Green Onion Dip Enchiladas image

I found this in a Texas county cookbook years ago. It stated that it was the most popular recipe at a local pie kitchen. My family has always loved it, hope you do too!

Number Of Ingredients 12

SAUCE:
1 can(s) rotel tomatoes and green chilis
2 can(s) cream of chicken soup
1 c chicken broth
1 c velveeta cheese cubed
1 pkg green onion dip mix (dry)
FILLING:
1 1/2 lb lean ground beef
1 medium onion chopped
1 c cheddar cheese, shredded
MORE:
2 pkg corn tortillas (12 pk)

Steps:

  • 1. Combine all sauce ingredients in sauce pan over low heat until cheese melts; simmer over low heat an additional 20 mintues; set aside.
  • 2. In skillet, brown beef and onion; add cheese; stir until melted; set aside.
  • 3. Soften 2 packages of corn tortillas in hot oil; fill each tortilla with small amount of beef mixture and roll. Place in a 9x13 pyrex dish. Pour sauce over rolled enchiladas until covered. (you may have left over sauce}
  • 4. Bake at 450 degrees for 10-15 minutes until hot and bubbly.
