FINGERLING POTATOES WITH PARMESAN BUTTER
Lately I've been getting a lot of these marvelous fingerling potatoes from my organic delivery company. In looking for different ways to prepare them, I came up with this simple and delicious recipe.

Steps:
- 1. Scrub potatoes but do not peel; dry off and set aside.
- 2. In a small saucepan, melt butter. Add salt and pepper; stir.
- 3. Roll potatoes in butter and place on a baking pan that has been sprayed with cooking spray.
- 4. Using a pair of tongs, turn the potatoes as you sprinkle them with the cheeses and then the rosemary.
- 5. Bake in a preheated 350-degree oven for about 40 minutes or until fork-tender. Serve with more butter or sour cream.
- 6. May also bake in a hotter oven (450) for 20 minutes.
SPECTACULAR FINGERLING POTATOES
My children absolutely love these tender "mini" potatoes. Fingerling potatoes can be found at the farmers market and specialty grocery stores, though Yukon Gold would work, too.

- Preheat oven to 425°. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook 10 minutes. Drain. Transfer to a greased 15x10x1-in. baking pan. Combine the remaining ingredients; drizzle over potatoes and toss to coat., Bake, uncovered, 8-10 minutes or until tender, stirring once.
