Leftover chicken or rotisserie chicken from the supermarket helps on the ease of preparation of this fabulous comfort style dinner. Fresh vegetables gives this a very special added flavor and is worth the effort. Everyone loves Mom's Chicken Pot Pie! Serve with a green salad.

¼ cup butter
1 small onion, chopped
3 celery ribs, chopped
3 carrots, chopped
⅔ cup frozen peas
3 tablespoons chopped fresh parsley
¼ teaspoon dried thyme
¼ cup all-purpose flour
2 cups lower-sodium chicken broth
⅔ cup half-and-half cream
salt and ground black pepper to taste
3 cups cooked chicken, cut into bite-size pieces
1 (16.3 ounce) can refrigerated flaky-style biscuits (such as Pillsbury Grands®)
1 egg yolk, beaten
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium-low heat, and cook the onion, celery, and carrots until the celery and carrots are tender, about 15 minutes, stirring occasionally. Stir in peas, parsley, thyme and flour, and cook, stirring constantly, until the flour coats the vegetables and begins to fry, about 5 minutes. Whisk in chicken broth and half-and-half, and cook until the sauce is thick and bubbling. Season to taste with salt and black pepper, and mix in the chicken meat.
  • Transfer the chicken, vegetables, and sauce into a 2-quart baking dish. Arrange biscuits on top of the filling. In a small bowl, beat egg yolk with water; brush egg yolk on the biscuits.
  • Bake in the preheated oven until the biscuits are golden brown and the pie filling is bubbling, 20 to 25 minutes. Let rest 10 minutes before serving.

We love having chicken spiedini at a local italian restaurant. I found this recipe in our local newspaper and gave it a try. We thought it was great and I hope you will too. It's a good choice for a summer cook-out. If I am short on time, I prepare the chicken as directed, but skip the rolling/skewering and simply grill it. Just as tasty and very easy.

4 boneless skinless chicken breast halves
2/3 cup Italian seasoned breadcrumbs
1/3 cup grated parmesan cheese
1 tablespoon chopped fresh parsley
2 teaspoons grated lemons, rind of
2 garlic cloves, minced
2 tablespoons olive oil (see note)
2 tablespoons butter, melted (see note)

Steps:

  • Place chicken breasts between sheets of plastic wrap; pound chicken gently with mallet until very thin (about 1/8 inch thick).
  • On waxed paper, combine bread crumbs, cheese, parsley, lemon peel and garlic.
  • In shallow dish, combine olive oil and melted butter.
  • Dip chicken into butter mixture; coat with crumb mixture.
  • Tightly roll up and secure with wooden toothpicks, if needed.
  • Cut into 1-inch-thick pieces; thread onto metal skewer.
  • Remove wooden picks.
  • Repeat with remaining chicken.
  • To grill; Place skewers on lightly greased grid over medium hot coals.
  • Cover and grill for 5 minutes per side or until chicken is cooked through.
  • Note: To reduce fat and calories, substitute 1/4 cup buttermilk for the butter/oil mixture.

2 (6 ounce) jars marinated artichoke hearts (drained and quartered)
1/2 cup basil
1/2 cup parsley

Steps:

  • Boil pasta according to directions.

6 -8 chicken legs-thighs, with skin attached
1 tablespoon sesame oil
1 large onion, sliced from top to root
5 -6 carrots, peeled and sliced diagonally
2 garlic cloves, crushed
1/4 cup Yoshida gourmet sauce
2 cups Japanese-style rice, cooked

Steps:

  • Wash and dry the chicken parts.
  • Prepare the onions, carrots and garlic.
  • Heat a large skillet and add the oil.
  • When oil is very hot, add the chicken and brown on all sides.
  • Then add the onion, garlic, and carrots.
  • Stir about, getting all the vegetables a little browned and the onion a little softened.
  • Drain all the liquid.
  • Add the Yoshida sauce and stir.
  • Cover and cook for 30 mins, stirring the vegetables and turning the chicken pieces over every 10 mins or so.
  • It should be almost sticking and very dark.
  • If it's watery it needs more time to cook without a lid.
  • You are making a glaze.

