Chances are you have all of the ingredients for this pasta dish on hand, in your refrigerator and cupboard. That's how it came together in my kitchen, and what a felicitous combination of flavors it turned out to be. Plus it goes together in a half hour or less. Be sure to use a milder blue cheese so it doesn't end up overwhelming the other flavors. You could substitute broccoli for the spinach, and you could leave out the chicken for a vegetarian dish (use vegetable broth instead of chicken). This goes well with a dry white or medium-bodied red wine.

1 lb corkscrew macaroni
1 large whole boneless skinless chicken breast
2 tablespoons olive oil, divided
3 large garlic cloves, peeled and thinly sliced
1 (8 ounce) bag pre-washed Baby Spinach
1 large red bell pepper, roasted, skinned, seeded and cut into thin strips (can substitute bottled just as good)
1 1/2 cups chicken broth (preferably low-sodium)
1 bunch fresh basil, sliced into ribbons
8 ounces gorgonzola, cut into 1 cubes (or other mild, creamy blue cheese)
salt and pepper
1/3 cup pine nuts, toasted
freshly grated parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta 10 minutes or until al dente; drain.
  • Cut chicken into ½--inch pieces and sprinkle with salt and pepper. Heat 1 tablespoons olive oil in a large sauté pan and sauté chicken pieces until just cooked through, around 5 minutes. Remove chicken and pan juices to a bowl and set aside.
  • Heat remaining 1 tablespoons olive oil in same pan and sauté garlic until translucent. Do not allow it to brown.
  • Add the washed spinach and sauté until wilted. Add chicken broth and red peppers and bring to a boil. Add basil and gorgonzola and stir over medium-high heat until cheese melts completely.
  • Add drained pasta, chicken and juices to sauté pan and heat for 1 minute, mixing thoroughly with vegetable-cheese mixture. Season to taste with salt and pepper.
  • Divide among serving plates and sprinkle with Parmesan cheese and toasted pine nuts. Serve immediately.

2 lbs fresh spinach, washed well to remove sand,drained,stemmed,and very coarsely chopped
1 sweet onion, chopped (Texas-1015, Vidalia, Maui, or Walla Walla)
2 tablespoons minced garlic
extra virgin olive oil
1/4 teaspoon freshly grated nutmeg (optional)
1 lemon, juice and zest of, grated,to taste
kosher salt
fresh ground black pepper
1/4 cup toasted pine nuts, to taste

Steps:

  • Heat a large pot or Dutch oven (it has to be large to hold spinach before wilting) over medium-high heat.
  • Heat 1-2 Tbsp olive oil, and saute onion until translucent.
  • Add garlic, and continue cooking until onion just begins to brown around the edges, but garlic is not browning.
  • Add spinach, with just the water clinging to the leaves, adding by handfuls as the spinach wilts and makes room for more, until all of the spinach is incorporated.
  • If desired, drain the rendered juices from the pan before continuing.
  • Season with nutmeg, lemon zest and juice, salt, and pepper, to taste, continuing to toss spinach until it is just wilted, but still bright green.
  • Stir in toasted pine nuts, and drizzle with more lemon juice and olive oil if desired.

This is a favorite pasta dish for company. The combination of shrimp, red peppers and pine nuts, stir fried with garlic and a wine-shallot sauce.

1 lb raw large shrimp, tails
2 cups dry white wine
1/2 cup finely chopped shallot
2 tablespoons chilled butter
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
12 ounces linguine
1 tablespoon salt
5 tablespoons extra virgin olive oil, divided
1/2 cup pine nuts, lightly toasted
2 cloves garlic, finely chopped
2 large sweet red peppers, seeded and juliened
2 tablespoons finely chopped fresh basil
1 tablespoon finely chopped fresh oregano
1/2 cup freshly grated padano cheese (optional)

Steps:

  • Shell, devein and butterfly shrimp; set aside.
  • In a saucepan, combine wine and shallots and bring to boil over high heat.
  • Boil until reduced to 2/3 cup, stirring occasionally.
  • Reduce heat to low and whisk in butter.
  • Remove pan from heat when bubbles appear on surface.
  • Season with salt and pepper.
  • Keep sauce warm over very low heat until ready to serve.
  • In a large cooking pot or pasta pot, fill 3/4 full with water and bring to a rolling boil.
  • Add 1 tablespoon of salt and 2 tablespoons of extra virgin olive oil.
  • Add linguini and cook as instructed on package; about 12 to 15 minutes or until el dente'.
  • While pasta is cooking, heat remaining 3 tablespoons of olive oil in a large frying pan over medium heat.
  • Add prepared shrimp, nuts and garlic; saute' for 2 minutes.
  • Add red peppers and saute' until peppers are tender and shrimp are opaque, about 2 minutes.
  • Drain pasta well and transfer to a large platter or a bowl.
  • Spoon sauce and prawn mixture over pasta and gently toss to coat well.
  • Sprinkle with basil and oregano, toss lightly.
  • Sprinkle grated Padano cheese on each serving.
  • Spinach fettucine is another pasta that is great in this recipe.

A quick and nice comfort food dish back from my university days. Exactly 5 ingredients! Well, the basic "student" version, which is actually really good and filling :). Feel free to add garlic, a dash of cognac, parsley, parmesan and toasted nuts (such as walnuts) to enhance the basic version.

400 g pasta (Spaghetti, Penne, Farfalle, ... any rather thick pasta to soak up this rich sauce)
150 g cream cheese
150 g gorgonzola
salt and pepper

Steps:

  • Boil pasta according to package instruction.
  • Melt cream cheese and gorgonzola in a pot. Stir frequently.
  • (For the deluxe version: now it's time to add cognac, garlic and minced parsley).
  • Salt and pepper to taste.
  • Drain pasta and mix with sauce. (Deluxe versioners now sprinkle with toasted nuts and shaves of parmesan).

This recipe comes from an award winning Australian chef. It's quick and easy to make, and tastes absolutely delicious. The sauce also goes well with gnocchi and buccatini. Said to serve 6, but I generally use around 250 g of pasta and half the listed amount of the other ingredients to serve two as a main. For a vegetarian version use non-animal rennet cheeses.

2 tablespoons olive oil
100 g shallots, sliced
3 garlic cloves, sliced
125 ml dry white wine
300 ml cream
200 g baby english spinach, stems removed, washed
80 g gorgonzola, roughly chopped
1/2 lemon, juice of
250 g fettuccine
shaved parmesan cheese, to serve (I use a fairly generous amount)
40 g pine nuts, toasted, to serve (or more)

Steps:

  • Heat oil in a frying pan over medium heat.
  • Saute shallots & garlic, without browning, until softened.
  • Pour in the wine and simmer until reduced by half, stirring, to deglaze the pan.
  • Add cream and simmer until mixture has reduced by one-third.
  • Add spinach, Gorgonzola & lemon juice.
  • Season to taste with salt & freshly ground black pepper.
  • Cook pasta in a large saucepan of boiling salted water until al dente.
  • Drain pasta and fold through sauce, adding a little of the pasta water if sauce is too thick.
  • Serve pasta topped with Parmesan, pine nuts and freshly ground black pepper.
