1 cup water
3 cups dried figs
1 cup white sugar
½ cup butter, softened
1 cup white sugar
1 tablespoon milk
1 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt

Steps:

  • Soak figs in the water for 1 hour. In a small saucepan, combine the fig mixture with the sugar, and cook over medium heat until thick and stewy. Remove from heat and set aside to cool.
  • In a large bowl, cream together the butter and sugar. Beat in the milk and vanilla until smooth. Combine the flour, baking powder and salt, stir into the creamed mixture. Cover and refrigerate for one hour.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
  • Divide the dough into two pieces and knead each piece about 5 or 6 times. On a well floured surface, roll the dough out to 1/4 inch thickness. Line the prepared pan with one piece of the dough. Spread the fig mixture over it, then cover with the other piece of dough.
  • Bake for 25 to 30 minutes in the preheated oven, until golden brown. Cool and cut into squares.

In this recipe, honey-sweetened figs are tucked inside a tender whole-wheat cookie. Both of my kids agreed they were superior to the store-bought versions they had tried at a friend's house -- they couldn't keep their mitts out of the tin I put them in.

1 cup roughly chopped dried figs, stems removed
1 tablespoon honey
6 tablespoons unsalted butter, at room temperature
1/2 cup sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups white whole-wheat flour

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the figs in a small heatproof bowl, cover with hot water and soak for 10 minutes. Remove the figs from the water with a slotted spoon and transfer to a food processor. Add the honey and 1 tablespoon of the soaking liquid. Puree until smooth and spreadable. Set aside.
  • In a stand mixer fitted with the paddle attachment, or in a large bowl with a handheld mixer, beat together the butter and sugar until smooth, about 2 minutes. Add the egg and vanilla and mix until incorporated. Add the flour and mix until a dough forms.
  • Place the dough between two pieces of parchment, then roll into two 12-by-4-inch rectangles.
  • Spread the fig filling on one half of each rectangle, spreading up the 12-inch side and leaving a 1/4- to 1/2-inch border.
  • Fold the dough over on top of itself and gently press the dough together at the edges. Cut each log into 10 cookies and transfer to baking sheet lined with a silicone baking mat or parchment. Bake until golden, 15 to 20 minutes. Remove from the oven and let cool.

1 cup (2 sticks) unsalted butter, room temperature
1/2 cup sugar
1 large egg
1 large egg yolk
1 teaspoon pure vanilla extract
Zest of 1 lemon
2 1/2 cups all-purpose flour
Pinch of salt
Fig Filling
Egg wash made with 1 yolk and a little water

Steps:

  • Cream butter and sugar with the paddle attachment of an electric mixer. Add egg, 1 egg yolk, vanilla, and lemon zest; mix well. Add flour and salt; mix on low speed until dough just comes together. Wrap dough in plastic, and chill until firm, about 1 hour.
  • Divide dough in half. Roll out one half to fit a 10-by-15-inch baking sheet. Pick up dough by wrapping it around a rolling pin, and unroll it onto baking sheet.
  • Spread fig filling evenly over pastry. Roll out remaining half of dough, and cover filling. Trim excess pastry to make a perfect rectangle. Chill for 1 hour.
  • Preheat oven to 375 degrees. Use a paring knife to score dough lightly into 1-by-3-inch bars. Use a fork to prick holes in each bar. Make an egg wash by combining remaining egg yolk with 1 teaspoon water. Lightly brush bars with egg wash. Bake until golden brown, 25 to 30 minutes. Cut into bars, and let cool.

