- In a small bowl, combine the butter, dill, onion powder, garlic powder, salt if desired, and pepper. , In a large skillet, heat butter mixture over medium heat until melted, 1-2 minutes. Add the sole; cook until fish just begins to flake easily with a fork, 2-3 minutes on each side. If desired, garnish with dill and lemon.

EASY SOLE MEUNIERE (BAREFOOT CONTESSA)
This is a VERY good, simple Meuniere. Sometimes I use tilapia...I think you can use almost any kind of firm white fish. Be sure to use kosher salt, there is a difference. And I think the lemon zest really adds to the dish. I also add a few splashes of white wine and sometimes add capers at the end.

Steps:
- Preheat the oven to 200 degrees F.
- Have 2 heat-proof dinner plates ready.
- Combine the flour, 1 teaspoon salt, and 1 teaspoon pepper in a large shallow plate.
- Pat the sole fillets dry with paper towels and sprinkle one side with salt.
- Heat 3 tablespoons of butter in a large (12-inch) saute pan over medium heat until it starts to brown.
- Dredge 2 sole fillets in the seasoned flour on both sides and place them in the hot butter.
- Lower the heat to medium-low and cook for 2 minutes. Turn carefully with a metal spatula and cook for 2 minutes on the other side.
- While the second side cooks, add 1/2 teaspoon of lemon zest and 3 tablespoons of lemon juice to the pan.
- Carefully put the fish filets on the ovenproof plates and pour the sauce over them.
- Keep the cooked fillets warm in the oven while you repeat the process with the remaining 2 fillets.
- When they're done, add the cooked fillets to the plates in the oven. Sprinkle with the parsley, salt, and pepper and serve immediately.

- Preheat oven to 400°. Place each fillet on a piece of heavy-duty foil or parchment (about 12 in. square). Sprinkle fillets with pepper; top with lemon slices. Drizzle with wine and 1 tablespoon oil., In a small bowl, combine tomatoes, olives, capers, lemon juice, garlic and remaining 1 tablespoon oil; spoon over fillets. SOLE MORNAY (BAKED FISH WITH A WHITE CHEESE SAUCE)
A nice fish dish with a pleasant presentation. Good with rice. Found this one a few years ago on a free dairy farmer calendar and enjoyed it.

Steps:
- If fillets are large, cut lengthwise in half.
- Roll up fish and secure with toothpicks.
- Place in shallow rectangular baking dish.
- Sprinkle with lemon juice.
- Cover with foil and bake in a preheated 400 F degree oven for 15 minutes or until fish flakes easily with a fork.
- Meanwhile, melt butter in a saucepan.
- Blend in flour, bouillon mix and dry mustard.
- Gradually stir in the milk.
- Cook and stir over medium heat until it boils and thickens.
- Add both cheeses and stir until melted.
- Add salt and pepper and serve over the cooked and drained fish rolls.
FILLET OF SOLE WITH RHUBARB

- Trim the leaves from the rhubarb and cut it into one-half-inch dice. Heat two tablespoons of the butter in a large skillet. Add the rhubarb and shallots and saute over medium heat until the vegetables are tender and lightly browned, about 10 minutes. Remove them from the pan and set aside.
- Add another tablespoon of butter to the pan. Pat the fish fillets dry on paper towels and add them to the pan. Saute just a minute or two on each side until they are barely cooked through. Do not overcook the fish. Remove the fish from the pan and set it aside, loosely.
- Add the lemon juice and honey to the pan and cook briefly, then return the rhubarb and the shallots to the pan. Season with pepper. Swirl in the remaining tablespoon of butter.
- Transfer the fish to each of four individual plates, spoon some of the rhubarb mixture over each, sprinkle with parsley and serve.
