2 teaspoons butter
1 (12 ounce) package maple flavored sausage
1 pound extra-lean ground beef
1 cup sifted all-purpose flour
4 cups milk
2 teaspoons beef bouillon
6 slices white bread
3 sprigs fresh parsley

Steps:

  • Melt butter in a large skillet over medium-high heat. Add ground beef and maple sausage, and cook until no longer pink. Gradually mix in flour, while stirring continuously, until the mixture is thick and pasty. You may not need all of the flour. Slowly whisk in the milk using a fork so that lumps do not form. Stir in bouillon. Continue cooking and stirring constantly until the mixture reaches your desired consistency. The longer it cooks, the thicker it will get.
  • Toast slices of white bread, and top with the meat gravy. Garnish with a little fresh parsley, and serve.

A new twist on the classic recipe for S.O.S. (Also known as Shit on a Shingle)

1 small loaf french bread, cut in 1/2-inch slices.
1/4 cup extra virgin olive oil
garlic powder
onion powder
1/2 pound ground beef
1/2 pound ground pork
1 Tablespoon Worcestershire sauce
4 ounces button or crimini mushrooms, sliced
3.5 ounces shiitake mushrooms, sliced
3 cloves garlic, minced
1 tbsp. all purpose flour
2 tbsp. sour cream
1/2 - 3/4 cup milk
Salt and pepper to taste.

Steps:

  • Preheat oven to 375°
  • Arrange bread slices on a half-sheet pan or large cookie sheet. Brush with olive oil and sprinkle generous amounts of onion and garlic powder over the top. Bake at 375° until top is golden, flip and brush other side of bread with olive oil. Return to oven until the bread is golden brown and crisp. (About 7 minutes total.) Remove from heat and set aside. May be served hot or cold, works perfectly as a crouton for salads or soups, or as base for a crostini.
  • Brown ground beef and ground pork in a large skillet over medium to medium high heat. Once all meat is well browned, transfer to colander to drain. (Do this over a large bowl to catch any drippings. You don't want them in your drains.)
  • Wipe skillet clean with a paper towel, add 2 Tablespoons olive oil and reheat. Add onions and cook until soft and just translucent (About 4 minutes).
  • Add garlic and cook 1 minute, stirring frequently to avoid burning. Add shiitake mushrooms, cook for 1 minute, then add button mushrooms. Continue cooking vegetable mixture until mushrooms are golden.
  • Season vegetable mixture with salt and pepper. (Doing this before cooking the mushrooms would significantly lengthen browning time.) Return ground meat to pan and stir to distribute all ingredients. Sprinkle flour over mixture and stir well to distribute and coat pieces evenly. (about 1 minute or until the flour smells nutty.)
  • Add milk and sour cream, and Worcestershire sauce, stirring constantly until liquids are just below a boil. (Do not let the milk boil. If you do, it will separate and curdle. Definitely not a good thing.) Remove from heat, test for seasoning.
  • Serve approximately one tbsp of mixture per slice of toast.

A Recipe that is always requested from my kids when they come and visit. I spent 20 years of my 28 years in the Air Force in the dining hall. I think I have perfected SOS (Creamed Beef).Very simple and quick. Serve over toast (Shingles) or biscuits or hashed brown potatoes. I know leaving the grease in is not real healthy but it really makes it tasty. If you use anything other then HAMBURGER or drain the grease it will not turn out.

2 cubes chicken bouillon, crumbled
½ teaspoon garlic powder

1/2 cup red wine vinegar
1 tablespoon hot sauce, such as Frank's Red Hot
Salt and freshly ground black pepper
1 teaspoon Worcestershire sauce
1/2 teaspoon Hungarian paprika
1 lime, zested and juiced
1 pound flank steak
2 tablespoons butter
1 tablespoon olive oil
1 1/2 cups frozen pearl onions, thawed (6 ounces)
5 to 6 sprigs fresh thyme
8 ounces baby bella mushrooms, sliced
3 cloves garlic, grated on a rasp
Salt
4 teaspoons Worcestershire sauce
1 tablespoon horseradish
2 tablespoons all-purpose flour
1 1/2 cups beef stock
1 pint heavy cream
8 slices Texas toast, or unsliced bread cut to 1-inch thick slices
1 stick butter, at room temperature
1/4 teaspoon onion powder
5 to 6 sprigs fresh thyme
3 cloves garlic, mashed into a paste with some salt

