6 boneless pork loin chops (4 ounces each)
2 medium acorn squash, halved lengthwise, seeded and sliced
1/2 cup packed brown sugar
2 tablespoons butter, melted
1 tablespoon orange juice
3/4 teaspoon salt
3/4 teaspoon browning sauce, optional
1/2 teaspoon grated orange zest

Steps:

  • Place pork chops in a 5-qt. slow cooker; add squash. In a small bowl, mix remaining ingredients; pour over squash. Cook, covered, on low 4-6 hours or until pork is tender.

4 pork chops, 3/4-inch thick bone-in
2 tablespoons canola oil
1 medium acorn squash
1 tablespoon butter, melted
2 tablespoons orange juice
1 teaspoon Worcestershire sauce
1 teaspoon orange zest
1/8 teaspoon cinnamon
1 pinch nutmeg
1/2 cup brown sugar
2 tablespoons chopped green onions
1 1/2 cups frozen green peas
rice

Steps:

  • Cut squash in half, remove seeds and strings. Slice each half into 8 slices. Set aside.
  • Heat oil in pan and quickly brown pork chops on both sides. Remove from pan and set aside.
  • Mix together remaining ingredients, except peas.
  • In same pan pork chops were browned, place half of sliced squash. Place chops on top. Add remaining squash. Pour liquid over all and bring to boil. Turn heat to low and cover. Cook until pork and squash are tender, approximately 30 minutes. Remove from pan and keep warm.
  • Place frozen peas in pan, cover and cook for about 5 minutes or until tender.
  • Plate rice of choice on 4 plates. Top with pork chops and squash. Divide peas among plates.
  • Pour cooking liquid over all and serve.

1/3 cup flour
1/2 teaspoon coarse salt
1/4 teaspoon allspice
1/4 teaspoon ground ginger
1/8 teaspoon pepper
2 tablespoons butter, divided
6 pork loin chops (1/2 inch thick)
1 medium acorn squash, cut into 6 rounds
2 tablespoons light brown sugar
1 1/2 cups pear nectar
2 teaspoons Worcestershire sauce

Steps:

  • Heat oven to 350 degrees. Combine flour, salt, allspice, ginger and pepper; reserve 2 tablespoons. Melt 1 tablespoon butter in a large nonstick skillet on medium. Coat each chop in flour mixture, shaking off excess flour; cook 2 minutes on each side or until browned. Arrange chops in a 9-by-13-inch baking dish. Top each chop with 1 slice squash. To the skillet, add remaining butter. Stir in reserved 2 tablespoons flour mixture and the brown sugar. Mix nectar with Worcestershire sauce. Gradually add nectar mixture to skillet. Cook and stir until thickened. Pour over chops; cover and bake 1 hour or until chops are tender. Per serving: 345 calories, 30 grams protein, 14 grams fat (35 percent calories from fat), 5.9 grams saturated fat, 26 grams carbohydrate, 90 milligrams cholesterol, 236 milligrams sodium, 2 grams fiber.

1/2 teaspoon seasoned salt
1/8 teaspoon pepper
5 saltine crackers, crushed
1 egg white or 2 tablespoons fat-free egg product
1 tablespoon water
3 boneless pork loin chops, 1/2 inch thick (3/4 lb)

Steps:

  • Heat oven to 350°F. In small bowl, mix brown sugar, margarine and cinnamon until crumbly; set aside. Cut squash into 1/2-inch rings. Cut rings in half; remove seeds. Cut apple into chunks.
  • In shallow dish, stir together Bisquick® mix, seasoned salt, pepper and cracker crumbs. In another shallow dish, mix egg white and water. Dip pork into egg mixture, then coat with Bisquick mixture.
  • Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook pork in skillet 6 to 8 minutes, turning once, until coating is brown.
  • Place pork in ungreased 8-inch square or 11x7-inch (2-quart) glass baking dish. Arrange squash and apples around pork. Sprinkle with brown sugar mixture. Bake uncovered 40 to 45 minutes or until squash is tender and until pork is no longer pink in center.

1 acorn squash (2 pounds), quartered, seeded, and sliced 1/2 inch thick, skin on
8 garlic cloves, peeled
1/2 teaspoon dried rosemary
Coarse salt and ground pepper
2 pork tenderloins (about 1 pound each)
4 teaspoons olive oil
2 tablespoons hoisin sauce

Steps:

  • Preheat oven to 375 degrees. Scatter squash and garlic in a large roasting pan. Mix rosemary, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper; rub into pork. Place in pan with vegetables; drizzle with oil.
  • Roast 25 minutes. Brush pork with hoisin. Continue roasting, about 15 minutes, until pork reaches an internal temperature of 140 degrees.

1/4 cup KRAFT Lite CATALINA Dressing
1/4 cup water
1 Tbsp. finely chopped fresh ginger
2 small bone-in pork chops (1/2 lb.), 1/2 inch thick

Steps:

  • Place squash on microwaveable plate. Microwave on HIGH 10 min. or until tender, rotating plate after 5 min. Cut squash into thin wedges.
  • Mix dressing, water and ginger. Cook chops in large skillet sprayed with cooking spray on medium-high heat 3 min. on each side. Move chops to one side of skillet. Reduce heat to medium-low; add dressing mixture to skillet. Turn chops to evenly coat both sides of each with dressing mixture; cover. Simmer 2 min.; turn chops.
  • Add squash to skillet; turn to evenly coat both sides of each wedge with dressing mixture. Simmer, covered, 4 min. or until dressing mixture is thickened and chops are done (145°F). Let stand 3 min.
  • Serve chops and squash topped with dressing mixture.

1 tablespoon honey
1/2 teaspoon finely grated peeled fresh ginger
1/2 teaspoon mustard powder
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
3 acorn squash, seeded, each cut into 8 wedges
1 red bell pepper, ribs and seeds removed, cut into 3-inch strips
4 bone-in pork chops (1 inch thick; about 2 1/2 pounds total)
2 bunches scallions, trimmed and cut into thirds

Steps:

  • Preheat oven to 450 degrees, with racks in middle and lower thirds. In a small bowl, combine honey, ginger, mustard, and 1 teaspoon oil. Season glaze with salt and pepper. On a large rimmed baking sheet, toss squash with 1 tablespoon oil and season with salt and pepper. Transfer 8 wedges to another rimmed baking sheet. Roast both sheets of squash 15 minutes.
  • Remove sheets from oven and flip squash. To tray with 8 wedges, add scallions and bell pepper, drizzle with 1 teaspoon oil, season with salt and pepper, and brush with glaze.
  • Return sheets to oven and roast until squash is tender when pierced with a knife, 10 to 15 minutes. Let sheet with 16 wedges cool completely, then refrigerate for Chicken Cutlets with Mustard Greens and Roasted Squash.
  • Meanwhile, in a large skillet, heat remaining teaspoon oil over medium-high. Season pork with salt and pepper and cook until golden brown on one side, about 4 minutes. Flip, brush with remaining glaze, and cook until pork is cooked through, 5 minutes. Serve pork alongside roasted vegetables.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Turn acorn squash upside down onto a cookie sheet. Bake in a 350 degrees F (175 degrees C) oven until it begins to soften, approximately 30 to 45 minutes.
  • Remove squash from the oven and turn onto a plate so that the flesh is facing upwards. Place butter and brown sugar into the squash, and place remaining squash over the other piece. Place squash in a baking dish (so the squash won't slide around too much) while baking.
