OATMEAL - FLAX SEED MEAL COOKIES

I have always enjoyed a hearty cookie that has a stout texture with more taste. I blended several recipes to come up with this. I have never left a party without one or more requests for this recipe. I am constantly trying new variations, but the original still stands as BEST! These cookies freeze well and of course they are great in a pinch defrosted in the microwave on half power.

Number Of Ingredients 11

1 cup butter, softened
2 cups packed brown sugar
2 eggs
2 tablespoons vanilla
1/2 tablespoon cinnamon
1 3/4 cups flour (I use unbleached)
1 teaspoon baking soda
3 cups oatmeal (can use either quick or old fashioned)
1/2 cup flax seed meal
1 (8 ounce) bag toffee pieces (Heath bits is the only kind we have here)
1 cup generous rough chopped pecans

Steps:

  • Mix first five ingredients well. Add flour and baking soda and blend well. Add oats and flax seed meal and mix until well blended. Mix in toffee chips and pecans.
  • Drop with tablespoon on parchment lined cookie sheets. Bake at 375 degrees for 10 to 15 minutes, or until lightly browned around edges. Remove and cool on cookie rack.

FLAX SEED HONEY COOKIES

I came up with this recipe when I wanted my 17 month old daughter to start taking flax. They are simple tasting, chewy and fairly easy to make. I flatten them down twice during baking with a spatula; once after 5 minutes of baking and then about a minute before they come out of the oven. DO NOT USE FLAX OIL in this recipe or any baking recipe for that matter as it breaks down into a substance that is not safe for ingestion. Only use flax seeds for baking or flax meal. Prep time doesn't include chill time.

3/4 cup butter or 3/4 cup oil
3/4 cup brown sugar, packed
1 egg
1/2 cup honey (molasses can also be used)
2 cups whole wheat flour
1/2 cup white flour
1 teaspoon fine sea salt (reg salt can be used)
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
2 tablespoons flax seeds
1/3 cup oats

Steps:

  • Cream together butter (or oil) and brown sugar.
  • Stir in egg and honey and mix well.
  • Fold in your dry ingredients (including the flax) and mix.
  • Cover with a towel and chill for about 2 hours.
  • Preheat oven to 350°.
  • Make dough into small balls (you can roll in additional flax seeds if you want).
  • Place on lightly greased cookie sheet.
  • Bake for about 9 minutes.
  • Remove and let cool on flat surface or wire rack.

1 1/4 cups flour
1/2 cup ground flax seeds
1 teaspoon baking soda
1 pinch salt
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup butter, softened
1 egg
1 teaspoon vanilla
1/2 cup creamy peanut butter

Steps:

  • preheat oven to 350°F Grease baking sheets or line with parchment paper.
  • In a small bowl, combine flour, flaxseed, baking soda and salt.
  • In a large bowl, cream sugars and butter. Beat in egg and vanilla. Beat in peanut butter until smooth. Fold in flour mixture.
  • Shape dough in balls, using about 1 tablespoons dough per cookie, and place 2-inches apart on prepared baking sheets. using a fork, flatten cookies in a crisscross pattern.
  • Bake for 8-10 minutes or until lightly browned. Let cool on baking sheets on wire rack for 5 minutes, then remove to rack to cool completely.

These cookies come from my godmother. I made them a few times when I was a teen and living with my parents.

2/3 cup oil
1/2 cup flax seed (not ground)
3/4 cup maple syrup (I've always used maple syrup and it's so good) or 3/4 cup corn syrup (I've always used maple syrup and it's so good)
2 -3 cups all-purpose flour (added progressively)

Steps:

  • Mix everything together until you have a nice consistency. Add between 2 and 3 cups of flour. When the dough holds together, it means it's enough flour. Put by teaspoon on a baking sheet and bake at 350 F around 12-14 minutes until they are just a little bit golden. But don't cook them too much.

  • Cream butter and sugars.
  • Add egg and vanilla and mix.
  • Mix in a separate bowl: flour, baking powder, baking soda, wheat germ (optional), cinnamon, cloves, and salt.
  • Add mixed dry ingredients to butter/sugar/egg/vanilla and mix.
  • Stir in oats and flax seed until moist dough forms.
  • Fold in chocolate chips (optional).
  • Cook on greased cookie sheet in 1 inch balls (use cooled tablespoon or ice cream scoop to place on sheet) 10-15 minutes at 350ºF (adjust cooking time as necessary for cookie moistness and oven strength).

1 1/2 cups unbleached flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vegetable oil
3 tablespoons applesauce
1/2 cup creamy peanut butter
1/3 cup ground flax seeds
1/2 cup brown sugar, packed
1/2 cup organic sugar
1 egg
2 tablespoons water

Steps:

  • Preheat oven to 375 degrees F.
  • Lightly coat cookie sheet with cooking spray.
  • In a small bowl stir together first four ingredients.
  • In mixing bowl cream together vegetable oil, applesauce, peanut butter, flax seed, sugars, egg, and water until smooth.
  • Add dry ingredients and mix until thick dough forms.
  • Roll dough into 1 inch balls and place on cookie sheet 3 inches apart.
  • Use a fork dipped in flour to flatten creating a criss cross pattern.
  • Bake at 375 degrees F for 9 - 11 minutes.
