FISH SOUP W/SAVORY PLANTAIN BALLS
1 large fish head split in half
3 medium carrots
3 stalks of celery
1/2 red pepper chopped
11/2 Tbsp sofrito goya /condiment
1 pkg sazon w/culantro and achiote,annato
2 chicken bouillon cubes
2 Tbsp adobo powder/w pepper
salt to taste
1/4 c stffed olives
1 pkg ham seasoning
1 Tbsp fresh cilantro
PLANTAIN SAVORY BALLS
4 green plantains, boiled
1/2 lb salt pork fat
1 whole galic clove/ minced
1 tsp salt and pepper
1/4 c olive oil, extra virgin

Steps:

  • 1. in a 4 quart pot fill with water ,put on stove and put to boil, rinse fish ,put in pot, add sofrito goya /condiment ,add adobo,sazon w/culatro and achiote annato coloring,cut celery and slice carrots, also red pepper, add bouillon cube,olives also add 2 tablespoon oil, let cook at medium high heat covered for 30 minutes ,taste to see if it is not too salty or if not add more salt to taste. cook another 10 minutes covered.the soup will be watery ,thats why is called soup so don't find it strange. the plantain balls go in the bowl of soup and it will thickend soup and make it savory.
  • 2. cut plantain in afew slices each put to boil ,cook until very tender, cut pork fat in little pieces , very small, put aside mince garlic very fine add oil in frying pan, put pork fat to fry ,till crispy add garlic to pork fat ,then add plantain little by little smashing them with fork,add all and smash till they are all blended , taste. ,make a ball ,then form small balls in a platter, do IT all .when finish serve soup in a bowl and add 3 to 4 plantain balls ,let stand for a minute and start eating your fish soup, hope u like it as much as my family likes it ,serves more than 8. BON APPETITE.

4 shallots, sliced
4 Thai chiles, sliced
4 makrut lime leaves, stems and spines removed
1 (2-inch) piece fresh or frozen (and thawed) turmeric, peeled and trimmed
1/2 lemongrass stalk, outer layers removed, core thinly sliced
1 tablespoon ground coriander
1/4 teaspoon ground white pepper
1 pound cod filets, cut into 1-inch cubes
4 ounces salted mackerel, boned and skinned, cut into 1-inch cubes, or 4 ounces anchovies
2 eggs
2/3 cup coconut milk
4 to 5 tablespoons rice flour
2 Thai chilies, minced
1 garlic clove, minced
1 shallot, minced
Freshly squeezed juice of 1/2 lime
1 tablespoon chinchalok
Canola oil or peanut oil for frying
2 cups panko bread crumbs

Steps:

  • To make fish balls, pound shallots, chilies, lime leaves, turmeric, lemon grass, ground coriander and pepper to a paste in a mortar and pestle, or use a food processor. Transfer to bowl.
  • In food processor, blend cod and mackerel to a smooth paste. Add eggs. Gradually pulse in aromatics and coconut milk, alternating ingredients, until incorporated. Pulse in rice flour until you can form paste into a ball.
  • To make sauce, whisk remaining ingredients, other than oil and panko, in a bowl.
  • In a saucepan or wok, heat 3 inches oil to 375 degrees. Meanwhile, grind panko in a food processor or mortar and pestle. Using wet hands, roll fish paste into 2-inch balls. Dip balls into panko and coat evenly. Fry, turning frequently, until golden brown all over, 3 to 4 minutes. Drain on a paper-towel-lined plate. Serve with dipping sauce.

4 Shanghai cabbage, whole leaves
4 baby bok choy, whole leaves
1 napa cabbage large chopped
2 quarts chicken stock
1 pound shiitake mushrooms, de-stemmed
Boiling water
Samba Oelek
Peanut butter
Chinese sesame paste
Sesame oil
Oyster sauce
Rice wine vinegar
Shaoxing wine
Thin soy sauce
2 cups chopped scallions
2 cups chopped cilantro
Eggs (optional)
2 pounds Chilean sea bass or other fatty white fish
4 eggs, separated
1 teaspoon white pepper
1 teaspoon kosher salt
1 teaspoon sesame oil
1 tablespoon fish sauce
3 minced Thai bird chilies
1/3 cup sliced scallions

Steps:

