Easy Cheesy Chicken Dip is just the ticket for game days and gatherings when you need a super quick, flavorful appetizer. This cheesy chicken dip needs only 5 ingredients and 5 minutes. No baking. Serve with crackers, chips, or veggies.

2 cups shredded cheddar cheese
8 oz whole cream cheese (fully softened*)
1/2 cup good hot sauce (I like Frank's hot sauce )
1/2 cup good quality ranch dressing
2 cans (25 oz each chunk chicken breast, drained)
[Optional: 1 bunch chives (chopped])

Steps:

  • In a bowl, mix together hot sauce, ranch dressing, and fully softened cream cheese until mixture is fully smooth without lumps. Add cheddar cheese and stir to combine. Add chicken and stir to shred chicken and combine. Add chives if desired. Transfer to serving dish and serve chilled or room temp, with crackers, chips, baguette slices, or veggies.

For the longest time, I have wanted to create a " Meatball " that stands all by it's self! I believe I have " conquered " that " Quest " with this recipe... I LOVE a good meatball and I believe this will be a favorite of yours' as well! I humbly asked permission to add Pat DiMercurios' recipe for " Crusty Bread"... Thank you so much Pat... :) I am adding Enro gay's " Gravy Recipe for these Meat Balls... it will give You an option... Thank You Enro for allowing me to add your " Version " to my recipe... :)

3 pound(s) lean ground angus beef
1 1/2 pound(s) ground veal
1 1/2 pound(s) ground pork - mild, medium or hot your choice
6 clove(s) fresh garlic - minced
6 large eggs
3 cup(s) freshly grated romano cheese
1 teaspoon(s) cinnamon yes cinnamon !!!
1/2 cup(s) fennel seeds
4 1/2 cup(s) italian flat leaf parsley - chopped fine
1 tablespoon(s) red pepper flakes
1 jar(s) roasted red peppers - drained and chopped
* * * - salt and fresh ground black pepper to taste
6 cup(s) day old italian bread, crumbled
4 1/2 cup(s) lukewarm water - *** use only enough to make mixture moist
1/4 cup(s) extra virgin olive oil
1 can(s) tomato juice - enough to fill pan half way
2 can(s) (small) tomato paste

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, cinnamon, fennel seeds, parsley, red pepper flakes, roasted red peppers, and salt and pepper. Mix all together very tenderly ( don't over mix , just bring together )
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape when rolled into meatballs. NOTE: *** Only use enough water to get moist consistency ***
  • Shape into 24 meatballs.
  • Place the extra virgin olive oil, tomato juice, tomato paste in a large 9 x 13 oven pan. Stir to make a sauce.
  • Place meatballs in pan and cover. NOTE: *** You will want to use 2 pans so meatballs have room and not touching each other *** Cook 2 hour at 250 degrees or until done.   • Enro Gay... " Hello, Bob... the meatballs were a huge success. I reduced the recipe by using 4 pounds meat (2 ground beef, 1 veal and 1 pork sausage) and used dry Italian bread crumbs in place of day-old bread (and adjusting other ingredient amounts to match). Since these were made for homemade meatball subs, I made them much smaller and cooked them a short time in the oven before transferring to my slow cooker. "
  • " I did not use your "gravy" as outlined above, but used this instead: "
  • Small onion, fine chopped Small green pepper, fine chopped 2 cloves garlic, fine chopped 3 Tbsp EVOO 6 ounce tomato paste 1/4 cup dry red wine 3/4 cup chicken broth 2-15 ounce cans tomato sauce 1 tsp dried oregano 3/4 tsp dried basil 1 tsp sugar Salt and fresh ground pepper to taste
  • Saute onion and green pepper in EVOO for a couple minutes, add the garlic and cook another minute. Then add the tomato paste and wine, stirring for another minute or so. Then add the chicken broth, tomato sauce and spices, stirring to combine. Bring to a boil, then simmer covered for about 3 hours... YUMMY!
  • " I made it the night before, then warmed in up, transferred sauce to the slow cooker and added the meatballs to simmer on low until we got ready to eat. I will make the dinner size meatballs next time and serve to my hubby with spaghetti, a favorite of his. Thanks for a wonderful meatball recipe! "

