This is a remarkably tasty dish. Love to cook it in the fall. The combination of apples and pork can't be beat. It may take a little effort, but believe me it is worth it. This is a Taste of Home Recipe. Don't let the length of ingredients fool you, it's really not that bad, just assemble everthing you need first and it will go quickly. Also don't fret if you don't have an ovenproof 12 inch skillet, that just makes it more convient, just tranfer to baking dish.

1 lb bacon, cut into 2 inch pieces
3 medium onions, chopped
3 lbs boneless pork, cubed
3/4 cup flour
cooking oil (optional)
3 tart cooking apples, peeled and chopped
1 teaspoon rubbed sage
1/2 teaspoon ground nutmeg
1 teaspoon salt
1/4 teaspoon pepper
1 cup apple cider
1/2 cup water
4 medium potatoes, peeled and cubed
1/2 cup milk
5 tablespoons butter or 5 tablespoons margarine, divided
salt and pepper
snipped fresh parsley (optional)

Steps:

  • Cook bacon in an ovenproof 12 inch skillet until crisp. Remove with a slotted spoon to paper towels to drain.
  • In drippings, saute onions until tender; remove with a slotted spooon and set aside.
  • Dust pork lightly with flour. Brown a third at a time in drippings, adding oil if needed.
  • To pork, add bacon, onions, apples, sage,nutmeg, salt and pepper. Stir in cider and water.
  • Cover and bake at 325 for 2 hours or until pork is tender.
  • In a saucepan, cook potatoes in boiling water until tender.
  • Drain, and mash with milk and 3 tablespoons butter.
  • Add salt and pepper to taste.
  • Remove skillet from oven and spread potatoes over pork mixture.
  • Melt remaining butter; brush over potatoes.
  • Broil 6 inches from the heat for 5 minutes or until topping is browned.
  • Sprinkle with parsley if desired.

1 pound sliced bacon, cut into 2-inch pieces
3 medium onions, chopped
3 pounds boneless pork, cut into 1-inch cubes
3/4 cup all-purpose flour
Canola oil, optional
3 medium tart apples, peeled and chopped
1 teaspoon rubbed sage
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon pepper
1 cup apple cider
1/2 cup water
4 medium potatoes, peeled and cubed
5 tablespoons butter, divided
1/2 cup 2% milk
Additional salt and pepper to taste
Minced fresh parsley, optional

Steps:

  • In a large cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard all but 2 tablespoons drippings. Increase heat to medium-high. Add onions to drippings; cook until tender, 5-7 minutes. Remove with a slotted spoon; drain. Reduce heat to medium., Preheat oven to 350°. Toss pork with flour. Working in batches, brown pork in drippings, adding oil if needed. Remove with a slotted spoon; drain. Remove skillet from heat; discard drippings. Return pork to skillet. Add bacon, onions, apples, sage, salt, nutmeg, and pepper. Stir in cider and water., Bake, covered, until pork is tender, about 2 hours. Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-15 minutes., Preheat broiler. Drain potatoes. Mash, gradually adding 3 tablespoons butter, enough milk to reach desired consistency and salt and pepper. Spread potatoes over pork mixture. Melt remaining butter; brush over potatoes. Broil 6 in. from heat until topping is browned, about 5 minutes. If desired, sprinkle with parsley.

Number Of Ingredients 7

2 1/2 to 3 lb boneless pork loin
cooking spray
3 large apples, sliced (most any apple is good)
1 Tbsp butter
2 Tbsp cinnamon
1/4 c sugar
1 c port wine

Steps:

  • 1. Preheat you oven to 350.
  • 2. Spray fry pan with cooking spray and heat on medium-high heat until hot.
  • 3. Add pork loin and brown on all sides to hold in juices.
  • 4. Place browned pork loin is a small oblong roasting pan with a lid.
  • 5. Place in oven and bake for 1 1/2 hour.
  • 6. Meanwhile, peel and slice apples in a frying pan, add butter, sugar and cinnamon.
  • 7. Cook apples on medium-high heat turning often to coat apples with cinnamon sugar and butter.
  • 8. Fry apples until they are tender, but not cooked too soft.
  • 9. Remove apples from heat and set aside.
  • 10. When pork loin has baked for 1 1/2 hour; remove from oven and add the apples on top of loin and on sides..
  • 11. Poor port wine on apple and loin and cover and return to oven to cook for another hour or so. Or until port wine has become a thick syrup.
  • 12. Remove from oven and place loin and apples on serving tray and pour thick syrup over all and serve with your favorite side dishes.

This recipe is from a cookbook called The Southern Heritage All Pork Cookbook. Preparation time not included. I need to add a correction to the recipe. I don't use as much oil as stated in the recipe to fry the pork chops and since I never measure how much I use I just listed the amount of oil as it was given in the original recipe.

1 egg
1/4 cup milk
1 teaspoon salt
1/8 teaspoon pepper
1 dash rubbed sage
6 pork chops, about 1 1/2 pounds (1/2 inch thick)
1 cup all-purpose flour
vegetable oil
1 cup milk
3 medium cooking apples, unpeeled, cored and sliced
1/2 cup sugar

Steps:

  • Combine first 5 ingredients and beat well.
  • Dip pork chops in egg mixture and dredge in the flour.
  • Reserve 2 tablespoons flour to make gravy.
  • In a large skillet heat 1/2 inch of vegetable oil to 350°F.
  • Fry pork chops in oil until golden brown and tender.
  • Turning as needed.
  • Drain pork chops on paper toweling and keep warm while preparing apples and gravy.
  • Reserve pan drippings in skillet.
  • Take 2 tablespoons of the pan drippings and put in a small skillet.
  • Add reserved flour, stirring until smooth.
  • Cook for 1 minute, stirring constantly.
  • Gradually add milk; stirring constantly over medium heat until thickened.
  • Pour gravy in serving bowl.
  • Fry apples in reserved hot pan drippings until tender, turning once.
  • Drain apples well on paper towels.
  • Place apple slices back in skillet and sprinkle with sugar.
  • Heat just until sugar starts to melt.
