2 tablespoons olive oil
3 shallots, chopped
2 garlic cloves, chopped
1 lb italian sweet sausage, casings removed
1 cup whipping cream
2 (14 1/2 ounce) cans tomatoes seasoned with basil garlic & oregano, in juice
1 tablespoon dried sage
1/2 teaspoon dry crushed red pepper
3/4 lb fettuccine pasta
1/2 cup grated parmesan cheese

Steps:

  • Heat oil in heavy large pot over medium-high heat.
  • Add shallots and garlic and saute until beginning to soften, about 3 minutes.
  • Add sausages and saute until no longer pink, breaking up with back of fork, about 5 minutes.
  • Add cream; simmer 5 minutes.
  • Add tomatoes with juices, sage and crushed red pepper.
  • Simmer until sauce thickens, stirring occasionally, about 15 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite.
  • Drain pasta, reserving 1/2 cup cooking liquid.
  • Return pasta to same pot; add sauce.
  • Toss over medium heat until sauce is combined with pasta, adding reserved liquid in 1/4 cupfuls if mixture is dry.
  • Season with salt and pepper.
  • Transfer to bowl.
  • Sprinkle with cheese.
  • Serve.

Number Of Ingredients 10

2 tablespoons olive oil

1 tablespoon dried sage
1/2 teaspoon dried crushed red pepper

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add shallots and garlic and sauté until beginning to soften, about 3 minutes. Pasta and sausage are a combination that usually suggests a dense, heavy tomato sauce. But it can also mean the very opposite. Sausage, used in small amounts, can contribute to a relatively light, almost delicate pasta sauce. In fact, sausage is a gift to the minimalist cook: it comes already seasoned, and its seasoning can be used to flavor whatever goes with it. The technique is simple. It's easiest to start with bulk sausage, or patties, because then there's no need to remove the meat from a casing. (Though that is easy to do: Just slit the casing with a sharp knife and peel it off.) You crumble the sausage into a little melted butter, which adds smoothness to the final sauce (omit it if you prefer), add water or other liquid and finish with grated Parmesan.

1/2 pound sweet or hot Italian sausage (if using link sausage, remove it from the casing)
1/2 cup water, white wine or red wine
1/2 pound cut pasta like ziti
1/2 cup or more freshly grated Parmesan
Salt and freshly ground black pepper to taste

Steps:

  • Bring a large pot of salted water to a boil for the pasta.
  • Put the butter in a medium skillet over medium-low heat. As it melts, crumble the sausage meat into it, making the bits quite small, 1/2 inch or less. Add the liquid, and adjust the heat so that the mixture simmers gently.
  • Cook the pasta until it is tender but not at all mushy. Reserve about 1/2 cup of the pasta cooking water.
  • Drain the pasta, and dress with the sauce, adding a little of the reserved cooking liquid if necessary. Toss with salt, pepper and Parmesan, and serve.

Yes, I know there are other tomato sausage pasta recipes here, but this one is a bit different and by far my favourite! The semi sundried tomatoes and sage add a lot of flavour; any pasta can be used. This is based on a recipe from "Super Food Ideas" - we love it at my house, hope you do too!

1 tablespoon olive oil
4 -6 spicy sausage (such as chorizo)
2 -4 cloves garlic, crushed
1 (400 g) can crushed tomatoes
3/4 cup semi sun-dried tomato, roughly chopped
60 ml dry white wine
300 ml cream (can use lite)
6 spring onions, chopped
2 tablespoons chopped sage leaves or 2 teaspoons dried sage
400 g fettuccine or 400 g pasta, of choice

Steps:

  • Heat olive oil in frying pan, cook sausages for 8-10 minutes or until cooked through.
  • Remove from pan and chop roughly, cover to keep warm.
  • Return pan to medium heat and add garlic, crushed and sundried tomatoes, white wine and cream and bring to the boil.
  • Reduce heat to low and simmer, uncovered for 10 minutes or until sauce thickens slightly.
  • Meanwhile, cook pasta according to package directions, drain.
  • Stir cooked sausage, spring onions and sage through sauce, season to taste.
  • Divide pasta among serving bowls and spoon over sauce.

1 onion, diced
1 clove garlic, minced
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 tablespoon dried basil leaves
¾ teaspoon white sugar

⅛ teaspoon ground black pepper
½ cup heavy cream

12 ounces penne pasta
1 pound Turkey Italian Sausage
1 medium onion (diced)
3 cloves garlic (minced)
16 ounces Italian-style diced tomatoes
8 ounces tomato sauce
1 cup half-and-half
½ teaspoon dried basil
¼ cup grated Parmesan cheese (for topping)
fresh chopped basil (optional garnish)

Steps:

  • Cook the pasta in salted water Al Dente, according to package directions.
  • While pasta is cooking, brown the sausage and drain grease.
  • Add the onions and garlic to the sausage and saute for a couple of minutes.
  • Pour in the entire can of diced tomatoes and the tomato sauce and heat through.
  • Pour in the half-and-half and heat through. The longer you cook the sauce the thicker it will get so simmer it until it is the consistency you want.
  • Add the basil and let it simmer for a few minutes.
  • Finally, mix the sausage sauce with the pasta.
  • Top each serving with a sprinkle of Parmesan cheese and fresh basil (if desired).