10 large chicken - roasting pieces
2 can(s) cream of mushroom soup
4 tablespoon(s) butter
3 1/2 teaspoon(s) curry powder
1 - whole apple - chopped fine
1 - large onion - chopped fine
1 1/2 cup(s) cream
- salt to taste
1 tablespoon(s) paprika
1 teaspoon(s) red pepper flakes

Steps:

  • In sauce pan, melt butter, saute curry powder, apples, and onions until onions are transparent. In a separate bowl, combine soup and cream and mix together. Combine the Curry,Apple,and Onion mixture and stir and blend with the soup and cream, blend well...
  • While sauteing the mixture, rinse and pat dry the chicken pieces Salt and Paprika the chicken and place in large Dutch Oven. Pour the sauce mixture over chicken covering all the chicken.
  • Cook in Dutch Oven at 200 degrees for 3 1/2 to 4 hours. I use Kingsford Charcoal, it cooks great and stays hotter longer. I cover the top of the Dutch Oven with one layer of coals and under the Dutch Oven, I place one layer also... You will become familiar with the " heat " of the coals and will be able to keep the temperature where it needs to be... Enjoy!

1 tablespoon olive oil
1 small onion, thinly sliced
1 scallion, sliced, whites and greens kept separate
Kosher salt and freshly ground black pepper
One 4-ounce block sharp white Cheddar
2 1/2 ounces low-moisture whole-milk mozzarella
3 chipotle chiles in adobo sauce, chopped, plus 2 teaspoons adobo sauce
2/3 cup whole milk
5 tablespoons Louisiana-style hot sauce
12 ounces cream cheese, cut into 1-inch pieces
2 cups shredded rotisserie chicken, skin removed (about 8 1/2 ounces)
1/2 cup crispy fried onions, such as French's
Tortilla chips, for serving

Steps:

  • Heat the olive oil in a medium saucepan over medium heat. Add the onions, scallion whites, 1/2 teaspoon salt and a few grinds of black pepper. Cook, stirring occasionally, until the onions are softened and translucent, about 5 minutes.
  • Meanwhile, shred the Cheddar on the large holes of a box grater. Cut the mozzarella into 1/4-inch to 1/2-inch cubes and set both cheeses aside.
  • Once the onions have softened, add the chipotle chiles and adobo sauce to the saucepan and stir until the onions are evenly coated and the adobo sauce is heated through, about 1 minute. Add the milk and stir, scraping up any browned bits from the bottom of the saucepan. Add the hot sauce, cream cheese, Cheddar and mozzarella and cook, stirring continuously, until all the cheese has melted and the hot sauce has thoroughly combined, about 4 minutes. Gently fold in the chicken.
  • Transfer the dip to a heatproof serving bowl and top with the reserved scallion greens and the crispy fried onions. Serve warm with tortilla chips.

2 bone-in chicken breast halves
1 teaspoon olive oil
1 stalk celery, finely diced
1 (8 ounce) package reduced-fat cream cheese
¾ cup blue cheese dressing
¾ cup ranch dressing
⅓ cup hot pepper sauce (such as Frank's RedHot®)
1 cup shredded Cheddar cheese

Steps:

  • Place chicken breasts in a large saucepan; cover with water. Boil until cooked through, about 20 minutes. Remove from water, and cool. Pull meat from bones and skin. Shred meat and reserve.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat olive oil in large skillet. Stir in celery; cook until soft. Mix in the cream cheese, blue cheese dressing, and ranch dressing. Cook and stir until smooth and creamy. Stir in the shredded chicken and hot sauce. Spoon mixture into an 8x8 baking dish. Sprinkle with the shredded cheese.