  • For the table, jars/small bottles of the following to make your own dipping sauce:
  • Thread beef, chicken, shrimp, fishballs and scallops on wooden skewers and set aside. Combine water and chicken stock in an electric wok and bring to a boil. Add mung bean noodles, cabbage, bok choy and shiitake mushrooms. Place skewers in pot and cook according to individual taste. Ladle broth into bowls with skewered meats and seafood and serve with condiments.
  • Fish Balls:
  • In a food processor, puree fish with egg yolks until smooth. Add pepper, salt, sesame oil, fish sauce, and chilies; pulse processor a few times. Transfer mousse to a large, chilled bowl and fold in the scallions. Using a mixer, lift the egg whites to a stiff peak. Gently fold in the egg whites with the mousse. Cook a very small portion either in boiling water or in a microwave oven to verify seasonings. Using wet hands, make small balls (1-inch in diameter). Quickly blanch in salted boiling water for only 2 minutes. Drain and set aside to cool.

2 ½ cups mashed potatoes
½ cup chopped green onions
1 large egg, well beaten
2 tablespoons all-purpose flour
1 pinch Creole seasoning, or to taste
1 cup panko bread crumbs, or as needed
1 cup vegetable oil for frying, or as needed

Steps:

  • Season fish with salt and pepper. Heat olive oil in a skillet over medium heat. Cook fish in the hot skillet until almost completely cooked through, turning as needed, 7 to 10 minutes. Remove from heat.
  • Transfer fish to a bowl and flake with a fork. Add mashed potatoes, green onions, egg, flour, and Creole seasoning. Mix thoroughly. Add panko, a tablespoon at a time, as needed to firm up balls. Form mixture into small balls or patties.
  • Heat vegetable oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Deep-fry fish balls, working in batches, in the hot oil until golden brown, about 5 minutes per batch.

2 (6 1/2 ounce) cans tuna
1/3 cup milk
1 tablespoon flour
1 beaten egg
1 teaspoon onion, minced
1/2 teaspoon salt
1/8 teaspoon pepper
1 dash cayenne

Steps:

  • Drain tuna; SAVE the oil!
  • Heat 1 TB of tuna oil in saucepan, mix in the flour, blend until smooth.
  • Remove from burner and add milk.
  • Continue stirring.
  • Add in onion, salt, pepper, and cayenne.
  • Place back on burner.
  • Stir constantly.
  • Cook mixture until smooth but thick.
  • Remove from heat add in egg and tuna fish.
  • Refrigerate until firm,then roll into 3/4 inch balls.
  • Roll tuna balls in flour.
  • Fry in deep fat (375°F),until nice and golden.
  • Drain on paper towels, insert toothpicks and serve!

This is a simple recipe based that most of children will like. These fish balls can be served as appetizer with a salsa sauce or as starter with the suggested vegetable mix (salad). I used potatoes that after boiling, peeling and mashing they hold together. If you don't have this kind of potatoes, please add 1 egg and some 2 or tablespoon of flour.

200 g tuna fish, canned well drained and crushed
2 tablespoons parsley, chopped

1 egg (only if necessary)
2 -4 tablespoons flour (only if necessary)
1 egg, lightly beaten

1 yellow pepper, cut into small cubes
1 small cucumber, cut into small cubes

Steps:

  • First of all make all the ingredients ready.
  • In a big bowl combine potatoes, tuna fish, parsley, spices and salt. Work with a fork. If it doesn't stick together add 1 egg and about 2 tablespoon of flour.
  • Form walnuts sized balls, coat first with egg and then with the breadcrumbs. Flat them slightly and place them on a dish.
  • Preheat a non sticky pan with about 2 tablespoon oil to medium temperature.
  • Fry the meatball on the first size when golden brown, turn, add 2 tablespoon oil and brown the second size.
  • For the serving suggestion combine all the vegetable in a bowls toss, eventually add some salt (I didn't). Serve with lemon and olive oil.
  • If you prefer serve this with a fresh salsa.
  • Enjoy!
  • Note: this looks wonderful with some fresh green salad.

2 garlic cloves, crushed
3/4 cup parmesan cheese
2 eggs
3/4 cup breadcrumbs

1/4 teaspoon pepper
1/4-1/2 scotch bonnet pepper, finely diced
1/2 cup flour (for dusting)
2 -3 cups vegetable oil (for frying)

Steps:

  • Wash and pat dry the cod fillets and cut them into chunks. Put them into a food proccessor and pulse a few times to chop to an even consistency. Add the rest of the ingredients, except the flour and oil. Pulse until well mixed, scraping the sides down a few times to make sure everything is incorporated.
  • Take a small spoonful at a time of the mixture and roll it into a ball in your hands, Continue with the rest of the mixture. Dust the fish balls with the flour.
  • Heat the oil on medium high, and fry the fish balls a few at a time for 3-4 minutes until they are golden brown. Drain them on paper towels and enjoy!

