This is a wonderfully simple and delicious recipe to use for bone-in, skin-on chicken thighs.

6 skin-on, bone-in chicken thighs
salt and ground black pepper to taste
1 pinch garlic powder, or to taste

Steps:

  • Preheat oven to 475 degrees F (245 degrees C). Set a wire rack inside a broiler pan or baking pan.
  • Pat chicken thighs dry with paper towels. Lift up skin gently; sprinkle salt, pepper, and garlic powder under the skin. Replace skin. Season skin and underside of the thighs with salt, pepper, and garlic powder. Arrange on the rack.
  • Roast in the preheated oven until golden, about 20 minutes. Reduce oven temperature to 400 degrees F (200 degrees C). Continue roasting until juices run clear, about 30 minutes more. Let rest for 5 minutes before serving.

1/2 cup cornmeal
1/2 cup all-purpose flour
1-1/2 teaspoons salt
1-1/2 teaspoons chili powder

1 broiler/fryer chicken (3 to 3-1/2 pounds), cut up
1/3 cup butter, melted

Steps:

  • In a shallow bowl combine the first six ingredients. Pour milk in another shallow bowl. Dip chicken in milk, then roll in the cornmeal mixture. , Place chicken in a greased 13-in. x 9-in. baking pan. Drizzle with butter. Bake, uncovered, at 375° for 50-55 minutes or until juices run clear.

2 slices bread
1 cup grated Parmesan cheese
2 teaspoons dried oregano
1 ½ teaspoons dried basil
1 ½ teaspoons minced garlic
½ cup grated Parmesan cheese
2 tablespoons vegetable oil
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bread into a food processor and blend until crumbled. Transfer bread crumbs to a shallow bowl. Add 1 cup Parmesan cheese, oregano, basil, and garlic; stir to combine.
  • Press chicken breast halves into bread crumb mixture until coated; arrange on a large baking dish. Drizzle chicken with vegetable oil and sprinkle with remaining 1/2 cup Parmesan cheese.

I hope you enjoy this START THE DAY before recipe from TOH as much as we do. The original recipe says 1 to 4 teaspoons of salt, and so you might want to adjust it according to your personal taste. The original recipe does not specify boneless chicken breasts, but I have made this both ways. But if making with boneless allow less time in oven-about 50 minutes-you might need to remove and keep warm smaller pieces while biggest piece is getting done. This recipe reminds me of the tandori approach to making chicken. Try with toasted Panko crumbs.

2 cups buttermilk
1/4 cup lemon juice
4 teaspoons Worcestershire sauce
3/4 teaspoon garlic powder
2 teaspoons paprika

8 chicken pieces (legs, breasts etc..., or a whole chicken cut in pieces...)
2 tablespoons milk
2 tablespoons ranch salad dressing
1/4 cup corn flake crumbs
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon pepper
1 (318 ml) can cream of mushroom soup
1 cup sour cream (I use the no fat kind)
1 (1 ounce) package dry onion soup mix

Steps:

  • Preheat oven to 375°F
  • Place chicken pieces, skin side up in a baking dish.
  • Mix milk with Ranch drerssing and brush over chicken.
  • In a seperate bowl, combine corn flake crumbs, garlic powder paprika and pepper.
  • Sprinkle corn flake mixture over chicken.
  • Bake covered, for 55-60 minutes, or until chicken is no longer pink. Drain drippings from baking dish.
  • In a small bowl, combine all the sauce ingredients, and pour around, but no on top of the chicken pieces. Bake, uncovered for an additional 12 minutesd or until sauce is heated through. Serve chicken with the sauce on the side for dipping!

1 tablespoon chopped fresh parsley
1 teaspoon dried basil
1/2 teaspoon salt

Steps:

  • Combine first 7 ingredients, place in a plastic bag and shake to mix.
