When fresh sweet corn is out of season, this is a delicious alternative. I call it candy corn...so darn yummy! Enjoy!

Number Of Ingredients 11

1 - 12 ounce(s) bags, frozen corn- thawed
1 cup(s) heavy cream
1/4 teaspoon(s) pepper
1 teaspoon(s) kosher salt
2 tablespoon(s) sugar
2 tablespoon(s) butter
1/2 tablespoon(s) bacon grease- optional
1 cup(s) milk
2 tablespoon(s) flour somewhat heaping
1/4 cup(s) shredded parmesan cheese
2 - green onions, sliced

Steps:

  • In a large skillet over medium heat - combine the corn, sugar, salt, pepper, butter, bacon grease and cream.
  • Whisk together the milk and flour and stir into the corn mixture. Continue cooking until the mixture is thickened and corn is cooked through.
  • Remove from the burner and stir in the Parmesan cheese and green onion. Serve immediately.

I first made this corn for a family gathering. (That means 30 + people of varying ages!) Everyone, from seniors to children liked it. It is simple to make and made with ingredients you can keep on hand. It travels and holds well in a crockpot.

1 (28 ounce) bag frozen corn, thawed
1 (8 ounce) package cream cheese
1/4 lb butter
salt
pepper

Steps:

  • Melt butter and cream cheese.
  • Stir in thawed corn.
  • Salt and pepper to taste.
  • Cook, stirring occasionally, until the sauce has thickened.
  • Note: If corn is cold the sauce ingredients will lump up when it's added.
  • It will melt out smooth again!

My whole family, adults and children alike, all request this dish for any occasion. It was the favorite of my sister who has passed and it's cooked with love and sweet memories!

2 box(es) frozen white shoepeg corn, thawed
8 ounce(s) pkg. cream cheese, room temperature
1 stick(s) butter, room temperature
1/3 cup(s) diced green bell pepper
1/3 cup(s) diced red bell pepper
1 dash(es) salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees. Mix cream cheese and butter; add diced bell peppers; add salt and pepper to taste, then stir in corn. Put mixture in ovenproof casserole dish and bake, uncovered for approx. 35 minutes.