I adapted this one from a great cookbook called 'The Fish Cookbook'. A good all year round recipe, I like to serve this with roast potatoes and a green vegetable.

500 g white fish fillets, skinned & boned
2 teaspoons coriander, finely chopped
1 pinch salt
1 pinch black pepper
2 eggs
150 ml single cream or 150 ml natural yoghurt
125 g fresh breadcrumbs
1/2 lemon
sunflower oil, to fry
1 can tomatoes
1 clove garlic
1 onion, roughly chopped
1 pinch salt
1 pinch black pepper
1 cup red wine

Steps:

  • Wash the fish, pat dry with kitchen paper and cut into small pieces.
  • Place into the bowl of a food processor with the coriander, salt, pepper, eggs, cream or yoghurt, half the breadcrumbs and the lemon juice and process for 45 seconds until the mixture is smooth and creamy.
  • Chill the mixture for an hour.
  • Whizz all the sauce ingredients together in a food processor or blender to make a smooth sauce.
  • When you are ready to cook the fish balls, pre-heat the oven to gas mark 6, 400F (200C).
  • Heat a little oil in a heavy frying pan.
  • Using your hands, form the fish mixture into snooker sized balls, roll them in the remaining breadcrumbs and fry them gently, turning them occasionally until they are an even golden brown.
  • Place the cooked fish balls in a shallow baking dish and pour over the sauce.
  • Bake in the oven for 20 minutes until bubbling.

These are delicious and versatile. These are traditional in the Danish Mock Turtle soup. Serve them as an appetizer with a dip or make it as a fish loaf. 1 lb fish fillet, skinned and minced finely (Cod, sole, whitefish)
2 teaspoons salt
1 pinch white pepper
5 tablespoons plain flour or 5 tablespoons potato flour
2 ounces butter
2 eggs
1 -1 1/2 pint light cream

Steps:

  • Mix seasoning with the minced fish and the flour.
  • Beat the mixture very well and integrate the butter.
  • Add eggs one at a time.
  • Gradually add the liquid.
  • If the mixture curdles stand the bowl in hot water and whisk until it is smooth again.
  • Check your seasoning.
  • Shape the farce into round balls using 2 spoons dipped in hot water.
  • Bring about 2 pints of salted water to a boil.
  • Cook one ball to check the consistency.
  • Add more egg if the ball is too soft, or cream if it is too stiff.
  • If the ball is right cook all the balls, they only take a minute to cook and float when done.
  • Serve as an appetizer, use in the Danish mock turtle soup or make it in a ring shaped mold and serve it with a sauce as your main course.

THAI FISH BALLS WITH CHILLI AND LIME MAYONNAISE

2 tablespoons smooth light peanut butter

1 small red onion, finely chopped
1/2 cup mayonnaise
1/4 cup coriander, roughly chopped
2 tablespoons sweet chili sauce
1 tablespoon grated lime rind
1 teaspoon lime juice
plain flour, for rolling
oil, for shallow frying
lime wedge, to serve

Steps:

  • To make Chilli and Lime Mayonnaise: ~ Combine the mayonnaise, coriander, chilli sauce, rind and juice until smooth and chill for serving later.
  • Put the fish, chillies, garlic, peanut spread, coriander and fish sauce in a food processor and process until smooth. Place into a bowl and stir in the chopped red onion then cover and chill for about 5 minutes.
  • When chilled well shape the fish mixture, (this is easier using wet hands), into 30 × 2cm balls and roll lightly in flour.
  • Heat the oil in a large frying pan over medium heat.
  • Cook the balls, in 2 batches, for 5-7 minutes, or until golden and cooked through.
  • Serve with the Chilli and Lime Mayonnaise.

