In Hong Kong they love and are famed for their skill at rotisserie-style cooking, where whole ducks, chickens and pigs, with their entrails, are roasted to a golden or soy color. Many eateries display a range of cooked food in their window fronts to entice diners. Inspired by this style of cooking, my simple five-spice roasted drumsticks make a simple dinner.

3 cloves garlic, crushed and chopped
2 tablespoons freshly grated ginger
2 tablespoons honey
2 tablespoons light soy sauce
1 tablespoon groundnut oil (peanut)
1 tablespoon Shaohsing rice wine or dry sherry
2 teaspoons five-spice powder
2 1/4 pounds skin-on chicken drumsticks

Steps:

  • In a bowl, combine the garlic, ginger, honey, soy sauce, groundnut oil, rice wine, and five-spice powder. Add the drumsticks, and cover the bowl with plastic wrap. Then, let the chicken marinate in the refrigerator for as long as possible. Overnight is ideal, but 10 minutes is fine if you do not have enough time. When ready to cook, preheat an oven to 350 degrees F. Arrange the chicken drumsticks on a roasting pan, and roast for 30 minutes, or until their skins are golden.

Try a roast with a difference - Chinese five-spice, citrus and ginger add warmth to the rich soy and hoisin sauce-based gravy

thumb-sized piece ginger , thinly sliced
1 large chicken (about 1.8-2kg), untied
2 bunches spring onions
1 head garlic , halved across the middle
1 lemon , halved, plus 4 wedges
1 tsp Chinese five-spice powder
1 tbsp vegetable or sunflower oil , to drizzle
1-2 tsp golden caster sugar
2 tbsp dark soy sauce
2 tbsp hoisin sauce
fragrant rice and steamed greens or stir-fried vegetables , to serve

Steps:

  • Put most of the sliced ginger into a large roasting tin, then sit the chicken on top. Stuff the chicken with remaining ginger, the green ends from one bunch of onions, half of the garlic and a lemon half. Mix the five-spice, 2 tsp oil and seasoning, then rub all over the chicken. Nestle the other half of the garlic nearby, and drizzle all with 1 tsp oil. Loosely re-tie the legs. Set aside at room temperature for half an hour or so.
  • Heat the oven to 190C/170C fan/gas 5. Roast the chicken for 1 hr. Toss the lemon wedges and the spring onion ends into the pan juices, then roast for 30 mins more or until the meat is cooked at the thickest part of the thigh and the lemon wedges are sticky. Lift the chicken from the pan and set aside, uncovered, to rest.
  • Spoon away any excess fat from the pan, then put the pan onto a medium heat and bring to a simmer. Add 1 tsp sugar, the soy, hoisin, juice from the remaining half lemon and any resting juices. Simmer for a few mins until it thickens slightly, then check the seasoning and add more sugar if needed - don't add any extra salt as the soy and hoisin will add plenty. Serve with the chicken, rice and vegetables.

2 tablespoons coarse kosher salt
2 tablespoons extra-virgin olive oil
1 teaspoon Chinese five-spice powder*
1 cut-up chicken (8 pieces; about 3 1/2 pounds)
1 large onion, peeled, cut into 16 wedges

Steps:

  • Combine garlic, salt, olive oil, and Chinese five-spice powder in large bowl. Add chicken pieces; turn to coat. Cover and chill at least 1 hour or overnight. Preheat oven to 425°F. Arrange onion wedges in 13x9x2-inch roasting pan.
  • Arrange chicken, skin side up, atop onions. Roast until chicken is cooked through, basting occasionally with pan juices, about 50 minutes. Remove chicken from oven and let rest 10 minutes. Arrange chicken and onions on platter and serve.

I had ordered chinese five-spice powder from Penzey's a while ago and was waiting for a recipe to try and just found this in Good Housekeeping. It was incredible. The flavor is outstanding. In response to one of my reviews I did not have a problem with my potatoes cooking I did cut them into quarters small enough to cook but not so small they disengrate.

