3/4 cup flour
6 tablespoons cocoa powder
3/4 cup Splenda granular
1/4 teaspoon salt
1/3 cup unsweetened applesauce
3 egg whites
1 teaspoon vanilla

Steps:

  • Combine flour, cocoa, splenda, and salt.
  • Stir in applesauce, vanilla, and egg whites.
  • Spray an 8 x 8 pan with cooking spray, spread the batter evenly in the pan, and bake in a preheated 325 oven for about 20 minutes, or until the edges are firm and the center almost set.
  • Cool to room temp, cut into squares and eat.

This recipe was developed for a challenge to make unusual cornbread. I've gone wheat-free, so used cocoa where I would have used flour and milled flaxseed/water for the fat. Added chocolate chips and walnuts, plus a little cinnamon and a dash of cayenne 'cause I'm crazy like that. Compared to 'real' brownies, 'real' wins, but they are pretty good compared to flaxseed muffins. Especially good warmed a little in the microwave with some greek yogurt or fruit.

1 cup(s) milk
1 - egg
1/3 cup(s) water
1/4 cup(s) honey
1/2 cup(s) milled flaxseed
3/4 cup(s) cocoa
2 teaspoon(s) baking powder
1 teaspoon(s) cinnamon
1 pinch(es) cayenne pepper
1/2 teaspoon(s) salt
1/2 cup(s) walnuts, chopped
1/2 cup(s) chocolate chips

Steps:

  • Preheat oven to 400 degrees. Grease 8x8 pan.
  • Add milk to cornmeal, stir. In separate bowl, whisk egg, water, honey, and flaxseed. Let both mixtures sit about 15 minutes.
  • Stir spices, baking powder, and cocoa into cornmeal mixture.
  • Stir liquid (which is the consistency of applesauce after it sits) into cornmeal mixture.
  • Fold in walnuts and chocolate chips.
  • Spread in pan and bake 20 minutes, or until done.

2 tablespoons water
2 teaspoons ground flax seeds
1/4 cup brewed coffee
1/4 cup water
2 teaspoons vanilla extract
1 1/3 cups white whole wheat flour
3/4 cup cocoa powder
3/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup semisweet vegan chocolate chips
1/2-1 cup coarsely chopped pecans (optional) or 1/2-1 cup walnuts (optional)

Steps:

  • Preheat oven to 350 degrees F. Grease an 8×8 inch baking pan.
  • In a medium sized bowl, stir together the sugar, applesauce, and 2 tablespoons of water.
  • In a small bowl or food processor, combine the ground flax seed with the 1/4 cup coffee and 1/4 cup water. Add this to the applesauce mixture, along with the vanilla and stir to combine.
  • In a separate small bowl, combine the flours, cocoa, baking powder, salt, chocolate chips, and nuts (if using). Add to the applesauce mixture and stir to combine.
  • Pour into the prepared pan and bake for 20-28 minutes, depending on if you like your brownies moist or cakey. Remove from the oven, add the icing on top, allow to cool, and then cut.

2 egg whites
1 cup sugar
2 tablespoons corn syrup
1/2 cup Hersheys Chocolate Syrup
1/2 cup hot fudge
1/4 cup water
1 teaspoon vanilla
1 1/2 cups flour
1/4 cup cocoa powder
3/4 teaspoon salt
1/4 teaspoon baking powder

Steps:

  • Heat oven to 350 degrees. In a large bowl whip the egg whites with electric mixer until thick. Add the sugar and beat until the mixture forms stiff peaks. Add in the corn syrup, chocolate syrup fudge sauce, water and vanilla. In seperate bowl combine the dry ingredients and slowly add to the mixing bowl while beating. Spray a 13 by 9 inch baking pan with non stick spray. Sprinkle the inside and the sides of the pan with additional sugar. Pour batter into baking dish and sprinkle top with a little sugar. Bake 25 to 28 minutes or until brownies begin to pull away from sides of pan.

1 box(es) devil's food cake mix (your choice) for low sugar
1 box(es) pillsbury sugar free chocolate cake mix
1 - 15 ounce can solid pack pumpkin
1 teaspoon(s) sugarfree powdered french vanilla creamer
1 - 8 ounce cream cheese
1/4 teaspoon(s) splenda
1/4 teaspoon(s) vanilla extract

Steps:

  • pre-heat oven to 400 degrees. spray with non-stick spray.
  • In large bowl combine pumpkin with dry cake mix and stir well(NO OTHER INGREDIENTS ARE NEEDED)Spread into 9by13 inch pan and set aside.
  • In small bowl, mix creamer with 2 Tablespoons with water. mix until well combined. Add cream cheese splenda and vanilla. Whisk until free of lumps.Spoon cheese mixture over brownie mix and with knife swirl back and forth and sideways. Bake 25 to 30 minutes.
