Hedgiehog's Greek Flavoured Rice image

I came up with this recipe in an attempt to replicate the rice I ate at a local Mediterranean restaurant. The server told me the secret to the dish was the chicken broth and chickpeas. It is very flavourful and a great accompaniment to skewered Greek chicken and a fresh salad.

Number Of Ingredients 8

1 tablespoon olive oil
2 garlic cloves, minced
1 cup rice (I prefer to use Basmati)
1 1/2 cups good quality chicken broth
1/4 cup chickpeas
1/2 teaspoon dried oregano
1/2 teaspoon all purpose Greek seasoning
1/4 teaspoon cumin

Steps:

  • Heat the olive oil in a pan and add garlic and rice; cook until rice is a bit brown.
  • add all other ingredients and bring to the boil.
  • reduce heat to medium low; cover and let cook for 20 minutes.
  • Fluff with a fork and serve.

I get perfect rice every time with this Recipe. Taught to me by an Indian Teacher at her Indian Cooking Class. Boiled rice with spices and ingredients to add flavour. The flavour is spicy but not hot spicy

Number Of Ingredients 6

1 cup basmati rice (or however much you need to cook)
1 tablespoon butter
1 small onion
2 cardamom pods
1/2 a cinnamon stick
1 star anise

Steps:

  • Wash Rice in a bowl several times until the water is no longer starchy.
  • Heat up the butter in a medium size pot.
  • Add Onion & Stir through washed Rice quickly (just so that they are coated with Butter).
  • Add Water.
  • For the perfect amount of water for cooking time, put water into pot with rice and use your middle finger, rest the tip of the finger on top of rice (not bottom of pot) and stop water level once it reaches the first crease/part the finger e.g. the whole tip of finger.
  • Add spices.
  • Bring to the boil, stir thoroughly.
  • Do not boil for long just bring to the boil then reduce heat.
  • Reduce heat to simmer and put lid on the rice.
  • Keep on low heat until all the water has evaporated.
  • Remove spices and serve.
  • Cooking time is approximate and depending on how much rice you are cooking, but is very quick to make.

FLAVOURED ONION RICE WITH BROCCOLI



Flavoured Onion Rice with Broccoli image

Another one of my bizzare originals, that actually turned out wonderfully! This makes a light main dish along with a salad/raita, or a side dish with anything else! Steam the broccoli beforehand if you like to it more cooked. I like it crunchy! Oh, and I didn't make a spelling error; "FlavoUr" is right :)

Number Of Ingredients 9

1/2 cup long-grain rice or 1/2 cup basmati rice
1 cup water
1/2 teaspoon butter or 1/2 teaspoon margarine
1/2 medium onion, sliced into rings
1/3 cup water
1 cup broccoli floret
2 teaspoons tomato paste
salt
pepper (optional)

Steps:

  • Wash the rice well.
  • In a saucepan, cover the rice with 1 cup water, add a little salt (around 1/4 to 1/2 teaspoon), and bring to a boil.
  • Now lower the flame, cover the saucepan with a lid, leaving a small gap for the steam to escape, and cook for about 15 minutes or until the rice is cooked.
  • While the rice is cooking, melt butter in a skillet and saute the onions on medium-high heat until browned.
  • Remove onions from the skillet and reduce the flame to low.
  • Add 1/3 cup water to the same skillet, salt to taste, and cook the broccoli in it for about 5 minutes.
  • Now add the tomato paste, mix well, and cook for another minute or so.
  • When all the water has evaporated, add the browned onions and the cooked rice to the skillet and mix well.
  • Heat through for a minute, add salt to taste, and turn off the burner.
  • Add a dash of pepper and serve hot!