1 1/2 cups (3 sticks) unsalted butter, room temperature
1 1/2 cups plus 2 tablespoons sugar
1/2 teaspoon pure vanilla extract
2 large eggs, room temperature, 1 lightly beaten for sealing dough
1 large egg yolk, room temperature
2 1/2 cups all-purpose flour, plus more for dusting
Zest of 1/2 lemon, cut into four 1-inch strips
1 cinnamon stick
24 ounces dried black mission figlets, stems trimmed
1/4 cup Cognac
2 cups water

Steps:

  • Make the cookie dough: In the bowl of an electric mixer fitted with the paddle attachment, cream butter, 1/2 cup plus 2 tablespoons sugar, the vanilla, and salt together until smooth. Add 1 egg and egg yolk, beating to combine, scraping the sides of the bowl with a rubber spatula. Add flour gradually, and continue beating until just blended. Transfer the dough to a sheet of plastic wrap, and shape into a rectangle. Wrap the dough well. Chill in the refrigerator until firm, about 2 hours.
  • Make the filling: In a shallow, medium saucepan, combine lemon rind, cinnamon stick, figlets, cognac, 1 cup sugar, and 2 cups water over medium-high heat. Bring to a boil, and reduce heat to low; simmer until the liquid has evaporated, about 30 minutes, stirring occasionally. Remove lemon rind and cinnamon stick, and let cool.
  • Place fig mixture in the bowl of a food processor, and pulse until smooth, 20 to 30 seconds.
  • Remove the cookie dough from the refrigerator, and divide in half. On a parchment-lined work surface that has been lightly floured, roll one half of the dough into a rectangle about 1/8 inch thick. Trim the dough to 9 by 12 inches with a pizza wheel or a knife. Cut the rectangle lengthwise into three strips, 3 by 12 inches. If the dough becomes soft, it may be necessary to chill it again.
  • Transfer the filling to a pastry bag fitted with a #8 or #808 plain tip. Pipe the filling down the center of each strip. Brush beaten egg along one of the 12-inch sides of dough. Fold dough over fig filling to enclose, pressing gently to seal. Transfer to a baking sheet lined with a parchment paper, seam side down. Repeat with the remaining dough and filling. Chill in refrigerator for 30 minutes.
  • Preheat oven to 350 degrees. Bake cookies until light golden, 20 to 25 minutes. Remove to a cooling rack. When completely cooled, transfer to a cutting board, and cut each log into eight 1 1/2-inch cookies with a serrated knife.

1 pound dried Calimyrna figs
2 cups water
1/2 teaspoon grated lemon zest
2 teaspoons vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon ground nutmeg
2 1/2 cups unbleached all-purpose flour
1 1/2 cups teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
2 large eggs

Steps:

  • Using kitchen scissors, trim stems from the figs and discard. Cut the figs in half. In a saucepan combine the figs, water and lemon zest and bring to a boil. Lower the heat and simmer the figs, uncovered, until the water is absorbed and figs are tender, about 25 minutes. In a food processor puree the figs until smooth. Add the vanilla extract, cinnamon, and nutmeg and pulse to combine.
  • Preheat oven to 350 degrees F. Sift together the flour, baking powder, cinnamon, and salt. Using an electric mixer cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Gently beat in the dry ingredients. With floured hands, gather the dough into a ball, flatten and wrap with plastic wrap. Refrigerate dough for at least 1 hour, or until chilled enough to easily roll out.
  • Divide the dough in half. On a lightly floured surface, roll out half of the dough into a 13- by 9-inch rectangle. Trim the edges exactly with a sharp knife. Carefully transfer dough to a 13- x-9-9-inch buttered baking dish. Using a spatula spread the cooled fig mixture over the dough in an even layer. On a piece of waxed paper, roll out remaining dough in the same manner as before and place over the filling with the waxed paper side up. Peel the waxed paper from the dough and patch any tears by pressing dough together with your fingertips.
  • Bake for 30 minutes, or until edges are golden. Cool on a wire rack before cutting into bars.

