One of my favorite cookie bar recipes! These are gooey and moist (as long as they are not overbaked), and I love the combination of ingredients, sweet and somewhat spicy! I found the recipe on a travel and lodging directory. It is a specialty recipe of the Creekside Inn Bed and Breakfast in Paradise, Pennsylvania.

Number Of Ingredients 13

1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
3/4 cup butter, softened
1 1/2 cups packed brown sugar
2 large eggs
1 teaspoon vanilla
1 3/4 cups old fashioned oats
1 cup raisins
1 cup semi-sweet chocolate chips

Steps:

  • In a small bowl, combine flour, baking soda and spices; set aside.
  • In a large bowl, mix butter and brown sugar.
  • Beat in the eggs and vanilla.
  • Gradually add flour mixture and oats alternately while mixing on low speed.
  • Stir in the raisins and chocolate chips by hand.
  • Spread mixture into a greased 13x9-inch baking pan.
  • Bake at 350° for 25-30 minutes (until almost firm, but still slightly soft in center).
  • When cool, cut into bars.

1 cup all-purpose flour
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
1 teaspoon vanilla extract
1 large egg
1/2 cup butter, melted and cooled
2 cups quick-cooking oats (not instant)
1 1/2 cups raisins

Steps:

  • Preheat oven to 350°F Line an 8×8-inch baking pan with parchment paper (optional, but aids in getting cookies out of pan).
  • Whisk together flour, sugar, brown sugar, baking soda, salt and spices in a large bowl.
  • Make a well in the center of the flour mixture and stir in vanilla, egg and melted butter until smooth. Stir in oats and raisins until they are evenly distributed.
  • Pour dough into prepared pan and spread into a even layer with a spatula or your fingers. Bake for 22-26 minutes, or until bars are set and the center no longer looks wet. Edges will be golden brown. Cool pan on a wire rack before slicing. Cut into rectangular bars to serve.

3/4 cup (1 1/2 sticks) unsalted butter, melted, plus more for pan
3/4 cup packed light-brown sugar
1/4 cup granulated sugar
1 large egg
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup all-purpose flour, (spooned and leveled)
2 cups old-fashioned rolled oats (not quick-cooking)
1 cup raisins

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter paper.
  • In a large bowl, whisk together butter, sugars, egg, salt, and cinnamon until smooth. Add flour, oats, and raisins; fold in just until combined.
  • Spread batter in prepared pan, and bake until a toothpick inserted in center comes out with moist crumbs attached, 25 to 30 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 bars.

I WANTED TO MAKE SOMETHING THAT WASN'T TOO HIGH IN CALORIES AND THIS IS WHAT I CAME UP WITH AND IT'S 146 CALORIES PER BAR. beats buying them. very HIGH in fiber. and oatmeal lowers your cholesterol.

4 cup(s) old fashioned quaker oatmeal- plain, 4 cups, after measure then ground in food processor
3 tablespoon(s) cocoa, dry powder, unsweetened, 3 tbsp
3/4 cup(s) brown sugar, 3/4 cup, packed
1 cup(s) splenda sugar, 1 cup
1 cup(s) powdered sugar, 1 cup, unsifted
2 1/2 teaspoon(s) vanilla extract, 2.5 teaspoon
2 large egg, fresh, 2 large
1 - egg white, 1 serving
1/2 cup(s) raisins, .5 cup (not packed)
1 cup(s) walnuts, 1 cup, whole .. ground after measuring
1 teaspoon(s) salt, 1 tsp

  • IN BOWL MIX GROUND OATMEAL, 2 TBSP COCOA, ALMONDS, RAISINS, SALT. MIX WELL. IN ANOTHER BIGGER BOWL CREAM THE BUTTER, AND BROWN AND WHITE SUGARS TOGETHER. ONCE CREAMED ADD THE 2 EGGS AND 1 EGG WHITE, MIX WELL. ADD 1 1/2 teasp VANILLA, MIX WELL. NOW POUR 1/2 THE OATMEAL MIXTURE INTO THE EGG MIXTURE AND MIX WELL. POUR THE REST IN. 1 1/2 cups all-purpose flour, (spooned and leveled)
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
3/4 cup packed light-brown sugar
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups rolled oats
1 1/2 cups raisins
1 package (12 ounces) semi-sweet chocolate chips

Steps:

  • Preheat oven to 375 degrees. In a medium bowl, whisk together flour, baking soda, and salt; set aside. With an electric mixer, cream butter andsugars until light and fluffy.
  • Add eggs and vanilla; beat until combined, scraping down sides of bowl as needed. Add flour mixture;beat until just combined. Add oats, raisins, and chocolate chips; beat until just combined.
  • Drop 32 heaping tablespoons of batter, about 1 1/2 inches apart, onto baking sheets. Bake, rotating sheets halfway through, until cookies have spread and are golden brown and soft to the touch, 10 to 12 minutes. Cool 5 minutes on sheets; transferto a wire rack to cool completely.