1 whole chicken
1 1/2 teaspoons Chinese five spice powder
3 medium sweet potatoes, cut into quarters (about 8 ounces each)
2 tablespoons dark molasses
2 tablespoons ketchup
1 tablespoon honey
1 tablespoon soy sauce
1/2 teaspoon salt
fresh chives (to garnish)

Steps:

  • Preheat oven to 450 degrees.
  • Remove gilbets and neck from chicken.
  • Rinse chicken with cold water and drain well; pat dry with paper towels.
  • Sprinkle 1/2 teaspoon of five-spice powder inside cavity.
  • With chicken breast side up, tuck wing tips under back of chicken.
  • With string, tie legs together.
  • Line medium roasting pan with foil.
  • Place chicken, breast side up, on a small rack in center of foil lined pan.
  • Wash and dry potatoes and pierce with fork, cut into quarters small enough to cook not so small they turn to mush.
  • Place potatoes around chicken in pan.
  • You can also peel potatoes and cut them up instead of leaving them whole to bake if you prefer.
  • In cup combine molasses, ketchup, honey, soy sauce, salt and remaining five spice powder.
  • Brush half of molasses glaze all over chicken.
  • Cover pan with loose tent of foil.
  • Roast chicken for 30 minutes.
  • Remove foil and brush remaining glaze over chicken.
  • Roast another 30 minutes longer or until temperature on meat themometer reaches 175 to 180 and juices run clear when thickest part of thigh is pierced with knife Transfer potatoes to cutting board; keep warm.
  • With tongs, tilt chicken to allow juices from cavity to run into roasting pan.
  • Place chicken on platter; let chicken stand 10 minutes before carving.
  • Slice potatoes into 3/4 slices (if you left them whole to bake); arrange on platter with chicken.
  • Garnish with chives.
  • Skim and discard fat from drippings in pan.
  • Serve pan drippings with chicken and potatoes.

3 star anise
1/2 dried chipotle chile, stem and seeds removed
1/2 cinnamon stick, broken up into 1/2 inch pieces
2 teaspoons fennel seeds
1/4 teaspoon whole cloves
1/4 teaspoon hulled cardamom seed
1 tablespoon peeled grated fresh ginger
1 tablespoon minced garlic
1/4 cup firmly packed light brown sugar
1 tablespoon kosher salt
1 teaspoon fresh ground black pepper
3 tablespoons peanut oil or 3 tablespoons vegetable oil
1 (3 -3 1/2 lb) whole chickens, wing tips trimmed
1/4 orange, cut into wedges, plus extra orange wedges for garnish

2 tablespoons unsalted butter or 2 tablespoons bacon fat, melted

Steps:

  • Make the paste: add the star anise, chile, cinnamon, fennel, cloves, and cardamom in a small pan over medium heat; toast for a few minutes until aromatic, shaking the pan.
  • Let cool, then grind toasted spices in a spice mill or clean coffee grinder.
  • Transfer ground spices to a small bowl.
  • Add in the ginger, garlic, brown sugar, salt, and pepper.
  • Gradually add the oil, stirring with a wooden spoon or rubber spatula to make a smooth paste.
  • Trim the excess fat from the chicken and clean out the cavity.
  • Rinse under cold water and pat dry.
  • Use you hands to rub the spice paste all over the skin of the chicken; set the chicken on a rack over a baking pan and place it, uncovered, in the refrigerator overnight.
  • The next day, preheat the oven to 425°; put the ¼ orange and star anise in the cavity of the chicken, season the bird with kosher salt, and place it on a rack in a roasting pan.
  • *For easier cleanup, line the roasting pan with foil because the spice paste that drips off may burn.
  • Using a bulb baster instead of a brush, so you don't disturb the spice crust, baste the chicken with the melted butter or bacon fat and put the bird in the oven to roast.
  • Baste the chicken with the fat collecting in the bottom of the pan every 20 minutes.
  • The chicken is done when an instant-read thermometer inserted in the thickest part of the thigh reads 175° and the juices run clear, about 1 ¼ hours.
  • Remove the chicken from the oven and let rest 5-10 minutes before carving.
  • To carve the chicken, cut off the legs and separate into leg and thigh.
  • Using a knife or poultry shears, cut out the backbone, then separate the breasts by cutting through the breastbone.
  • Cut off the wings, then cut each breast into 2 pieces.
  • You should have 10 pieces-2 legs, 2 thighs, 4 pieces of breast, and 2 wings; pile the chicken pieces on a large platter and garnish with orange wedges.