Nonstick vegetable oil spray
1 3/4 cups old-fashioned oats

1 cup (2 sticks) chilled vegan "butter" (such as Earth Balance) or margarine, cut into 1/2-inch cubes

Steps:

  • For filling:
  • Combine first 4 ingredients in heavy medium saucepan. Bring to simmer over medium heat, stirring until sugar dissolves. Reduce heat to low. Cover and simmer 5 minutes. Uncover and simmer until figs are very soft and filling is thick, stirring often, about 10 minutes. Mix in lemon juice and vanilla, then walnuts. Cool completely. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature before using.
  • For crust:
  • Position rack in top third of oven and preheat to 350°F. Spray 13x9x2- inch metal baking pan with nonstick spray. Combine oats and next 5 ingredients in large bowl and whisk to blend. Add cubed "butter." Using fingertips, blend until mixture forms small moist clumps.
  • Firmly press half of crust mixture (about 3 cups) over bottom of prepared pan. Spread filling evenly over crust. Sprinkle remaining crust mixture over filling; press to adhere.
  • Bake bars until deep brown and firm to touch, about 35 minutes. Cool in pan on rack. Cut crosswise into 6 strips. Make 8 lengthwise cuts, forming 2x1-inch bars. DO AHEAD: Can be made 1 day ahead. Cover pan with foil; store at room temperature.
  • Place powdered sugar in medium bowl. Using narrow spatula, remove as many bars as desired from pan. Roll half of bars in powdered sugar to coat. Arrange coated bars and plain bars alternately on platter.

FILLING:

TOPPING:
1/4 c all purpose flour
1/4 c brown sugar, firmly packed
3 Tbsp butter, cold
1/4 c quick cooking oats
1/4 c walnuts, chopped

Steps:

  • 1. First pre-heat oven to 350°F. Then spray a 9 inch square pan with cooking spray. Then in a small bowl beat 1/2 cup butter, 1/4 cup granulated sugar & the vanilla with electric mixer on medium speed until well blended. Then on low speed beat in 1 cup flour until soft dough forms. Then press dough in bottom of pan. Then bake for about 10 to 15 mins or until center is set.
  • 2. Next in a 2 quart saucepan cook filling ingredients over medium-high heat 5 to 10 mins. Make sure to stir frequently until figs are tender and most of liquid is absorbed. Then spread over crust.
  • 3. Next in a small bowl mix 1/4 cup flour, the brown sugar & 3 tablespoons butter, using pastry blender or fork, until crumbly. Then stir in oats & walnuts. Sprinkle over filling.

3/4 cup apple juice

Steps:

  • Preheat oven to 375 degrees. Butter an 8-inch square baking pan; line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang. Butter paper; set pan aside.
  • In a food processor, pulse together 2 cups flour and 1 cup sugar. Add butter; pulse until mixture resembles coarse meal. Transfer half of mixture to prepared pan; with lightly floured fingers, press firmly into bottom. Set aside. Shape remaining mixture into large, moist clumps; transfer topping to a bowl, and set aside. Wipe food processor bowl clean.

These are delicious and just like the old "Fig Newtons" I remember from when I was a kid. Recipe comes from a very old tattered cookie book that no longer has a cover that belonged to my Mom. They were always a treat around Christmas time.

1/3 cup vegetable shortening, I use butter or 1/3 cup margarine
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 1/4 cups whole wheat flour
1/4 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon orange zest
1 pinch salt
1 (8 ounce) package dried figs, stems removed (can sub dates if you wish, but the figs are supreme)
2/3 cup water
3 tablespoons lemon juice or 3 tablespoons orange juice
3 tablespoons granulated sugar (I use splenda)

Steps:

