For all those cornbread lovers who want a cross between cornbread and cake, this is it -- a tender, sweet cornbread that is lovely and versatile. Enjoy it with a holiday meal or serve it with berries and whipped cream for a light dessert.

10 tablespoons unsalted butter, melted, plus more for buttering the pan
1 cup all-purpose flour, plus more for dusting the pan (see Cook's Note)
1 cup stone-ground cornmeal
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup buttermilk
3 large eggs
1 teaspoon pure vanilla extract
2 tablespoons honey

Steps:

  • Preheat the oven to 350 degrees F. Butter and lightly flour a 9-inch cake pan. Be sure to remove any excess flour from the pan.
  • Whisk together the flour, cornmeal, sugar, baking powder, baking soda and salt in a large bowl.
  • Whisk together 8 tablespoons of the butter with the buttermilk, eggs and vanilla in a small bowl until smooth.
  • Pour the butter mixture into the cornmeal mixture and stir until thoroughly combined. Pour the batter into the prepared pan and bake until a cake tester comes out clean, about 30 minutes.
  • Let cool for 15 minutes before removing from the pan. Mix the honey and the remaining 2 tablespoons butter together in a small bowl, then spread all over the top of the cornbread to finish. Serve immediately or at room temperature.

1 1/2 cups all-purpose flour
1/4 cup granulated sugar
1/2 cup yellow cornmeal
1 tablespoon baking powder
1 1/4 cups milk
1/2 teaspoon salt
2 large eggs
1/3 cup vegetable oil
3 tablespoons melted unsalted butter or 3 tablespoons margarine
2 tablespoons honey
1/2 cup whole corn
1 small red bell pepper, deseeded and chopped
1 small green chili pepper, deseeded and chopped

Steps:

  • Preheat an oven to 400 degrees.
  • Grease an 8-inch square baking pan with butter.
  • In a large bowl, mix together the sugar, cornmeal, flour, salt and baking powder.
  • In a large measuring cup, whisk together the milk, honey and eggs.
  • Stir the egg mixture into the cornmeal mixture, mixing well.
  • Stir in the melted butter and then gently mix in the corn kernels, chili and red bell pepper.
  • Pour the batter into the baking pan.
  • Bake until firm, 18-20 minutes.
  • Cut into squares and serve hot.

This is our standby for cornbread, we use NO others. It does have a bit more sugar than normal, but it is oh so good.

1 cup cornmeal
1 cup all-purpose flour
1/2 cup brown sugar, packed
4 teaspoons baking powder
1 egg, beaten
1/2 teaspoon vanilla
1 cup milk
1/4 cup canola oil

Steps:

  • Pre-heat oven to 350 degrees.
  • Mix cornmeal, flour, sugar,and baking powder together. Add egg, vanilla, milk and oil.
  • Beat until just smooth, do not over beat!
  • Pour batter into a greased 8 inch square pan or a cast iron pan.
  • Bake at 350 degrees for approx 20-25 minutes or until golden brown.
