FLUFFY CRANBERRY SALAD

- If using frozen cranberries let thaw before using. In a food processor or blender grind the cranberries. Add the sugar, crushed pineapple and marshmallows. Let mixture stand overnight.
- Just before serving stir in the sliced banana and whipped cream.

FLUFFY CRANBERRY SALAD
Tart, crunchy and sweet, this salad is more than just fluffy. It's super easy to prepare and really packs a punch of flavor. What a great holiday side dish!

- 1. Using food chopper or processor; grind rinsed cranberries with granulated sugar until well incorporated. Place in serving bowl and fold in pineapple, apples, and marshmallows. Cover and refrigerate overnight.
- 2. Before serving, whip heavy cream and powdered sugar until stiff peaks form. (Powdered sugar can be omitted here, but since cranberries are naturally tart, this adds a little extra sweetness to the salad). For best results, use cold beaters and mixing bowl. (I place my beaters and bowl in the freezer for about 5-10 minutes.) This keeps my cream from warming up during the mixing process. The colder the cream, the thicker it gets!
- 3. Add pecans (opt) to cranberry mixture. Fold in whipped cream and serve.
FLUFFY CRANBERRY SALAD
Great with the traditional turkey dinner. Very light! Drop the sugar a bit if you like it a bit more tart. You can also add some mini-marshmallows if you like.

- 1. Rinse cranberries in colander, removing soft and spoiled berries. Using a chopper or food processor, chop cranberries to a fine, small consistency. Put in a medium-sized bowl and sugar; stir and let sit for 10-15 minutes.
- 2. Drain crushed pineapple in colander. Add cranberry mixture and remove as much liquid as possible.
- 3. In a separate, larger bowl, beat whipping cream until fluffy. Fold in cranberry/pineapple mixture, mixing well. Refrigerate for 1 hour before serving.