  • Preheat oven to 375°F.
  • In a large bowl, beat together shortening, brown sugar, eggs and vanilla until creamy.
  • Add all purpose flour, whole wheat flour, baking soda, baking powder, orange peel and salt, beating until blended.
  • Refrigerate dough 1 to 2 hours.
  • Prepare fig filling and set aside, see below.
  • On a floured surface, roll dough into 14 inch square.
  • Cut dough into 4 equal strips, each 14 inches long and 3 1/2 inches wide.
  • Spoon 1/4 of fig filling in a 1 1/2 inch wide mound down center of each strip.
  • Using a long spatula, lift sides of each dough strip over filling, overlapping slightly on top.
  • Press edges together to seal.
  • Cut strips crosswise in half for ease of handling.
  • Place, seam side down, 3 inches apart on greased baking sheets.
  • Brush off any excess flour.
  • Cut each strip into 7 (1 inch) crosswise pieces, but do not separate.
  • Bake 13 to 15 minutes or until puffed and firm to the touch.
  • Cool 5 to 10 minutes on baking sheets; then cut apart and remove to racks to cool completely.
  • Fig Filling.
  • In a medium saucepan, combine figs, water, lemon or orange juice and granulated sugar.
  • Bring to a boil over medium heat, stirring occasionally.
  • Reduce heat and simmer 5 to 10 minutes or until thickened, stirring occasionally; cool.

1/4 teaspoon salt
1 stick unsalted butter, at room temperature
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 large egg
2 teaspoons pure vanilla extract
1 cup dried figs, stems trimmed (about 5 ounces)
1/2 cup raspberry jam
1/2 cup cranberry-raspberry juice or raspberry-apple cider
1 large egg, lightly beaten

Steps:

  • Make the dough: Whisk the flour, baking powder and salt in a medium bowl. Beat the butter, brown sugar and granulated sugar in a large bowl with a mixer on medium-high speed until fluffy, about 3 minutes. Add the egg and vanilla and beat until combined.   • Mix the milk with the vanilla.
  • Sift salt, flour and baking powder together; add alternately with milk to creamed mixture.
  • Blend well.
  • Roll out to 1/8 inch thickness on lightly floured board (rectangle shape).
  • Put figs in saucepan with remaining sugar and 1 cup boiling water.
  • Boil 5 minutes; cool.
  • Spread the cooked mixture over half the dough; fold over the other half of the dough to cover.
  • Cut into rectangular bars.
  • Bake in 400°F for 12 to 15 minutes.

1 1/4 cups water
1 bag (7 oz) dried Mission figs, stems removed, chopped (about 1 1/3 cups)
3/4 cup Gold Medal™ all-purpose flour
1/4 cup quick-cooking oats
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butter or margarine, softened
3 tablespoons butter or margarine, softened
1 1/2 cups powdered sugar
3 to 4 teaspoons milk
1 teaspoon grated orange peel

Steps:

  • In 1-quart saucepan, boil filling ingredients over medium-high heat, stirring frequently, until figs are tender and most of liquid is absorbed. Remove from heat; cool 5 to 10 minutes. Pour fig mixture into food processor. Cover; process, using quick on-and-off motions, until figs are pureed; set aside.
  • Heat oven to 350°F. Grease 8-inch square pan with shortening or cooking spray. In large bowl, combine crust ingredients with electric mixer on low speed until crumbly. Press in bottom of pan. Bake 25 to 30 minutes or until center is set. Spread filling over crust. Bake 6 to 10 minutes longer or just until filling sets. Cool completely, about 1 hour 15 minutes.
  • In medium bowl, beat 3 tablespoons butter with electric mixer on medium speed until blended. Add powdered sugar. Beat on low speed, adding milk, 1 teaspoon at a time, until mixture is smooth and desired spreading consistency. Stir in orange peel. Carefully spread over cooled bars. Cut into 4 rows by 4 rows.

1/2 cup cold butter
2 3/4 cups dried Calimyrna figs, stems removed
3/4 cup warm water
1/4 cup real maple syrup or honey
1 teaspoon grated lemon peel
1/2 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In large bowl, place cookie mix. Cut in butter, using pastry blender (or pulling 2 table knives through mix in opposite directions), until mixture looks like coarse crumbs. Reserve 1 1/2 cups of the crumb mixture for topping. Press remaining mixture in bottom of pan. Bake 10 minutes. Cool.
  • Meanwhile, place figs and warm water in food processor. Cover; process until smooth paste forms. Add syrup and lemon peel; process until well blended. Spread fig mixture evenly over partially baked crust.
  • In small bowl, mix reserved 1 1/2 cups crumb mixture and the walnuts. Sprinkle over fig mixture.
  • Bake 20 to 25 minutes or until light golden brown. Cool completely on cooling rack, about 30 minutes. Cut into 6 rows by 4 rows.

