I LOVE fettuccine, and when made with a bit of leftover ham it takes on a heartiness and richness so filling there isn't room for dessert!

12 ounces dry fettuccini noodles
8 ounces fresh asparagus, trimmed and cut into 2 inch pieces
½ cup butter
2 cups heavy cream
¾ cup grated Parmesan cheese
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
1 pinch cayenne pepper
½ pound cooked ham, diced

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Stir asparagus into pot in the last five minutes of cooking; drain.
  • While pasta is cooking, heat butter and cream in a medium saucepan over medium heat. When mixture begins to bubble, stir in Parmesan, garlic powder, pepper and cayenne. Continue cooking until mixture thickens, stirring occasionally. Stir in ham and heat through.
  • Toss pasta and asparagus with sauce and serve immediately.

1 pound dry fettuccine pasta
1 tablespoon butter
6 ounces diced cooked ham
2 cups heavy cream
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium sauce pan over medium heat, melt butter. Stir in ham and cook 1 minute. Stir in cream and heat through. Stir in Parmesan and cook until thick and smooth. Toss with cooked pasta.

Leftover ham, diced and blended into homemade Alfredo sauce. This is a combination of a couple of recipes. I toss frozen broccoli into the hot water with the pasta when it's almost al dente. The kids loved it asked for seconds.

1 lb fettuccine, prepared according to box
3 tablespoons butter
3 tablespoons flour
2 tablespoons dried parsley
1 teaspoon garlic, garne (garlic seasoning blend, or 1/4 tsp garlic powder)
8 ounces cream cheese
8 ounces 2% low-fat milk
1/4 cup grated parmesan cheese
2 cups diced cooked ham
2 cups broccoli
pepper

Steps:

  • Cook pasta according to directions, adding frozen broccoli at the end to heat through.
  • Melt butter in a small skillet or sauce pan over low heat. Stir and blend in flour, to avoid lumps. When completely blended and a thick yellow paste add parsley and garlic seasoning and stir to blend. Cook over low heat 3-5 minutes. Stir in cream cheese until melted. Mixture may appear grain-y. Stir until smooth. Add 1/2 c milk and blend. Add remaining milk and Parmesan cheese and ham and keep warm over low heat until ready to serve. (You may need to add additional milk to obtain desired consistency.).
  • Drain and pour pasta/broccoli mixture into a large bowl. Toss with pasta/ham mixture and top with pepper and additional Parmesan if desired.

1 pound farfalle or other short pasta
Kosher salt
3 tablespoons olive oil
1 cup thinly sliced shallots (about 2 large)
4 ounces thick-cut ham (about 4 slices), cut into thin strips
1 cup frozen or fresh shelled peas
1 cup heavy cream
1 tablespoon plus 1 1/2 teaspoons finely grated lemon zest (from about 1 large lemon)
2 tablespoons finely chopped fresh flat-leaf parsley, plus more for serving
Freshly ground black pepper
Freshly grated Parmesan (for serving)

Steps:

  • Cook farfalle in a large pot of boiling salted water, stirring occasionally, until al dente; drain, reserving 2 Tbsp. pasta cooking liquid.
  • Meanwhile, heat oil in a medium skillet over medium-high. Add shallots and 1/2 tsp. salt; cook, stirring occasionally, until tender, about 5 minutes (do not brown). Add ham, peas, and cream. Bring to a simmer and cook, stirring occasionally, until sauce is slightly thickened, about 5 minutes. Remove from heat; stir in lemon zest, 2 Tbsp. parsley, and 1/2 tsp. pepper.

This comes from one of my cookbooks I've had for awhile. It is a pasta book that covers how to make home made pasta- all kinds. I generally pull this out during the holiday's when I'm stuck on what else can I do with the leftover ham.

1 lb fettuccine (dried or fresh)
4 tablespoons butter
1/4 chopped onion, finely diced
4 ounces ham, cut into thin stips
3/4 lb fresh white mushroom, cleaned and diced
salt and pepper
1 cup heavy cream
1/2 cup parmesan cheese, grated

Steps:

  • Boil water and add noodles cooking until al dente.
  • Melt butter in large skillet over medium heat. Add onions and cook until golden brown.
  • Add ham and continue cooking until lightly colored (1-2 minutes).
  • Raise heat to medium high and add mushrooms. Season lightly with salt and pepper (be careful with the salt since the ham is already salty).
  • Continue cooking stirring occasionally until all the water that the mushrooms give off has evaporated (4-5 minutes).
  • Pour in cream and cook, stirring frequently unti it has reduced by half.
  • Remove skillet from heat.
  • When pasta is cooked, drain and add it to the skillet, tossing to coat noodles.
  • Add grated cheese and sprinkle with salt and pepper once more before serving.

2 leeks, (about 4 ounces), white parts only, very thinly sliced
2 tablespoons olive oil
2 cloves garlic, minced
1 cup Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
1 cup heavy cream
3 ounces cooked Parma ham, cut into 1/8-inch-thick matchsticks
1 cup frozen peas, defrosted
Salt and freshly ground black pepper
1 pound fresh or dried fettuccine
1 cup small mint leaves, or chopped large leaves

Steps:

  • Place sliced leeks in a small bowl of cold water. Let stand for 5 minutes to rid them of dirt and sand. Lift sliced leeks out of water, leaving sand behind, and drain well. Bring a large pot of water to a boil over high heat.
  • Heat olive oil in large skillet over medium-low heat. Add leeks and garlic, and cook until softened, 2 to 3 minutes. Raise the heat to medium-high. Add chicken stock, cream, ham, and peas; season with salt and pepper. Let the sauce cook until it is reduced by half, stirring frequently until it has thickened, about 6 minutes.
  • Salt the boiling water, add pasta, and cook until al dente, about 4 minutes for fresh. Drain fettuccine, and return to pot. Add sauce to fettuccine, and toss to combine. Transfer to a serving dish, sprinkle with the mint, and serve.
