Trying to recreate a feta dip we like from a local Greek restaurant, I ran across a recipe similar to this on the internet and adjusted it to come up with this. Eat with tortilla chips or pita bread or cut up veggies.

1 roasted red bell pepper
1 clove garlic, minced
8 ounces feta cheese
¼ cup plain yogurt
1 pinch cayenne pepper, or to taste

Steps:

  • Place the roasted pepper, garlic, feta cheese, yogurt, and cayenne pepper into a blender. Cover, and blend until smooth.

1 (7 ounce) jar roasted red peppers, drained and chopped
2 cups crumbled feta cheese
1 cup mayonnaise
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together the artichokes, peppers, feta, mayonnaise, and Parmesan cheese in a bowl; spread into the bottom of a shallow baking dish.
  • Bake in preheated oven until bubbling on top, 20 to 25 minutes.

I found this in a local newspaper and took it to a Christmas party. It was a huge hit! I used low-fat mayo and cream cheese and served with pita chips.

2 cups mayonnaise
2 (8 ounce) packages cream cheese, room temp
2 cups roasted red peppers, coarsely chopped
2 (6 ounce) jars marinated artichokes, coarsely chopped
1 teaspoon garlic powder
1 tablespoon italian seasoning
4 ounces feta cheese
4 -6 tablespoons parmesan cheese

Steps:

  • Preheat oven to 375 degrees.
  • Mix mayo and cream cheese until blended.
  • Add red peppers, artichokes, seasonings and feta cheese.
  • Place in a casserole dish.
  • Sprinkle with parmesan cheese.
  • Bake for 20-25 minutes or until mixture bubbles.

1/2 cup roasted red peppers, drained and roughly chopped
3 tablespoons fresh lemon juice

3 tablespoons finely chopped fresh mint
2 tablespoons fresh lemon juice (from 1 lemon)
1 tablespoon extra-virgin olive oil
Salt, as desired

Steps:

  • Combine red peppers and garlic in food processor or blender. Pulse until well blended. Add remaining ingredients, except salt; process until blended but still thick. Add salt and additional lemon juice to taste. Refrigerate for 30 minutes to allow flavors to blend. Serve cold. Make-Ahead Tip: Dip can be made 3 days ahead. Cover and refrigerate.
