1 pkg (8 oz.) Philadelphia Cream Cheese, softened
1/4 cup mayonnaise or salad dressing
2 Tbsp lemon juice
1/2 tsp salt
1/4 tsp ground ginger
1/8 tsp pepper
4 drops red pepper sauce
2 cups cut-up cooked chicken
2 hard boiled eggs, chopped
1/4 cup sliced green onions-- scallions (2-3 medium)
3 green pepper rings
1 Tbsp toasted sesame seed
3 Tbsp chopped green onion or green pepper
3 Tbsp chopped pitted ripe olives
3 Tbsp chopped pimento, drained
Ritz crackers or bread rounds

Steps:

  • Mix cheese, mayonnaise, lemon juice, salt, ginger, pepper, and pepper sauce. Stir in chicken, eggs, and onions.
  • Shape into log (8 by 2 inches) and wrap in plastic wrap. Refrigerate until firm, about 4 hours.
  • Cut green pepper rings to make strips. Place strips diagonally across log, dividing log into 4 sections (fourths). Sprinkle sesame seed on 1 section, repeat with 3 tablespoons onion, the olives, and pimento on remaining sections. Serve with crackers.

This is a mayo free recipe! My mom makes this all summer long. It's great for a hot summer lunch or dinner, great to bring to a picnic.

1 (8 1/4 ounce) can crushed pineapple, undrained
1 (8 ounce) container cream cheese
2 cups of chopped chicken
1 (8 ounce) can water chestnuts, undrained and sliced
1/2 cup of sliced celery
1/2 cup of slivered toasted almond
1/4 cup green onion, slices (including tops)
1/4 teaspoon salt
1 dash black pepper

Steps:

  • Drain pineapple, reserving 1/4 cup of liquid.
  • Combine reserved pineapple liquid and cream cheese, mixing until well blended.
  • Add pineapple, chicken, water chestnuts, celery, 1/4 cup of almonds(walnuts and pecans will work also), onions, salt and pepper to cream cheese mixture; mix lightly.
  • Chill at least one hour but overnight is best.
  • To serve place in tomatoes, lettuce cups, or large cooked pasta shells. Prep time does not include time to chill.

2 skinless, boneless chicken breast halves
1 (1.27 ounce) packet dry fajita seasoning, divided
1 tablespoon vegetable oil
1 (15 ounce) can black beans, rinsed and drained
1 (11 ounce) can Mexican-style corn
½ cup salsa
1 (10 ounce) package mixed salad greens
1 onion, chopped
1 tomato, cut into wedges

Steps:

  • Rub chicken evenly with 1/2 the fajita seasoning. Heat the oil in a skillet over medium heat, and cook the chicken 8 minutes on each side, or until juices run clear; set aside.
  • In a large saucepan, mix beans, corn, salsa and other 1/2 of fajita seasoning. Heat over medium heat until warm.
  • Prepare the salad by tossing the greens, onion and tomato. Top salad with chicken and dress with the bean and corn mixture.

1 cup mayonnaise
1 teaspoon paprika
1 ½ cups dried cranberries
1 cup chopped celery
2 green onions, chopped
½ cup minced green bell pepper
1 cup chopped pecans
1 teaspoon seasoning salt
ground black pepper to taste

Steps:

  • In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.