Steps:

  • For the steak: To a large resealable bag, add the red wine vinegar, hot sauce, 1 teaspoon salt, Worcestershire sauce, paprika, 1/2 teaspoon black pepper and lime zest and juice. Mix together and add the flank steak. Marinate for 1 hour in the refrigerator.
  • Preheat the grill to medium-high.
  • Remove the steak from the marinade and discard the marinade. Pat the steak dry and sprinkle with salt and pepper. Grill over medium-high heat until cooked to medium-rare, 5 to 6 minutes per side. Let rest 10 minutes, loosely covered with aluminum foil, before slicing.
  • For the gravy: In a large pan with straight sides, add the butter, olive oil, onions and thyme. Season with salt and pepper and cook over medium heat until the onions are tender and translucent, about 5 minutes. Add the mushrooms and garlic, season with salt and cook gently until the mushrooms are tender and darkened, about 5 minutes more. Add the Worcestershire sauce and horseradish. Sprinkle the flour over the entire pan. Stir to help the flour to soak into the vegetables and cook a minute more to lose the flour flavor. Raise the heat to medium-high and add the beef stock. Cook until slightly thickened, then slowly stir in the heavy cream. Simmer until the cream is thickened slightly, about 4 minutes more. Taste and season with salt, if needed.
  • For the toast: Preheat the oven to 350 degrees F or a grill to medium heat.
  • Arrange the sliced bread on a baking sheet lined with aluminum foil. In a small pot, add the butter, onion powder, thyme and garlic and season with salt. Heat over medium-low heat until the butter is melted. Brush the garlic butter evenly onto the bread. If baking, place in the oven and bake until the edges are golden, about 10 minutes. If grilling, place the bread slices buttered-side down on the grill and grill until toasted and grill marks appear, 2 to 3 minutes.
  • To serve, layer the toast, then slices of beef and pour over a spoonful of gravy.

3 pounds ground beef
1/2 pound butter
2 cups all-purpose flour
1 tablespoon chicken base paste
1 tablespoon seasoned salt, such as Lawry's
1 teaspoon granulated garlic
1/2 gallon 2-percent milk
2 tablespoons freshly ground black pepper
1 loaf white bread, sliced
Home Fries, recipe follows
Fruit, for serving
3 pounds potatoes, peeled and thinly sliced
3/4 tablespoon cooking oil
3 green bell peppers, seeded and diced
2 white onions, diced

Steps:

  • Brown the ground beef in a skillet over medium heat and set aside.
  • Melt the butter in a saucepan over low heat, being careful not to burn it. Slowly whisk in the flour to make a roux. You are looking for a thick consistency. Add the chicken base, seasoned salt and garlic. Slowly whisk in the milk. Turn the heat to high and bring to a boil. Let it boil for 2 to 3 minutes and then lower the heat to medium, whisking periodically until the mixture gets thick. Whisk in the black pepper and browned beef.
  • Toast the white bread and put the slices on serving plates. Ladle the SOS over the top of the toast. Serve with home fries and a piece of fruit.
  • Put the potatoes in a large skillet with cooking oil and cook for 10 minutes. Add the bell peppers and onions, and continue cooking until golden brown.

After 32 years in the military, I have become quite fond of S.O.S.. I'm the cook in our house, but I get breakfast cooked for me twice a year (my birthday and anniversary). My request is always the same--S.O.S. This is my wife's recipe--I love it.

2 cups milk
4 tablespoons butter
4 tablespoons flour

  • Brown the ground beef or sausage, drain and set aside. Be sure to season the ground beef with a little salt and pepper.
  • Melt butter in sauce pan. Add flour and stir till butter/flour mixture is bubbly.

  • Add meat and stir.
  • Serve over whole wheat toast. Great over biscuits as well.
