1 tube (16-1/2 ounces) refrigerated sugar cookie dough
1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed
2 to 3 kiwifruit, peeled and thinly sliced
1 to 2 firm bananas, sliced
1 can (11 ounces) mandarin oranges, drained
1/2 cup red grape halves
1/4 cup sugar
1/4 cup orange juice
2 tablespoons water
1 tablespoon lemon juice
1-1/2 teaspoons cornstarch
Pinch salt

Steps:

  • Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. Chill. Store in refrigerator.

Almond extract makes all the difference in this updated version of the traditional fruit pizza. Kiwi makes the topping completely fresh and adds beautiful color. Use low-fat cream cheese for a slightly lighter version. Any clear juice (apple, pear, peach, etc.) may be substituted for the pineapple.

butter-flavored cooking spray
2 cups all-purpose flour
½ cup confectioners' sugar
1 cup cold butter
1 (8 ounce) package cream cheese, softened
⅓ cup white sugar
1 teaspoon almond extract
2 cups sliced fresh strawberries
1 cup fresh blueberries
1 kiwi, peeled and sliced
1 cup unsweetened pineapple juice
½ cup white sugar
2 tablespoons cornstarch
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 12-inch round pizza pan with butter-flavored cooking spray.
  • Combine flour and confectioners' sugar in a bowl. Cut in butter with a knife or pastry blender until the mixture resembles coarse crumbs. Press into prepared pizza pan to make a crust.
  • Bake in preheated oven until very lightly browned, 12 to 15 minutes. Cool on a wire rack.
  • Beat cream cheese, 1/3 cup white sugar, and almond extract until smooth; spread over completely cooled crust. Arrange strawberries, blueberries, and kiwi decoratively over cream cheese mixture.
  • Mix pineapple juice, 1/2 cup white sugar, cornstarch, and lemon juice in a saucepan until smooth; bring to a boil. Cook and stir until thickened, about 2 minutes. Cool slightly and drizzle over fruit. Refrigerate until chilled.

1 (18 ounce) package refrigerated sugar cookie dough
1 (8 ounce) package cream cheese, softened
⅓ cup white sugar
½ teaspoon vanilla extract
1 pint fresh strawberries, sliced
1 pint fresh blueberries
2 bananas, sliced
2 kiwis, peeled and sliced
½ cup orange marmalade
2 tablespoons water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 12-inch pizza pan.
  • Press cookie dough into pizza pan; prick holes in dough with a fork.
  • Bake in preheated oven until golden, 10 to 15 minutes. Allow cookie crust to cool.
  • Beat cream cheese, sugar, and vanilla extract until smooth; spread over cooled crust. Arrange strawberries, blueberries, bananas, and kiwi decoratively over cream cheese mixture.
  • Mix orange marmalade and water in a small bowl; spoon mixture over fruit. Chill for 1 hour before serving.
