FLAT APPLE PIE WITH PERFECT PIE CRUST

- Preheat the oven to 375 degrees F.
- In large bowl, stir together the apples, brown sugar, granulated sugar, flour, salt and lemon juice. Set aside and see how long you can keep from sneaking a slice of apple.
- With a rolling pin, begin rolling out the Perfect Pie Crusts into large circles. Roll the dough from the center outward. Be gentle and patient, it'll take a little time to get the dough completely rolled out.
- If you think the bottom is really sticking to the surface below, use a nice, sharp spatula to loosen the dough and sprinkle some extra flour on top. Then flip it over to finish rolling. Remember to roll from the center in single, outward strokes, no back-and-forth rolling.
- Again with a spatula, loosen and lift the dough and carefully place the circles on large baking sheets.
- Place half the apple mixture on one crust and the other half on the other crust. Fold over the edges of each crust so that it covers 2 to 3 inches of the apple mixture. No need to be artistic - the more rustic the better. Dot the tops of the pies with chunks of the butter.
- Bake until the filling is golden and bubbly, 30 to 40 minutes. If the crust appears to brown too quickly, cover the edges with aluminum foil for the remaining baking time.
- Allow to cool slightly, then slice into wedges with a pizza cutter. Eat 'em on the go!

PIONEER WOMAN FLAT APPLE PIE W/PERFECT CRUST
This is the BEST apple pie evah! Note: Pioneer Woman (aka Ree Drummond, my culinary hero) adds a homemade caramel sauce to drizzle over the top - sounds awesome, but the pie has been so delicious just by itself I've never tried it. I have, however, tried it ala mode w/vanilla bean ice cream & it was over the top deeeeelish!

- Line 2 baking sheets with parchment paper. With a rolling pin, begin rolling out the dough disks into 12-inch rounds on a lightly floured surface, rolling from the center outward. If you think the bottom is really sticking to the surface below, use a nice sharp spatula to loosen the dough and sprinkle some extra flour on top. Then flip it over to finish rolling. Loosen the dough with a spatula, lift and carefully place each round on a prepared baking sheet.

Fold in the edges so that the dough covers 2 to 3 inches of the apple-cranberry mixture. No need to be artistic?the more rustic, the better. Freeze the pies 30 minutes.
- Dot the tops of the pies with the butter chunks. Brush the crust edges with the egg wash. Bake the pies until the filling is golden and bubbling, 35 to 45 minutes. If the crust appears to brown too quickly, cover the edges with foil for the remaining baking time. Let the pies cool slightly, then slice into wedges.

- CRUST (NOTE: I use my food processor): In the food processor, with the blade attachment, and combine the flour and salt. Add the shortening, and pulse until the dough is crumbly and sticks together. Add the egg and vinegar and pulse until the dough is just combined. If using a pastry cutter: Combine flour and salt. Cut in shortening with a pastry blender until dough is crumbly and the size of small peas. Combine egg, water and vinegar and add to flour mixture. Mix with a fork until dough stick together. Divide the dough in half, and heap onto plastic wrap. Shape the dough into a disc and refrigerate. This can be done a day or two ahead, or even frozen for a couple of weeks. Roll out on well-floured board to desired thickness and ease into pie pan. NOTES: I find that this pie crust can be more challenging to work with, because of the egg. It tends to break apart, and needs "patching". It can be a little frustrating, but it's worth it. The end result is that the crust is very tender. Yes, you can make this pie in a traditional pie pan. The flat apple pie makes this easier to serve to larger crowds, and is easier to work with the dough. PIE FILLING: Peel, core and slice the apples (I bought an apple, corer and peeler and love how fast and easy it is to do this.) Mix the ClearJel (or flour) to the sugar and whisk together and pour over the apples. Add the spices, then the lemon juice and stir to combine. Using a half-sheet baking pan, spray with non-stick coating. Place the bottom half of the pie crust, leaving at least a 1/3" overhang. Evenly spread the apple filling and dot with small pats of butter. Roll the second crust and carefully place over the pie. Cut slots for steam with a paring knife. OPTIONAL: I like to whisk one egg with a splash of water and brush it over the top layer of the pie crust, so it will bake a beautiful golden brown. Then, I sprinkle coarse sugar on top for a crunchy texture. Place the pie on a large baking sheet (I placed mine on a baking stone) and bake at 375°F for 30 to 45 minutes, until golden brown and the apples are bubbly and caramelized. TO GLAZE THE PIE: I like to balance a cooling rack of my kitchen sink. Mix the glaze, and then spoon over the hot pie. You can also add chopped walnut pieces, but my family doesn't like nuts, so I didn't. I'll bet that's delicious!
MOM'S FLAT APPLE PIE
This is a great pie for a picinic or potluck. You can pick it up and eat it with your hands. No gooey, drippy mess, but super moist!! The picture that I posted is one of the pictures of the pie my "little" brother made. He is such a great cook as well.

- 1. Mix ingredients for crust (which are the first 4 ingredients on the list).
- 2. Roll out half of the dough to fit a cookie sheet.
- 3. Sprinkle with cornflakes.
- 4. Place sliced apples on top of cornflakes.
- 5. Mix sugar and cinnamon and sprinkle on top of apples and dot with butter.
- 6. Add top crust to cover.
- 7. Beat egg white and sugar and brush on top of pie. Cut a few slits in the top of the pie crust.
- 8. Bake at 425 degrees F for 25-30 mintues.
- 9. Mix powered sugar, vanilla and enough milk to make a thin frosting. Drizzle over hot pie.

- Mix together the flour and salt; cut in the shortening.
- Separate the egg yolk from the egg white. Set the egg white aside to glaze the top crust.
- Put the egg yolk in a measuring cup; add milk to make 2/3 cup; beat slightly.
- Add the milk/egg mixture to the flour mixture all at once.
- Mix together until it holds together.
- Gather into a ball and separate into 2 equal portions.
- Roll out the first half to fit into a jelly roll pan or a large cookie sheet.
- Sprinkle 2 or 3 handfuls of crushed cereal on top of the crust. I just use my hands to crush the cereal.
- Mix the apples with the sugar and spread on top of the cereal.
- Sprinkle the apples with cinnamon and dot with butter.
- Roll out the second crust. Gently place over the top of the apples.
- Whisk the reserved egg white until frothy; brush the top crust with it.
- Cut small uniform slits on the top crust.
- Bake at 375 degrees Fahrenheit for 45 minutes.
- Glaze lightly with a powdered sugar glaze while still warm if desired.
