One night, while I made some grilled talipa white fish, my roommate and I started to create this sauce. As he started to make it, I began adding things to it...and finally him and I came up with prety good sauce.

1/4 cup of cuppi japanese mayonnaise
1 tablespoon of regular mayonnaise
1 clove pressed garlic
1 teaspoon soy sauce
1 teaspoon wasabi mayonnaise or 1/4 teaspoon wasabi
1 tablespoon sugar
1/2 teaspoon dill
salt and pepper

Steps:

  • Mix all above ingredients together-- leave over night, in air tight container, if desired.
  • The dip can last up to a week.
  • It is great with white fish or salmon and other light fish.
  • It's great to just put a dallop or a in a small container and dip the fish if.
  • It adds a little extra flavor.

Yield Makes about 1/2 cup

1/3 cup mayonnaise
3 tablespoons chopped cornichons
1 shallot, minced (about 2 tablespoons)
2 tablespoons capers, drained
1 teaspoon freshly squeezed lemon juice
Coarse salt and freshly ground pepper

Steps:

  • In a small bowl, whisk together mayonnaise, cornichons, shallot, capers, and lemon juice. Season with salt and pepper. Store covered in the refrigerator until ready to serve, for up to 2 days. Stir again just before serving.

The quickest fish cake you will ever make! These come together very easily and can be dressed up with chipotle mayo, tartar sauce, Russian dressing, Tapatio, or just a bit of mayo and lemon. If you want to be sure your patties do not fall apart, try shaping the patties as directed and then letting them sit in the refrigerator for an hour. (I did not find this necessary). This recipe is adapted from the Kraft website.

2 (6 ounce) cans light chunk tuna in water, drained, flaked
6 ounces stove top chicken flavor stuffing mix (I used seasoned dressing mix)
1 cup shredded mild cheddar cheese
1/2 cup shredded carrot
1/3 cup mayonnaise
2 tablespoons sweet pickle relish
3/4 cup water
Old Bay Seasoning (optional)

Steps:

  • Combine all ingredients.
  • Cover and refrigerate 10 minutes.
  • Heat a large nonstick skillet sprayed with cooking spray on medium heat.
  • For each tuna cake, shape 1/3 cup lightly packed tuna mixture into patty.
  • Add patties to skillet in batches.
  • Cook 3 minute on each side or until golden brown on both sides, turning over carefully.
