Filipino-Style Spiced Vinegar image

You can store this all-purpose sweet-and-spicy vinegar in clean mason jars, but it is easier to keep it in repurposed glass bottles. Note that this recipe can be adjusted as you like-try using different chiles or other spices like bay leaf.

Yield Makes 3 cups (720 ml)

Number Of Ingredients 7

10 garlic cloves, peeled and sliced
1/4 cup (35 g) dried fruit, such as raisins, cherries, or mangos (optional)
5 whole bird's-eye chiles
1 (3-inch/7.5 cm) knob fresh ginger, scrubbed and minced
1 tablespoon whole black peppercorns
3 to 4 cups (720 ml to 1 L) white sugarcane vinegar
1/4 cup (60 ml) fish sauce

Steps:

  • Put the garlic, dried fruit, chiles, ginger, and peppercorns in a clean glass jar or bottle and cover with the vinegar and fish sauce. Loosely cover or cap the jar and let sit at room temperature in a dark place for 48 hours.
  • Transfer the jar to the refrigerator. The pinakurat will keep indefinitely, and the flavors will continue to develop over time.

SINAMAK (FILIPINO SPICY VINEGAR)



Sinamak (Filipino Spicy Vinegar) image

Homemade spicy vinegar. This vinegar can be used in cooking or as a dipping sauce.

2-3 cups cane vinegar (see notes)
100 grams chilies (stems removed)
1 head garlic (peeled and smashed)
1 small onion (chopped)
50 grams ginger (peeled and chopped)

Steps:

  • Prepare the bottle and the ingredients. You can use an empty bottle or container with a lid. Just make sure that the bottle is washed and dried before using it.
  • Add the prepared ingredients to the bottle. The ingredients should be small enough to get through the mouth of the bottle.
  • After all the ingredients are inside the bottle, fill the bottle with vinegar.
  • Let the spiced vinegar sit on the shelf for at least a week before using it.

Sinamak is a delicious vinegar-based condiment to pair with grilled or fried seafood, white meats, or vegetables. The more you wait, the better it tastes.

½ cup birds eye or thai chili peppers
1 head garlic (peeled)
1 whole ginger (sliced)
5 pieces dried mango
1 tbsp whole black peppercorns
1 tbsp kosher salt
3 cups white cane vinegar

Steps:

  • Combine all ingredients in the airtight mason jar or long neck bottle.
  • Shake gently, then store in a dark, cool place for at least 3 days.
  • When you are ready to eat it, place some in a serving bowl and return the jar back to its dark, cool storage. Serve by itself or mix a spoonful with soy sauce or fish sauce.
