Leftover salmon gets a recipe remake with bowtie pasta, fresh asparagus, and dill in this super simple Parmesan cream sauce that makes meal prep a breeze.

1 pound dried bow tie pasta (, or farfalle)
2 cups chopped asparagus spears (, cut into 1-inch pieces)
2 cups heavy cream
2 Meyer lemons (, zested (use 2-3 regular lemons if you can't find Meyer lemons))
½ cup freshly grated Parmesan cheese
1/8 cup fresh dill (, chopped, plus more for serving)
2 cups flaked, cooked salmon
kosher salt and freshly ground pepper

Steps:

  • Bring a large pot of water to boil and cook the bow tie pasta according to package directions until al denté.
  • When noodles are done cooking, use a slotted spoon to transfer the pasta to a colander, reserving the pasta cooking water in the pot. Reheat the pot of water over medium heat and add the chopped asparagus spears, cooking until they turn bright green, about 1-2 minutes, then transfer to the same colander as the pasta. You want the asparagus to still have a snap to but not taste raw.
  • While the pasta and asparagus are cooking, pour the cream into a 12-inch skillet and bring to a boil, then reduce to simmer and cook until reduced by half and the cream easily coats the back of a spoon.
  • Add the lemon zest, Parmesan cheese, fresh dill and cooked salmon to the cream and stir until the Parmesan is melted into the cream and the salmon is warmed through. Season with kosher salt and freshly ground pepper.
  • Add the cooked bow tie pasta to the skillet and toss to coat. Add more salt and pepper if desired, and top with more Parmesan cheese and dill if desired. Serve immediately.

12 ounces farfalle (bow-tie pasta)
Coarse salt and ground pepper
1 small red onion, quartered and thinly sliced
2 ounces bar cream cheese, cut into small pieces
1/4 cup fresh dill, coarsely chopped, or 1 teaspoon dried dill weed
2 tablespoons capers, drained and rinsed
4 ounces smoked salmon, cut into bite-size pieces

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/2 cup pasta water. Add onion to pot; immediately drain pasta mixture, and return to pot.
  • Add cream cheese, dill, capers, and salmon to pasta. Toss, adding reserved pasta water a little at a time to create a thin sauce that coats farfalle (you may not need all the water). Season lightly with salt and pepper. Serve.

Serve with a big loaf of garlic bread and your guests will be in heaven. It serves 4 people (well, normal people- my husband can eat more than half of this himself) but you can easily double for a larger crowd.

1 lb bow tie pasta (farfalle)
3 tablespoons butter
3 tablespoons purple onions, diced
2 teaspoons garlic, minced (or more)
8 ounces smoked salmon, flaked into chunks
4 -6 ounces vodka (start with 4 the first time and adjust up if you like more next time)
3 cups heavy cream
3/4 cup tomato sauce
1 teaspoon dried basil
salt and pepper

Steps:

  • Boil water and cook pasta according to package directions. DO NOT ever add oil to the water! It will make the sauce slide off the pasta later.
  • In a medium saucepan, melt butter and add onion and garlic. Cook over medium heat until onion starts to sweat and soften. Add salmon and cook until it starts to cook a little, about 2-3 minutes. Add vodka and flame off alcohol.
  • Add the cream, tomato sauce, basil, salt and pepper. Bring sauce to a boil and simmer, reducing until it is thick, about 8 minutes or so.
  • Serve over pasta and enjoy! Pass the grated cheese on the side.

A dish I heartily enjoyed recently in Tuscany. This is me experimenting at making it - no claims to authenticity - it is toothsomely tasty, though. It can be on your table in practically no time at all and is dead-simple to make. I have also made this using left-over, cooked salmon, and it is still very good indeed, although missing the smokiness of the original recipe.

12 ounces farfalle pasta (or pasta of your choice)
8 ounces smoked salmon, cut into julienne strips
2 garlic cloves, finely minced
3 tablespoons butter
2 tablespoons vodka
1 1/2 cups half-and-half cream
4 ounces low-fat cream cheese
1/4 teaspoon freshly-cracked black pepper (or more)
freshly-grated parmigiano-reggiano cheese

Steps:

  • Cook the pasta in lots of boiling, salted water until dente. Drain and set aside.
  • In a large skillet, saute garlic in butter over medium heat for 2 minutes, careful not to let the garlic brown or burn. Add vodka and cook a further minute or so for alcohol to evaporate. Add half and half and cream cheese and whisk until the cream cheese has melted into the sauce. Add the pepper and simmer for 2 minutes.
  • Add the cooked pasta to the sauce and all of the smoked salmon. Keep tossing and cooking the pasta in the sauce for 1-2 minutes so that the pasta absorbs some of the sauce, but is still coated in a 'runny' and creamy sauce.

1/3 cup asparagus, cut into 1 inch pieces
