1 package (14-1/2 ounces) protein-enriched rotini (about 3-1/2 cups uncooked)
2 medium ripe avocados, peeled and pitted
1 cup fresh spinach
1/4 cup loosely packed basil leaves
2 garlic cloves, halved
2 tablespoons lime juice
1/2 teaspoon kosher salt
1/4 teaspoon coarsely ground pepper
1/3 cup olive oil
1 cup assorted cherry tomatoes, halved
1/2 cup pine nuts
Optional: shredded Parmesan cheese, shredded mozzarella cheese and grated lime zest

Steps:

  • Cook rotini according to package directions for al dente. Meanwhile, place avocados, spinach, basil, garlic, lime juice, salt and pepper in a food processor; pulse until chopped. Continue processing while gradually adding oil in a steady stream., Drain rotini; transfer to a large bowl. Add avocado mixture and tomatoes; toss to coat. Top with pine nuts and toppings of your choice.

8 ounces uncooked angel hair pasta
2 tablespoons olive or vegetable oil
2 cloves garlic, finely chopped
3/4 cup chopped fresh basil leaves
1/2 to 3/4 large avocado, peeled and cut into small cubes
4 medium tomatoes, cut into small cubes
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook and drain pasta as directed on package.
  • While pasta is cooking, heat oil in 3-quart saucepan over medium heat; add garlic. Cook 1 to 2 minutes, stirring occasionally, until garlic is tender but not brown; remove from heat.
  • Stir basil, avocado and tomatoes into garlic in sauce-pan. Toss vegetable mixture and pasta. Sprinkle with salt and pepper.

I hesitate to call it a sauce, it's a lovely medley of flavours. You can add more garlic and adjust the rest of the seasonings to taste...but for me..the lime juice was the best addition to the sauce! If you like it spicy, add one more chili pepper to the mix! I paired it with a spinach salad to get more greens into my family and everyone cleaned their plates. Enjoy! **VEGAN OPTION: Choose pasta that's made without eggs.

1 tablespoon extra virgin olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 hot red chili pepper, fresh, seeded and minced
4 tomatoes, cut into 1/2 inch pieces
3/4 teaspoon sea salt, fine
1/8 teaspoon black pepper, freshly ground
1/2 cup fresh cilantro, chopped
12 ounces fettuccine pasta
2 avocados, ripe, peeled and chopped
2 tablespoons lime juice, freshly squeezed
3 tablespoons extra virgin olive oil (optional)

Steps:

  • Place a large pot of water on to boil.
  • Heat the 1 tablespoon of olive oil in a large skillet, over medium heat. Add the onion, garlic and chili pepper; cook until softened, about 5 minutes. Add the tomatoes, salt & pepper and cook, stirring often, until the sauce has thickened slightly, about 10 minutes.
  • Remove from the heat, and stir in the cilantro. Keep warm. Meanwhile, in a large pot of slightly salted water, cook the noodles until just tender, about 8-10 minutes. Drain well and transfer to a warmed serving bowl.
  • Add the tomato sauce, avocados, 3 tablespoons olive oil (optional) and lime juice. Toss to mix well, and serve immediately.