FIG MIXTURE
2 lb figs (3c) fully ripe
2 Tbsp lemon juice concentrate
1/2 c sugar
TOPPING / BOTTOM
3/4 c butter softened
1 c brown sugar, lightly packed
1 3/4 c flour
1/2 tsp baking soda
1/2 tsp salt
1 1/2 c oats
1/4 c coconut

Steps:

  • 1. Preheat oven to 400* Remove stems and blossom ends, coarsely chop place in sauce pan. Add lemon juice and sugar. Stir well and cook over medium heat, stirring often till reduced to 2 cups. Remove from heat and let cool.
  • 2. In large bowl cream butter and brown sugar. In another bowl stir flour, baking soda, salt. Add to creamed mixture; blend well, stir in oats and coconut. Spread 1/2 Oat mixture into bottom of 9x13 inch baking pan. Spread Fig mixture on top. Top evenly with remainder of Oat mixture. Pat down lightly. Bake 20 to25 minutes until lightly brown, let cool on rack. Cut into bars.............

3/4 cup (1 1/2 sticks) unsalted butter, room temperature
2/3 cup granulated sugar
2 large egg yolks
Pinch of salt
1 teaspoon pure vanilla extract
1 cup all-purpose flour, plus more for rolling
1 cup millet flour
1 large egg, lightly beaten
1 tablespoon heavy cream
Turbinado sugar, for sprinkling
8 ounces dried figs, stemmed and chopped
1/4 cup tawny port
1/2 vanilla bean, scraped
2 tablespoons light-brown sugar
Pinch of salt

Steps:

  • Make the dough: Combine butter, granulated sugar, yolks, salt, vanilla, and flours in the bowl of a food processor. Process until dough comes together, 30 to 60 seconds. Turn dough out and divide in half. Shape each half into a 3-by-5-inch rectangle and wrap tightly in plastic wrap. Chill for 1 hour.
  • Make the filling: Heat figs and port in a small saucepan over medium until just simmering. Let stand until liquid is absorbed, about 10 minutes.
  • Transfer fig mixture to a food processor. Add vanilla bean seeds, brown sugar, and salt; process until a paste forms, 1 minute.
  • Preheat oven to 325 degrees with rack in the middle position. Roll out one piece of dough between lightly floured sheets of parchment paper into an 8-by-11-inch rectangle. Spread half of the filling lengthwise down the center of the dough to form a 2 1/2-by-9-inch rectangle. Use parchment to lift dough and fold over the filling to cover. Pinch edges to seal. Refrigerate on parchment until firm, 15 minutes. Repeat process with remaining dough and filling.
  • Remove both pieces of filled dough from refrigerator. Use parchment to carefully flip dough, seam-side down, onto a single parchment-lined baking sheet. Let stand 5 to 10 minutes. Combine egg and cream, and lightly brush dough. Sprinkle generously with turbinado sugar. Bake until golden brown, 30 to 35 minutes. For the filling:
10 ounces dried Calimyrna figs, stemmed and quartered
1/4 cup packed dark brown sugar
2 strips orange zest, plus 2 tablespoons orange juice
1/4 teaspoon salt
For the crust and topping:
1 1/2 cups all-purpose flour, spooned and leveled
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
8 tablespoons (1 stick) cold unsalted butter, cut up
1 large egg

Steps:

  • Heat oven to 375° F. Line the bottom and sides of an 8-inch square baking pan with aluminum foil; butter the foil. Make the filling: In a small saucepan, combine the figs, brown sugar, orange zest, and ½ cup water. Cook over medium heat, stirring occasionally, until the figs are tender and most of the liquid has been absorbed, 12 to 14 minutes. Remove and discard the zest.
