2 ounce (40g) unsweetened dark chocolate Note 1
1/2 cup (113g) butter ((1 stick))
3/4 cup (170g) sugar
2 eggs
3/4 cup (96g) flour
1/2 teaspoon baking powder
1/2 teaspoon vanilla
1/4 teaspoon salt if using unsalted butter
1/3 cup (53g) semi-sweet or dark chocolate chips (recommended) (makes brownies extra fudgy)
1/2 cup (75g) chopped walnuts

Steps:

  • Instructions are for a 1200 watt microwave oven. Adjust accordingly - see Note 2.
  • MELT CHOCOLATE AND BUTTER: Microwave butter and chocolate for 1 1/2 minutes on High in a measuring cup or bowl. Stir until melted and smooth.
  • MAKE BATTER: In a separate bowl, use a fork or whisk to mix sugar and eggs together. Add flour, vanilla, baking powder, salt if using and mix to combine. Stir in chocolate-butter mixture. Stir in chocolate chips or nuts if using.
  • MICROWAVE TO COOK: Pour batter in a microwaveable dish - approximately 8 x 8 x 2 -sprayed with oil. Place a small plate or saucer upside down on the microwave turntable/floor. Then place dish on top of the inverted plate. Microwave for 3 minutes 10 seconds to 3 minutes 30 seconds. Note 2. If microwave turntable doesn't turn automatically, stop and turn the dish once or twice, then continue cooking. Don't over bake. You can always add more time if needed. How to tell if brownies are done, Note 3.
  • SERVE: Let brownies cool for 10 minutes. Serve semi warm if desired with ice cream, berries, whipped cream or dusted icing/confectioner sugar.

1 1/2 teaspoons baking powder
1/4 teaspoon fine salt
10 ounces finely chopped semi-sweet chocolate
2 ounces finely chopped unsweetened chocolate
1/2 cup unsalted butter (1 stick), plus for buttering the paper
2 cups sugar
4 large eggs
1 teaspoon pure vanilla extract
6 ounces finely chopped semi-sweet chocolate
1/2 cup heavy cream

Steps:

  • Position a rack in the middle of the oven and preheat to 350 degrees F. Line a 13 by 9 by 2-inch-baking pan with parchment or wax paper, so that the edges of the paper come up the sides. Lightly butter the paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • Combine the semi-sweet and unsweetened chocolates and the butter in a heatproof medium bowl. Fill a medium saucepan with a couple inches of water and bring to a gentle simmer over medium heat. Turn off the heat. Set the bowl on the pan, over the heated water, to melt the chocolate gently. Whisk until smooth.
  • In a large bowl, whisk together the sugar, eggs, and vanilla. Stir the chocolate mixture into the egg mixture until evenly blended. Add the dry ingredients and mix just until blended. Take care not to over mix the batter. Transfer the batter to the prepared pan.
  • Bake until a toothpick inserted into the center of the brownies comes out coated with a fudge-y crumb, about 25 to 30 minutes. Cool the brownies in the pan on a rack. To make the glaze, put the semi-sweet chocolate in a medium heatproof bowl. In a small saucepan, boil the heavy cream, and pour it over the chocolate. Let stand for 5 minutes, then stir until melted and smooth. Spread the glaze evenly over the brownies and let set at room temperature.
  • Lift the edges of the paper to take the brownies out of the pan. Cut the brownies into 24 squares. Serve.

150g salted butter
150g caster sugar
1 tsp vanilla extract
2 tbsp milk
2 medium eggs, beaten
50g plain flour
75g unsweetened cocoa powder
80g milk chocolate chips

Steps:

  • Cut the butter into small pieces. Put in a 20 x 20cm microwavable glass or ceramic dish and cook in 20-second bursts in the microwave until melted. Remove, swirl it around the dish to coat the sides, then tip it into a mixing bowl.
  • Add the sugar to the bowl and, using a hand or electric whisk, whisk vigorously until the mixture is creamy and fully incorporated into the melted butter.
  • In a jug, stir the vanilla extract into the milk along with the beaten eggs. Whisk this, a little at a time, into the sugar and butter mixture, ensuring it's thoroughly incorporated before adding more.
  • Sift the flour and cocoa powder together, then fold gently into the cake batter. Finally, stir in the milk chocolate chips.
  • Tip the whole mix into the buttered dish and smooth using a spatula to fill the dish. Cook for 5 mins or until the brownies are well-risen and slightly firm to touch. Don't worry if they're still a bit soft in the centre; they will continue to cook for several minutes once out of the microwave.
  • Put the hot dish onto a cooling rack and leave for at least 20 mins to firm up. Cut into 8 squares. Will keep in an airtight container for three days.
