CROCK POT FIESTA CHICKEN
Creamy fiesta chicken in the crock pot is an easy dump dinner with almost no prep time! Serve it over rice as a burrito bowl, spoon over chips for nachos, or add it to burritos or taco shells. Instant pot instructions included.

Steps:
- Spray the inside of the slow cooker with nonstick cooking spray. This makes clean up SO much easier.
- Season the chicken with salt and pepper and add to the slow cooker.
- Add the remaining ingredients except for cream cheese.
- Cook on low for 8 hours or on high for 4.
- 30 minutes before it's time to eat shred the chicken with 2 forks and add the cream cheese.
- Continue to cook for 30 more minutes.
- Stir until cream cheese is all mixed in.
- Serve over rice, baked potatoes, tortilla chips, or whatever

CHICKEN WITH BROWN RICE & BARLEY (CROCK POT)
This is a nice warming dish, with boneless chicken, high fiber whole grains and vegetables. Great for an evening meal when you don't want to stand at the stove. Try this dish with different grain combinations: brown rice, wild rice blend, red rice, pearl barley, bulgar wheat, millet, rye or wheat berries. Be sure to add enough broth for cooking your measure of grain. Err on the side of too much rather than not enough liquid in the crockpot.

Steps:
- Spray inside of 6-quart crockpot with cooking spray or add 1 teaspoon olive oil and coat inside of crockpot.
- Add chicken (no need to cut it up, it will fall apart after cooking), and prepared broth.
- Add grains, diced vegetables, and seasonings.
- Stir to mix ingredients in the crockpot.
- Cover and cook on low heat for 6-8 hours.
- Remove bay leaf before serving, and season to taste as necessary.
- NOTE: the first time I made this I used 2 1/2 cups broth; it was not quite enough as the rice was sticking to the crockpot. 3 1/2 cups of broth seemed to be a better choice, but it depends on your crockpot.
