Farfalle Pasta Salad Mediterranean Style is a great pasta salad with super fresh ingredients like cucumbers, tomatoes, onions, and peppers. Kalamata Olives, marinated artichokes and feta cheese, combine to enhance those Mediterranean flavors. Dressed with a red wine based vinaigrette, instead of mayo, makes for super light and refreshing spin on a classic.

1/2 lbs Farfalle pasta (mini)
1 Cucumber (English, cut into half slices)
2 cups Cherry tomatoes (cut in half or quarter)
2 cups Bell peppers (cut in small squares)
1/2 Red onion (thinly sliced)
1/2 cup Olives (Kalamata)
1/2 cup Artichokes (marinated)
4 oz Feta cheese (crumbled)
1 tbsp Parsley (Italian, chopped)
1 tbsp Oregano (fresh, chopped)
1/2 cup Olive oil (extra virgin)
1/4 cup Red wine vinegar
2 Garlic cloves (chopped)
1 teaspoon Oregano (dried)
1/4 teaspoon Salt
Freshly ground pepper

Steps:

  • Cook pasta according to instructions. Once done, rinse it with cold water, let it sit in coriander for a minute or two to get rid of the extra water;
  • Add pasta and all the vegetables and herbs into the big bowl and mix it well;
  • Add all the dressing ingredients into the mason jar and mix well. Add salt if needed more;
  • Pour the dressing over the salad and mix well;
  • Sprinkle the salad with crumbled feta and serve.

1 lb farfalle pasta or 1 lb spiral pasta
3 spring onions
2 ounces sun-dried tomatoes, cut into strips
1 lb english spinach, stalks trimmed and cut into strips
4 tablespoons toasted pine nuts
1 tablespoon fresh oregano, chopped
1/4 cup olive oil
1/2 teaspoon crushed red pepper flakes
1 garlic clove, crushed
salt and pepper, to taste

Steps:

  • Cook pasta and rinse in cold water. Transfer to a large salad bowl.
  • Trim spring onions and chop finely. Add to pasta with tomatoes, spinach, pine nuts, oregano.
  • To make dressing: combine oil, red pepper, garlic, salt and pepper in a small, screw-top jar and shake until combined. Pour over salad, toss and serve.

3 cups sunchokes (about 1 1/2 pounds total)
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/2 teaspoon fresh cracked black pepper
1/2 box mini farfalle pasta, cooked al dente to equal 4 cups cooked (8 ounces dry)
Roasted Red Bell Pepper Pesto, recipe follows
3/4 cup 1/2-inch diced mozzarella
3/4 cup grape tomatoes, quartered
1/4 cup kalamata olives, diced 1/4-inch
1/4 cup green onions, white and light green parts, diced
1/3 cup arugula leaves, loose pack, stems removed
2 tablespoons grated Parmesan
1 tablespoon kalamata olives, rough chop (about 5)
1 tablespoon balsamic vinegar
1/2 teaspoon fresh cracked black pepper
1/2 teaspoon salt
2 cloves garlic, rough chop
1 roasted red bell pepper, rough chop (about 1/2)
2 tablespoons olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel and dice the sunchokes to 1/2-inch dice. (If you notice that the sunchokes are starting to oxidize and turn in color, cover them with water. When ready to roast them, strain and pat dry prior to tossing in salt and pepper.) Place in a small oven-safe roasting pan with 1 tablespoon olive oil, season with the salt and pepper and roast for 20 to 30 minutes, turning with a spatula after 15 minutes. Set aside to cool.
  • Cook the pasta according to package directions. Drain and toss well with the remaining 1 tablespoon olive oil. Cool to room temperature.
  • Add the pasta and the Roasted Red Bell Pepper Pesto to a large bowl and combine. Stir in the mozzarella, tomatoes, kalamata olives, green onions and the roasted sunchokes and serve.
  • In the bowl of a food processor fitted with the bottom blade, or in a blender, add the arugula, Parmesan, olives, vinegar, pepper, salt, garlic and roasted red bell peppers and process until combined well, 6 to 7 seconds. Slowly add in the olive oil and adjust the salt to taste. Refrigerate until ready to use.

6 ounces farfalle (butterfly- or bow-tie-shaped pasta)
1/2 cup chopped drained oil-packed sun-dried tomatoes (about one 7-1/2-ounce jar)
1 tablespoon oil reserved
1 large garlic clove, chopped
2/3 cup dry white wine
4 cups coarsely chopped arugula (about 4 large bunches)
6 tablespoons grated Parmesan cheese

Steps:

  • Cook pasta in pot of boiling salted water until just tender but still firm to bite. Drain well; reserve 1/4 cup cooking liquid.
  • Meanwhile, heat oil from tomatoes in heavy large skillet over medium-high heat. Add garlic and stir until fragrant, about 30 seconds. Add chopped tomatoes and white wine. Boil until wine is reduced slightly, about 3 minutes. Add arugula; toss until wilted, about 1 minute.
  • Add pasta and 4 tablespoons Parmesan cheese to sauce in skillet. Toss until well blended. Moisten pasta with reserved cooking liquid, if desired. Season pasta to taste with salt and pepper.
  • Transfer pasta to plates. Sprinkle with remaining cheese and serve.

ARUGULA AND TOMATO SALAD

8 campari or other cocktail tomatoes, quartered
1 pint yellow and/or orange cherry tomatoes, halved
1 teaspoon aged balsamic vinegar, plus more for drizzling
Kosher salt and freshly ground black pepper
5 ounces baby arugula (about 8 cups)
1 teaspoon extra-virgin olive oil, plus more for drizzling
Shaved parmesan cheese, for topping

Steps:

  • Toss the tomatoes with the balsamic vinegar, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl. Set aside until juicy, about 5 minutes. Toss the arugula with the olive oil, a pinch of salt and a few grinds of pepper in a large bowl.
  • Spread the arugula on a platter. Spoon the tomatoes and their juices on top, then drizzle with more olive oil and vinegar. Top with parmesan.

Salt and freshly ground black pepper
1 cup half-and-half, cream or milk
1 cup crumbled Gorgonzola or other good blue cheese
1 pound farfalle or other pasta
2 cups arugula trimmed of very thick stems, washed, dried and chopped
1 cup cherry or grape tomatoes, cut in half
Freshly grated Parmesan to taste, optional

Steps:

  • Bring a large pot of water to a boil and salt it. In a small saucepan gently warm the half-and-half and Gorgonzola just until cheese melts a bit and mixture becomes thick; chunky is O.K.
  • When water boils, cook pasta until it is just tender but not mushy. Drain and return to pot over low heat.
  • Stir in Gorgonzola sauce along with arugula, tomatoes and a healthy dose of black pepper. Stir to combine, taste and add salt, if necessary, then serve immediately, with grated Parmesan if you like.
