1/3 cup of ketchup over the top of the loaf; bake for about 20 to 30 minutes longer.

1/2 pound ground beef
1 slice bread, torn into small pieces
1 large egg, beaten
1/4 cup shredded carrot
2 tablespoons finely chopped onion

2 tablespoons finely chopped celery

Dash each pepper and garlic powder
5 tablespoons chili sauce or ketchup, divided

Steps:

  • In a bowl, combine ground beef, bread, egg, carrot, onion, green pepper, celery, seasonings and 2 tablespoons chili sauce., Form into a loaf in an ungreased 5-3/4x3x2-in. loaf pan. 1 cup dry breadcrumbs
1 1/4 cups milk
1 egg
1/4 cup onion, minced

1 lb ground beef
1/2 lb ground lean pork
2 cups breadcrumbs
1 egg, beaten
1 1/2 cups milk
4 tablespoons minced onions
2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon dry mustard
1/8 teaspoon ground sage

Steps:

  • Mix ingredients thoroughly.
  • Pack into greased 9x5x3" loaf pan.
  • Bake in 350 degree oven for 1 1/2 hours.
  • Serve hot or let cool and chill and serve cold.
  • Other suggestions: add 3 cloves minced garlic; spread bacon slices over the top before cooking and/or 3 Tbsp catsup or barbecue sauce; substitute 1 Tbsp horseradish and 1 Tbsp for the mustard and sage; substitute 1 cup sauerkraut for 1 cup breadcrumbs and add 1/2 tsp dill weed to taste; try it with other herbs/spices or combinations added such as curry powder, cayenne and cumin, or oregano and basil.

I love this meatloaf because it has such a good flavor and with the veggies built in, it is perfect with just a salad and some quick potato dish that can be baked in the oven with the meatloaf. A favorite in my family.

1 pound(s) ground chuck
1/2 pound(s) ground fresh pork or sausage
3 slice(s) soft bread- pulsed in the food processor to crumbs or 1 c. dry bread crumbs
1 cup(s) milk or 1 1/4 c. if using dry crumbs
1 - egg, beaten
1/4 cup(s) onion, minced
1 1/2 teaspoon(s) salt (divided use)
1/4 teaspoon(s) each : dry mustard, sage, celery salt, garlic powder
1 tablespoon(s) worcestershire sauce
1 cup(s) mixture of any of the following finely chopped or shredded vegetables: carrot, celery, zucchini, spinach, potato, sweet peppers of any color, and/or summer squash.
3 tablespoon(s) catsup

Steps:

  • Finely chop or shred your choice of vegetables, place in a bowl and sprinkle with 1/2 tsp salt. Let set for 10 -15 minutes and then squeeze any excess liquid out of the vegetables and discard liquid.
  • In a large bowl, break up the meat, add crumbs, onion, the remaining 1 tsp salt, seasonings and squeezed vegetables. Beat the egg and add to bowl. Add about 3/4 of the milk and mix to determine if you need more liquid. (If you have a two tined meat fork, this is the place to use it for stirring. I have found that if I do not squeeze or "knead" the meat mixture, but rather kind of toss it together, it produces a softer, more tender loaf when cooked)
  • Mix until WELL blended, Shape into a loaf, either in a loaf pan or on a rimmed baking sheet. Spread top with 3 Tbsp of Catsup if desired, and Bake at 350 degrees for 1- 1/2 hours until done. Makes 6-8 servings.
  • If using ALL beef for the meat mixture, substitute 1 Tbsp each of prepared horseradish and catsup for the mustard and sage.
