I've had this recipe for a long time. It's from an old crock-pot recipe book.

1/2 lb bacon, diced
2 c onion, chopped
1/2 c brown sugar, packed
1/2 c cider vinegar
1 tsp garlic salt
1 tsp dry mustard
16 oz can baked beans
16 oz can kidney beans, drained
16 oz can garbanzo beans, drained
16 oz can green lima beans, drained
16 oz can butter brans, drained

Steps:

  • 1. Fry bacon and add onions, sugar, vinegar and spices and simmer 20 minutes. Add all the cans of beans to the crockpot. Then stir in bacon, onion and spice mixture. Cook on low 4-6 hours or on high 2-3 hours. Makes 10-12 servings.

4 ounces bacon, diced
1 medium yellow onion, chopped
1 (14 ounce) can butter beans
1 (14 ounce) can lima beans
1 (14 ounce) can great northern beans
1 (14 ounce) can kidney beans
1 (14 ounce) can pork and beans
1 tablespoon liquid smoke
1/2 cup catsup
2 teaspoons salt
1 teaspoon mustard
2 teaspoons vinegar
1/3 cup brown sugar

Steps:

  • Brown bacon. Add onion and cook while you get other ingredients ready. Drain half or more of juice from each can of beans, except for pork and beans. Combine all ingredients in very large casserole dish. Stir in the bacon and onion. Bake, uncovered, for 1 hour at 350°F Can also add cut up smoked kielbasa, sliced pepperoni or cooked italian sausage prior to cooking in oven. I've also done this in the crockpot instead of the oven by cooking for 8-10 hours on low.

At a loss about what to make for dinner or as a snack, and you don't want to go to the store? This is super quick and delicious, and you can eat it as a meal or a bean dip. This is a great way to use up the bottoms of all the tortilla chip bags. If you don't have taco seasoning mix, there are lots of recipes on zaar to make your own. 9 ounces tortilla chips
62 ounces pinto beans (drained and rinsed if using canned, 4 cans)
15 ounces whole kernel corn (drain if canned)
14 1/2 ounces diced tomatoes (drain if canned)
8 ounces tomato sauce
1 1/4 ounces taco seasoning
8 ounces cheddar cheese, shredded
lettuce
onion, chopped
sour cream
salsa
jalapeno pepper

Steps:

  • Preheat oven to 350.
  • Crush tortilla chips and sprinkle into a greased 13x9x2" baking dish.
  • In a large bowl, combine pinto beans, corn, tomatoes, tomato sauce, and taco seasoning.
  • Mix well and pour over tortilla chips.
  • Sprinkle with shredded cheese evenly over top.
  • Bake for 25 to 30 minutes.
  • Serve with your choice of optional garnishes.

This is a sweet and sour casserole with bacon and beans.

½ pound bacon
2 cups chopped onion
½ cup packed brown sugar
1 teaspoon mustard powder
½ teaspoon garlic powder
1 teaspoon salt
½ cup cider vinegar
1 (15 ounce) can butter beans
1 (15 ounce) can lima beans, drained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 (28 ounce) can baked beans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • Saute onion in bacon fat; add the brown sugar, mustard, garlic powder, salt and vinegar. Cook covered on low heat 20 minutes.
  • In a four quart baking dish, combine the bacon, onion mixture, butter beans, lima beans, kidney beans, garbanzo beans and baked beans. Mix well, and bake covered for 1 1/2 hours. Uncover and bake 30 to 45 minutes longer.