350 g leftover fish, boned and skinned
500 g boiled floury potatoes
1 clove garlic
2 tablespoons chopped parsley
1 tablespoon chopped chervil
1 tablespoon chopped chives
50 g softened butter
2 egg yolks
100 g plain flour
1 tablespoon olive oil
1/4 liter lukewarm beer
2 egg whites
1 pinch salt

Steps:

  • Mix the flour and salt with the oil and the beer, beating well together.
  • Cover and leave in the kitchen, not the refrigerator or the cool larder, until required.
  • This gives the batter a chance to ferment slightly, which improves its texture.
  • Just before the batter is about to be used, beat the egg whites until stiff and fold in carefully.
  • Remove any skin or bones from the cooked fish.
  • Mash the boiled potatoes and mix the fish, potatoes, chopped garlic, herbs and the softened butter together.
  • Add the egg yolks one at a time: the mixture should hold its shape and be neither too dry nor too liquid.
  • Use only one egg yolk if this gives the right consistency, or the second egg yolk and a drop of milk if the mixture is too dry.
  • Season to taste.
  • Take a tablespoon of the mixture, roll between the palms of your hands, into a small ball: continue until all the mixture has been used up, flouring your hands from time to time.
  • Using a fork, dip each ball in the batter and then plunge into hot fat.
  • When brown and crispy, remove and serve with tomato sauce or mayonnaise.

2 eggs, beaten
2 slices white bread, soaked in water and squeezed dry
1 medium onion, chopped
1 -2 garlic clove, minced
1/4 cup chopped fresh parsley
1/4 teaspoon dried tarragon
1/8 teaspoon nutmeg
flour (for dredging)
1/4 cup corn or 1/4 cup canola oil
hot pepper flakes, salt and pepper to taste
1 lb chopped tomato (fresh or canned will work)
1/4 cup fresh basil leaf
1 -2 tablespoon tomato paste
1/8 teaspoon black pepper
1/8 teaspoon chili pepper flakes (adjust to taste)

Steps:

  • In a food processor, process all of the fish ball ingredients except for the fish/flour/oil. Add in the fish and mix thoroughly.
  • Mold the fish mixture into balls the size and shape of an egg (if the mixture doesn't cooperate and falls apart, you may want to mix in an egg to help it bind together). Dredge the balls in the flour.
  • Heat the oil in a skillet, add the fish and brown on all sides (approximately 2-3 minutes). Place them in a greased baking dish. Preheat the oven to 350 degrees.
  • In a food processor, grind all the sauce ingredients into a smooth paste. Pour it over the fish balls, and bake for approximately 30-35 minutes.

2 tablespoons peeled and coarsely chopped fresh ginger
4 cilantro sprigs
2 tablespoons tamari soy sauce
8 spinach roots, cut in half lengthwise
2 small scallions, white and light green parts, cut lengthwise into thin strands

Steps:

  • To make the fish balls, cut the fish into 1- to 2-inch chunks, place in a food processor, and process until finely ground. Add the ginger, lemon juice, salt, and pepper and process until thoroughly blended. With wet hands, pat the mixture into 3/4-inch balls. Set aside on a plate, cover, and refrigerate until ready to cook.
  • To make the soup, combine the water, mushroom stems, ginger, cilantro, and soy sauce in a medium saucepan and bring to a boil over high heat. Decrease the heat to maintain a gentle simmer, cover partially, and cook until the mushroom and ginger pieces are soft, about 10 minutes. Strain through a fine-mesh sieve into a clean medium saucepan. Discard the contents of the strainer.
  • Bring the strained broth just to a boil over medium-high heat. Add the shiitake caps, spinach roots, and fish balls and cook until the balls rise to the top, about 3 minutes. Ladle the soup into individual bowls, garnish each bowl with a few scallion strands, and serve piping hot.

300 g cod fish fillets
1 teaspoon lemon juice
1 tablespoon cream
salt
pepper
500 g puff pastry
100 ml olive oil
5 tablespoons white wine vinegar
garlic
1 chili pepper
honey

Steps:

  • Cut fillet of cod into small cubes (I used a meat grinder, therefore it required an addition of flour).
  • Add the lemon juice, cream, salt and ground black pepper.
  • Gently form 25 small balls.
  • One layer of puff dough divided into 4 parts, each part to unroll and cut into thin strips (about 5 mm width).
  • Cover fish balls completely with strips of dough.
  • Slightly press strips to balls.
  • Fry balls in a plenty of oil 3-4 minutes (I baked balls in oven).
  • For sauce :.
  • Mix olive oil with white wine vinegar, minced garlic, a pod of hot pepper and honey.

