CARIBBEAN QUEEN COCKTAIL

Who wants an easy, but tasty cocktail? When I lived in Florida, a friend introduced me to this simple drink. Serve chilled or on rocks. Make sure both the rum and Coca-Cola® are chilled.

½ cup ice
¼ cup coconut-flavored rum (such as Malibu®)
¾ cup Soda, Coca Cola, Coke-Can/Bottle CC

Steps:

  • Add ice to an old-fashioned glass. Pour chilled coconut rum and cola-flavored beverage over the ice. Stir.

Madras are normally made with vodka and are very refreshing. They happen to be one of my favorite drinks. I am a Mezcal and tequila drinker so I always replace the vodka. I also switch it around, adding more orange juice than cranberry juice.

1 ½ ounces mezcal
3 ounces freshly squeezed orange juice
1 ounce cranberry juice

  • Fill a rocks glass with ice. Add mezcal, orange juice, and cranberry juice.

MEZCAL PALOMA



Mezcal Paloma image

A paloma is traditionally made with tequila, grapefruit juice, and lime, but this version uses mezcal instead of tequila for a nice smoky twist! The smoke flavor is due to the underground ovens filled with volcanic rock, coal and wood that are used to cook the agave to produce the mezcal. I like to rim the glass with coarse smoked salt or black salt, but feel free to use regular kosher salt.

2 wedges fresh lime
1 teaspoon kosher salt, or as needed
1 cup ice cubes
2 ounces mezcal
3 ounces grapefruit soda

Steps:

  • Rub the cut side of a lime wedge around the edge of the glass. Place salt on a plate and invert glass into salt to rim the glass. Fill glass with ice. Squeeze juice from the same lime wedge into the glass. Pour mezcal over ice, then top with grapefruit soda. Garnish with remaining lime wedge.
