This was adapted from a Hodgson Mill recipe for the breadmaker. I adapted it to traditional baking method and subbed some whole grain flour to make it healthier. The result was a sweet, fragrant, chewy and healthy bread that is fabulous with honey butter spread on top! I recommend Karen From Colorado's Recipe #17086. Enjoy!

7/8 cup water
2 tablespoons butter
3 tablespoons molasses
1 teaspoon salt
2 tablespoons golden flax seed meal
1 tablespoon vital wheat gluten
1 1/4 cups bread flour
1 1/4 cups white whole wheat flour
1 1/2 tablespoons fat free dry milk
1 1/2 teaspoons instant yeast

Steps:

  • Add dry ingredients to stand mixer.
  • Add liquid ingredients.
  • Mix at second speed 7 minutes.
  • Let rise covered until doubled (about 90 minutes).
  • Form log, let rise in bread pan to 1 1/4 inches high in center.
  • Bake at 350 degrees to internal temp of 190 degrees.

2/3 cup sunflower oil
3/4 cup sugar
4 large eggs, room temperature, beaten
1 cup almond milk
1 3/4 cup gluten-free all-purpose flour
1/2 cup flaxseed meal
2 1/2 teaspoons baking powder
pinch of salt
1 1/2 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 350F and grease an 8″ x 4″ metal loaf pan.
  • In a large bowl, beat the oil and sugar until combined.
  • Add the eggs and milk and whisk to get a pale yellow liquid mixture.
  • In a medium bowl, whisk the gluten-free all-purpose flour, flaxseed meal, baking powder, salt, and cinnamon to combine.
  • Sift the dry ingredients into the bowl with the wet ingredients and mix well to get a homogeneous batter (the batter will be rather liquid).
  • Pour the batter into the prepared loaf pan.
  • Bake for 50 to 55 minutes until the loaf is golden brown on top and a toothpick inserted in the middle comes out clean.
  • Allow the loaf to cool for at least 5 minutes in the pan before removing it and then cooling it completely on a wire rack before slicing.

1 cup warm milk (70° to 80°)
2 tablespoons butter, softened
2 tablespoons molasses
1 egg
1-1/2 teaspoons salt
2-1/2 cups bread flour
4-1/2 teaspoons sugar
1/2 cup rye flour
1/4 cup whole wheat flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

There are many good recipes for healthy whole-wheat breads, but all yeast versions take several hours to make. This quick bread uses baking powder and soda to leaven it instead. It is good for sandwiches, as a snack, or toasted with peanut butter or jam. If you need two loaves, freeze the extra bread for later use.

1/4 cup flax seeds
3/4 cup canola oil, plus more for pans
4 cups whole-wheat flour
1 cup all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 1/2 teaspoons salt
3 cups buttermilk
3/4 cup blackstrap molasses
2/3 cup toasted wheat germ

Steps:

  • Grind flax seeds in a spice mill or a clean coffee grinder until fine. Set aside. Heat oven to 375 degrees with rack in center. Lightly grease two 9-by-4 1/2-inch loaf pans with canola oil.
  • In a large bowl, sift or whisk together whole-wheat flour, all-purpose flour, baking powder, baking soda, and salt. Add canola oil, buttermilk, and molasses, and stir until well blended. Stir in wheat germ and reserved flax seeds. Divide batter evenly between the two prepared pans. Even out tops with a spatula.
  • Bake until a cake tester inserted in the middle comes out clean, about 45 minutes. Remove from oven, and transfer to a cooling rack.

1-1/2 cups whole wheat flour
1-1/2 to 2 cups all-purpose flour
1 package (1/4 ounce) active dry yeast
1 teaspoon salt
1-1/2 cups fat-free milk
1/4 cup packed brown sugar
2 tablespoons honey
2 tablespoons plus 1-1/2 teaspoons butter, divided
1/2 cup ground flaxseed
1/2 cup whole flaxseed

Steps:

  • In a large bowl, combine the whole wheat flour, 1 cup all-purpose flour, yeast and salt. In a large saucepan, heat the milk, brown sugar, honey and 2 tablespoons butter to 120°-130°. Add to dry ingredients; beat until smooth. Stir in ground and whole flaxseed until blended. Stir in enough remaining all-purpose flour to form a firm dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a large bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface. Shape into a loaf; place in a 9x5-in. loaf pan coated with cooking spray. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 35-40 minutes or until golden brown. Remove from pan to a wire rack. Melt remaining butter; brush over bread. Cool.

Old fashioned New England flavor using a bread machine! You can mix the bread in the machine then bake it in the regular oven using your favorite pans, I do.

1 ⅝ cups water
4 cups bread flour
2 tablespoons butter
2 tablespoons dry milk powder
⅓ cup molasses
1 tablespoon active dry yeast
2 teaspoons salt

Steps:

  • Place ingredients in the bread machine pan in the order suggested by the manufacturer. Select Dough or White Bread setting, and then Start.
  • If the dough does not form a ball on the paddle, add 1 tablespoon of flour at a time until the ball forms. Allow machine to complete selected cycle.
  • To bake conventionally, remove the dough from the bread machine pan after the Dough cycle has completed. Shape into a loaf, and place in a greased 9 x 5 inch loaf pan. Let rise until doubled. Bake at 350 degrees F (175 degrees C) for about 40 minutes.
