Barramundi has been available quite often in my local supermarket. This recipe would also be good with tilapia. The butter-lemon-basil sauce is also good over brown rice.

4 (4 ounce) fillets barramundi (Asian sea bass)
1 tablespoon olive oil, or as needed
1 cup dried bread crumbs
½ teaspoon seafood seasoning (such as Old Bay®)
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon lemon zest
1 pinch dried thyme
1 cup melted butter
¼ cup lemon juice
¼ cup white wine
2 tablespoons chopped fresh basil, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Brush fish with olive oil.
  • Mix bread crumbs, seafood seasoning, garlic powder, onion powder, lemon zest, and thyme together in a bowl. Press fish in bread crumb mixture to coat all sides. Arrange coated fish on a baking sheet.
  • Bake in the preheated oven for 10 minutes. Flip fish and continue baking until fish flakes easily with a fork, about 10 minutes more.
  • Stir butter, lemon juice, white wine, and basil together in a bowl; drizzle over cooked fish.

2 tablespoons flour
1/2 cup sherry wine or 1/2 cup sauterne
1/2 cup chicken broth
1/2 teaspoon dried basil
1/2 teaspoon thyme
2 tablespoons chives
salt
pepper
2 lbs fish
3 tomatoes, peeled, sliced

Steps:

  • Preheat oven to 300 degrees F.
  • Melt butter and stir in flour.
  • Gradually add wine and broth, then the herbs and cook until thickened.
  • Salt and pepper fillets and lay them in a greased casserole.
  • Place tomato sliced on top of the fish.
  • Pour sauce over all and bake for 30 minutes or until done.

BROILED FISH FILLETS WITH BASIL BUTTER



Broiled Fish Fillets with Basil Butter image

4 6-ounce cod fillets
6 tablespoons (3/4 stick) butter, room temperature
2 tablespoons chopped fresh basil
2 teaspoons Old Bay seasoning
1 teaspoon fresh lemon juice
1 garlic clove, minced

Steps:

  • Preheat broiler. Cut four 6x8-inch pieces of foil. Place 1 fish fillet in center of each piece of foil. Fold up foil to form rectangle with 3/4-inch-high sides. Sprinkle fish with salt and pepper. Place packets on small baking sheet.
  • Combine butter, 1 tablespoon basil, Old Bay seasoning, lemon juice, and garlic in small bowl. Using wooden spoon, mix until well combined. Spread mixture over fish in foil. Broil fish (do not turn fish) until opaque in center, about 6 minutes. Transfer fish in foil to 4 plates. Sprinkle with remaining 1 tablespoon basil. Serve immediately.

4 Snapper Fillets (about 6 oz each) skinned and boned
8 TBS Corn Starch
8 TBS All Purpose flour
6 Garlic cloves finely minced
6 Red and/or Green Thai Bird chilies or other chilies - crushed
1 TBS Fish Sauce*
3 TBS Oyster Sauce*
4 TBS Low Sodium Chicken or Vegetable Stock (or water in a pinch)
½ tsp Sugar
1 TBS Lime juice (or to taste)
2 TBS Peanut Oil
1 Green Bell Pepper thinly sliced
1 Medium onion, peeled and cut into ¼ "wedges (pole to pole)
24 Small snow peas (pods)
2 TBS Corn Starch mixed with 4 TBS water to form a slurry
1 Cup Loosely packed Holy Thai Basil* leaves (or substitute Italian Basil)
4 Cups Peanut oil for pan frying
Lime wedges for garnish
*Available at most Asian grocery stores.

Steps:

  • Mix corn starch and flour in a small bowl. Pat fillets dry with paper towels and dust with the flour mix on both sides. In a medium bowl, mix garlic, chilies, fish sauce, oyster sauce, stock, sugar and lime juice (it will be a bit smelly, don't worry). Heat 2 TBS oil in wok or fry pan over medium high heat. Add bell pepper, onion and snow peas and stir fry 2 minuets. Add sauce mixture and bring to a quick boil. Add corn starch slurry in small amounts at a time and mix until the sauce has a desirable thickness. Check sauce for salt and adjust with more stock if too salty. Remove and set aside. Toss in basil, cover and keep warm. Heat the 4 cups of oil in a fry pan big enough to hold all the fillets without crowding (or fry in batches). Over high heat, when the oil is shimmering, carefully slide in the fillets. Fry on one side about 2 minutes and turn over. Fry until golden on both sides. Transfer fish to paper towels and pat dry. Plate fish and place about one quarter of the sauce/vegetable mix over and around the fillets. Serve hot with Jasmine rice.

Although this recipe was created for fresh caught large-mouth bass, any fish fillets will work great. Intended for the campsite, you can cook it on the stove as well. Very adaptable recipe.

4 fish fillets, skin removed (flounder, tilapia, cod, or bass)
salt
pepper
1/2 cup flour
2 tablespoons olive oil
2 tablespoons white wine
6 tablespoons butter
4 -6 garlic cloves, sliced thin
2 tablespoons italian seasoning (or use fresh herbs)
1/2 lemon, juice of (slice the other half of the lemon for garnish)

Steps:

  • Season the fillets with salt and pepper. Heat a saute pan on top of the grill, firepit, or stove over med high heat.
  • When the pan is hot add the olive oil and heat. Dredge the bass fillets in the flour and shake off any excess.
  • Place the fillets in the pan and pan fry about 3 minutes per side, until golden brown. Remove the fish from the pan. Reduce to a medium/med-low heat (move away from coals if cooking outdoors). De-glaze the pan with the wine and then add the butter.
  • When the butter is melted, add the sliced garlic. Fry for about a minute just until the garlic begins to turn light golden brown.
  • Add the herbs and remove from the heat. Carefully, add the lemon juice. Season with salt and pepper. To serve, place a fillet on a plate and spoon some of the lemon garlic herb butter over the fish. Garnish with lemon slices.
