Fiery Hot Texas T-Bones with Chipotle Smashed Potatoes and Hot and Sweet Pepper Saute image

3 whole jalapenos
3 bell peppers, choose 3 different colors
2 1/2 pounds small potatoes, such as baby Yukon gold or small red skin potatoes, coarsely chopped
Salt
4 slices bacon, chopped
2 tablespoons chipotle powder, divided
1 small onion, chopped
1 cup sour cream
1 tablespoon dark chili powder
1 tablespoon ground cumin
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
2 large T-Bone steaks 1 1/2 inches thick, 2 1/2 pounds total
3 tablespoons vegetable oil, 3 turns of the pan, divided
1/4 cup bourbon, eyeball it

Steps:

  • Seed and slice the hot and sweet fresh peppers and reserve.
  • Cover potatoes with water and bring to a boil. Add salt to boiling water. Cook potatoes until tender, 10-12 minutes. Chop and brown bacon in a small skillet and add a tablespoon of chipotle powder and onions. Cook 5 minutes over medium heat until onions are tender. When potatoes are tender, drain and return to hot pot. Add bacon mixture and sour cream to the potatoes. Smash potatoes and season with salt, to taste.
  • While potatoes are working, combine dry spice rub: chili powder, remaining chipotle powder, cumin and grill seasoning. Rub steaks liberally on both sides with the mixture. Heat a 12 to14-inch skillet screaming hot. Add 2 tablespoons of vegetable oil, 2 turns of the pan. It will smoke. Add steaks and do not turn for 6 minutes. Flip and cook another 6 minutes for medium rare, up to 10 minutes for well done. Remove skillet from flame and add bourbon. Return steaks to stove and flame the pan. When the fire goes out, transfer the meat to a large serving platter and pour pan juices over the top. Let meat rest for juices to redistribute. Return pan to heat and add remaining tablespoon vegetable oil to the skillet. Add hot and sweet peppers to the pan and saute them for 5 minutes. Season with salt and pile peppers alongside steaks.
  • Remove meat from the T bones and cut into 4 portions. Top with some peppers and pile some chipotle smashers along side. Spoon drippings and juices over meat and serve.

5 lbs sweet potatoes
1 cup coconut milk
1 tablespoon red curry paste
1/2 cup brown sugar
4 tablespoons unsalted butter
1 teaspoon salt

Steps:

  • Preheat oven to 375 degrees F.
  • Bake potatoes until very soft, about 1 hour; let cool slightly.
  • Once potatoes are cool enough to handle, peel and mash.
  • In a small saucepan, over low heat, combine coconut milk and curry paste.
  • Combine, coconut mixture, half the sugar, half the butter, and the salt with the potatoes; keep warm (or cover and refrigerate for up to 2 days).
  • About 30 minutes before serving, place potatoes in a baking dish, cover with foil, and bake for 20 minutes.
  • Uncover potatoes, dot with remaining butter, sprinkle remaining sugar over top, and broil until browned and crusty (do not burn).

1/2 cup dark brown sugar
4 tablespoons unsalted butter
1 teaspoon salt.

Steps:

  • 1. Heat oven to 375 degrees. Bake potatoes on a baking sheet until very soft, about 1 hour. When cool enough to handle, peel and mash. 2. In a small saucepan, heat coconut milk with curry paste over low heat. Mix coconut milk mixture, half the sugar, half the butter, and salt into potatoes. 5 pounds Sweet potatoes
1 cup coconut milk
4 tablespoons butter
1/2 cups dark brown sugar
4 tablespoon butter
2 tablespoon red thai curry paste
1 teaspoon cayenne

Steps:

  • roast sweet potatoes at 375oF for 75 min until soft
  • When cool, peel the sweet potatoes and mash well (use immersion blender)
  • In a saucepan, heat the coconut milk, thai curry paste and cayenne. (Original recipe had 1 tablespoon curry paste and no cayenne, but I modified it based on the reviews).
  • Mix the warmed coconut milk/curry/cayenne into the sweet potatoes, along with 1/2 of the butter and 1/2 of the sugar).
  • Put the mixture into a casserole and cover with foil. Heat at 425oF for 20 min.
  • Right before serving, remove the foil, and dot the remaining butter and sugar over the top of the potatoes. Broil until bubbly, brown and crusty (watch to prevent burning - a few min).

5 # sweet potatoes
1 c coconut milk (light will do)
1 T red curry paste (Buy a new jar, please. The one in the back of the fridge from an unknown time period won't do.)
1/2 c dark brown sugar (divided)
4 T unsalted butter (divided)
1 t salt
Optional: 1/4 tsp cayenne pepper, 1 T molasses, up to 1 T additional curry paste)

Steps:

  • 1. Poke the potatoes with a knife to prevent explosions in your clean oven, and then bake for an hour in a 375 degree oven until they are soft. When they are cool enough to handle, peel and mash in an oven safe casserole dish. 2. In a small saucepan, heat the coconut milk, curry paste, 1/4 c sugar, 2 T butter, salt, optional cayenne and molasses. Add this liquid to the potatoes in the casserole dish. Mash. 3. Three choices at this point: (a) mash, microwave for a minute to re-heat and serve; (b) cover and refrigerate up to two days; (c) create a sweet and crusty topping -- see #4. At least 30 minutes before serving, preheat the oven to 425 degrees. Cover the dish with foil and bake for 20 minutes. Remove the foil and top with the remaining 2T butter and 1/4 c brown sugar. Broil until brown and crusty. Check every two minutes so that it doesn't burn.