2 tablespoons peanut oil
2 large tomatoes, peeled and chopped
3 tablespoons tomato paste
1 teaspoon sugar (to taste)
salt
1 hot fresh chili peppers or 1/4 teaspoon cayenne
1 lb ground white fish
4 tablespoons breadcrumbs or 4 tablespoons matzo meal
1 egg, lightly beaten
1/4 teaspoon ground ginger
1 good pinch nutmeg
salt and pepper
3 tablespoons finely chopped coriander or 3 tablespoons flat leaf parsley
1 lemon, cut in wedges, to serve with

Steps:

  • Make the sauce first. In a wide pan, fry the garlic in oil till the aroma rises. Add the tomatoes, tomato paste, sugar, salt, and chili pepper or cayenne. Add about 2 cups (500 mL) of water and bring to the boil. If you leave the chili pepper in throughout the cooking, the sauce might end up too hot for you, so taste the sauce and remove the pepper when you feel the sauce is hot enough.
  • For the fish balls, mix all the ingredients together and work to a firm paste with your hands. (If you use the food processor to grind the fish, do so very briefly or it can turn into a creamy puree.)
  • Take lumps of paste the size of a small walnut and roll into little balls.
  • Drop them one by one into the sauce and simmer for 20-25 minutes turning them over once.
  • Serve accompanied by lemon wedges.

1 lb fresh cod fillets
2 cloves garlic (crushed)
3/4 cup Parmesan cheese
1 tablespoon chopped parsley
1 tablespoon chopped thyme
2 eggs
3/4 cup panko bread crumbs (any bread crumbs should work)
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 scotch bonnet pepper (seeded, membranes removed, and diced finely)
2-3 cups veg oil for frying
1/2 cup flour for dusting

Steps:

  • Wash and pat the fish dry with some paper towels. If you're using frozen (pre packaged) cod, give it a good squeeze as there's usually a lot of water in it. Then cut into chunks and place into a food processor. The entire recipe will be done in the food processor, but if you don't have one, don't fret. Simply chop the cod fish very fine and mix all the ingredients in a large bowl. Give the fish a few pulses in the food processor and remember to scrape down the side so you get an even consistency. Then add all the other ingredients except the flour and the veg oil for frying. Please remember to chop the herbs very fine and crush the garlic. The scotch bonnet pepper should also be very fine and do remember to wear gloves when handling them. Additionally, wash your hands with soap and water immediately after handing. Pulse for a minute or two (remember to stop to scrape down), until you have a well mixed consistency. Now it's time to shape this into the small balls for frying. Take about a teaspoon full amount and roll in your hands to form the ball. Then toss in the flour (all purpose flour) to evenly coat the outside. This will help you get that lovely golden brown colour when fried. Be sure to do them all before you start to fry, as they will cook very fast. You can place them on a parchment lined cookie sheet so they don't stick as they await their turn in the hot oil Heat your oil on a medium/high heat and fry these for 3-4 minutes. I love using my wok for this as it maintains an even heat and with the high sides, I don't make a mess on the stove. Drain on paper towels and serve with one of the many sauces I've shared over the past few years. 2 pounds fresh cod fillets
1 cup soy creamer
1 medium red onion, chopped
2 large eggs
3 tablespoons potato starch
2 tablespoons Worcestershire sauce
1 pinch salt and pepper to taste
tablespoon vegan butter (such as Earth Balance ®), or more to taste
1 cup water, or as needed
1 splash dry white wine

Steps:

  • Break cod into pieces and place in a food processor with soy creamer, onion, eggs, potato starch, Worcestershire sauce, salt, and pepper; process until evenly blended. Transfer to a bowl, cover, and refrigerate for at least 4 hours.
  • Remove from the refrigerator and shape into balls (think crab cake size but thicker.)
  • Melt butter in a skillet over medium heat. Add fish balls and saute on all sides until golden brown, 8 to 10 minutes. Add 1/2 inch water to the skillet with wine. Cover, bring to a simmer, and cook until cooked through, about 10 more minutes.

1/2 lb salt cod fish
2 cups diced raw potatoes
1 tablespoon butter
1/2 teaspoon pepper
2 eggs, beaten
breadcrumbs
vegetable oil (for frying)

Steps:

  • Soak cod fish in water, preferably overnight then boil for 1/2 hour. Meanwhile peel and dice potatoes; boil for 20 minutes. When cool mash coarsely.
  • Drain, rinse fish under cold water and flake making sure to remove fine bones.
  • Add butter, pepper and shredded fish to potatoes, mix well.
  • Form mixture into light, feathery balls.
  • Dip in beaten egg then breadcrumbs. Fry in deep oil in fryer basket until golden brown.
  • Drain on absorbent paper and serve very hot with your favorite cocktail sauce.
