- Preheat air fryer to 400°. Peel and cut potatoes lengthwise into 1/2-in.-thick slices; cut slices into 1/2-in.-thick sticks., In a large bowl, toss potatoes with oil, pepper and salt. In batches, place potatoes in a single layer on tray in air-fryer basket; cook until just tender, 5-10 minutes Toss potatoes to redistribute; cook until lightly browned and crisp, 5-10 minutes longer. , Meanwhile, in a shallow bowl, mix flour and pepper. In another shallow bowl, whisk egg with water. In a third bowl, toss cornflakes with cheese and cayenne. Sprinkle fish with salt; dip into flour mixture to coat both sides; shake off excess. Dip in egg mixture, then in cornflake mixture, patting to help coating adhere. , Remove fries from basket; keep warm. Place fish in a single layer on tray in air-fryer basket. Cook until fish is lightly browned and just beginning to flake easily with a fork, 8-10 minutes, turning halfway through cooking. Do not overcook. Return fries to basket to heat through. Serve immediately. If desired, serve with tartar sauce.

- Fill a large deep pot halfway with vegetable oil and heat over medium-high heat to 375 degrees F on a deep-fry thermometer.
- Preheat the oven to 200 degrees F. Place a wire rack on a sheet pan and set aside.
- For the zucchini fries: Add the milk and lemon juice to a bowl and mix. Add the cornstarch and salt to a separate bowl and mix.
- Place the zucchini batons first in the milk and then in the cornstarch and toss to coat.
- Carefully add the zucchini batons to the hot oil in 2 batches and fry until golden brown, about 4 minutes per batch. Remove to the prepared wire rack and sprinkle with sea salt. Keep warm in the oven while you make the fish goujons.
- For the fish goujons: Place 1/2 cup of the flour in a shallow dish, add 1 teaspoon of the salt and the pepper, then mix.
- Combine the cornstarch, baking powder, remaining 1 teaspoon salt and remaining 1 1/2 cups flour, then whisk together. Slowly add the brown ale and mix until just combined.
- Dredge the fish, one piece at a time, in the seasoned flour, shaking off the excess, then dip into the batter, coating well. Lower the fish into the hot oil in 2 batches and cook until golden brown, about 3 minutes per batch, flipping halfway. Remove to a paper towel-lined plate and sprinkle with sea salt.
- To serve, place the goujons on one end of a platter or board. Remove the fries from the oven and arrange on the other end.
- Place a ramekin of tartare sauce on the platter, then garnish with lemon wedges and the parsley to serve.

- Preheat oven to 425 degrees F and bake fries 20 minutes, or according to package directions, turning once.
- Heat skillet or grill or grill pan over medium-high heat.
- Season the fish with salt and pepper and coat with about 1 tablespoon extra-virgin olive oil.
- Toast rolls on grill or heat broiler and set them in the middle of the oven to brown, then reserve.
- Combine mayonnaise with grated garlic, capers, olives, parsley.
- Combine ketchup with Worcestershire, hot sauce, horseradish and lots of black pepper.
- Cook fish 3 to 4 minutes on each side until firm, opaque and cooked through. Squeeze lemon over cooked fish.
- Remove fries from oven and season with celery salt and pepper.
- Place fish on rolls with lettuce, red onion and tartar sauce. Serve fries alongside with bloody ketchup.
- In a large bowl, combine the fennel, fennel tops and red cabbage. In a separate small bowl, combine the honey, cider vinegar, grill seasoning, poppy seeds, and sesame seeds. Slowly whisk in the olive oil. Pour the dressing over the salad and toss together.
FRIED FISH BITES WITH SWEET POTATO FRIES AND SPICY MAYO

- For the mayonnaise: In a blender, combine all ingredients and process until smooth. Taste and adjust seasoning as needed. Store covered in the refrigerator until ready to use.
- For the fries: Heat oven to 200 degrees F. In a large cast iron skillet, pan, or Dutch oven, heat vegetable oil over medium-high heat to 350 degrees F.
- Meanwhile, peel sweet potatoes and cut lengthwise into 1/2-inch planks. Cut planks lengthwise into 1/2-inch strips. Place strips in hot water with vinegar while oil finishes heating. Line a plate with paper towels and set aside.
- When oil is heated, drain fries and thoroughly pat dry with paper towels. Add 1/3 of fries to oil and cook until browned and cooked through, about 4 to 5 minutes. Remove fries to paper towels with a slotted spoon and season immediately with kosher salt. Return oil to 350 degrees F and repeat with remaining fries. Hold in oven until fish is ready.
- For the fish: Skim oil to clean then return to stove over medium-high and bring to 350 degrees F. Pat fish dry with paper towels then cut into 1/2-inch strips; set aside. In a large bowl whisk together flour, salt, cayenne, and pepper well combined. Add club soda and whisk briefly until a batter is formed (there may be a few lumps left. Place all fish in batter and mix to coat thoroughly. Remove 8 pieces of fish from batter, shake off excess batter, and fry, stirring occasionally, until golden and fish is just cooked through, about 2 to 3 minutes. (To test if fish is cooked, break open 1 piece and make sure meat is white throughout.) Transfer fish with a slotted spoon to paper towels to drain. Return oil to 350 degrees F and repeat with remaining fish. Serve immediately with fries and mayonnaise.

- For the fries: Preheat the oven to 400 degrees F. Place the potatoes in a medium bowl. Whisk together the canola oil, paprika, salt, pepper, corn starch and orange zest and toss with the potatoes to evenly coat. Place the potatoes in a single layer on a parchment-lined baking sheet and roast until the potatoes are tender and starting to brown, 40 to 45 minutes. Turn the oven up to 450 degrees F and continue roasting until the potatoes get crispy around the edges, 5 minutes longer. Reduce the oven temperature to 200 degrees F and hold the potatoes in the oven to keep warm while cooking the fish. For the beer batter: Pour the beer into a large bowl. - Preheat the air fryer
- Add the frozen french fries and fry at 400 degrees for 12-15 minutes. Remove the fries and set them aside.
- In a shallow dish combine the flour, smoked paprika, salt, and pepper.
- In another shallow bowl add the egg and beat well.
- In a separate shallow dish add the panko and old bay seasoning, and mix until combined.
- Dip the fish in the flour, then the egg, then the panko. Coat all the sides.
- Spray your air fryer basket with a non-stick cooking spray.
- Place the coated fish in the pre-sprayed air fryer basket. Place the basket in the air fryer. Spray the top with nonstick cooking spray.
- Fry at 400° for 5 minutes. After 5 minutes, gently flip, spray with nonstick cooking spray and fry for another 5-7 minutes.
- Remove the fish from the air fryer and set it aside.
- Add the fries back into the fryer and fry another 5 minutes to crisp them up
- Serve with lemon wedges and tartar sauce.