2 medium Fuji apples - peeled, cored, and chopped
½ cup dried cranberries
½ cup glazed pecans
¼ cup shredded Parmesan cheese
3 medium green onions, thinly sliced
½ cup balsamic vinaigrette salad dressing, or to taste

Steps:

  • Season chicken with salt and pepper.
  • Heat a skillet over medium heat. Add olive oil when the pan is hot. Add chicken and cook until no longer pink in the centers and juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Allow chicken to rest for 10 minutes, then slice into strips.

I devised this to resolve my southern husband's taste for fried chicken with a HEALTHY, non-deep-fried version, with no wheat, milk, eggs, or processed or artificial ingredients. It's a delicious EASY recipe that works for chicken legs, thighs, or breasts. Make PLENTY in the summer to eat as is, or use leftovers for chicken SALAD!

10 chicken legs (or 3 chicken breasts, bone-in works just fine and is more economical than boneless)
1 tablespoon dried rosemary
1/2 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon potato starch
2 tablespoons oats
1 pinch powdered ginger (optional)
canola oil cooking spray
1/2 cup water

Steps:

  • For moistest results soak chicken pieces in a bowl of salted water for 15 minutes before cooking.
  • Line baking tray with foil and spray lightly with oil.
  • Grind dry ingredients in coffee grinder or with pestle and mortar.
  • Pour into a bowl and add water little by little while stirring until a smooth runny paste is achieved. You may need more or less water.
  • Remove chicken from soaking water, and pat dry if necessary.
  • Dip into the rosemary coating until covered, and place on baking tray. This will seal in the juices.
  • Bake at 365º for one hour.
  • Once it's in, put your feet up for at least ten minutes, drink a glass of cold water, breathe deeply - and relax. Your chicken is safe.
  • Suggestions: Serve with brown rice and greens, or if you have cooked breasts or thighs, then serve the chicken chopped into a salad with cucumbers, roma tomatoes and red onion, topped with Chimichurri sauce - a purée of cilantro, lemon juice, olive oil, garlic and salt.

6 skinless, boneless chicken breasts
32 oz low-salt, fat-free chicken broth
3 stalk(s) celery, minced
1 small white onion, minced
1 c seedless red grapes, quartered
1/2 granny smith apple, diced
3/4 c mayonnaise
3/4 c Kraft 1-step coleslaw maker
1/2 tsp curry powder
salt and pepper, to taste

Steps:

  • 1. Place chicken breasts in a large pot with chicken broth. Bring to a boil, then reduce heat and simmer until chicken breasts are thoroughly cooked.
  • 2. Cool slightly and then either shred or cut into small chunks.
  • 3. Meanwhile, mince the celery and onion. Quarter the grapes. Dice the apples.
  • 4. Mix the mayonnaise and coleslaw mix together. Fold in the chicken and all the prepared ingredients along with the curry powder. Mix well. If desired, add salt and pepper to taste. (I do not use any salt in this recipe--only freshly ground pepper; you can also increase the curry powder to 3/4 teaspoon if you wish a stronger flavor).
  • 5. Refrigerate at least 2 hours before serving to allow flavors to blend. Keep refrigerated.

4 ounces bacon, cooked crisp, drained and crumbled

6 ounces Roquefort cheese (or Feta cheese if you cannot find Roquefort)
1 teaspoon creole seasoning (Emeril's Bayou Blast recommended)
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

2 -3 boneless skinless chicken breasts
2 garlic cloves, minced
1 cup mushroom, sliced
1 medium onion, minced
1 tablespoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup sour cream
1/2 cup thickened cream
1/2 cup chicken broth
1/4 cup cooked bacon, crumbled (optional)
1/2 teaspoon dried Italian seasoning

Steps:

  • In a large non-stick frying pan, heat oil and cook onions until almost soft. Add garlic and mushrooms, cook til mushrooms soften. Set aside and keep warm.
  • Chop chicken into bite sized pieces Brown chicken in hot pan, adding more oil if required.
  • Add onion, garlic and mushroom mixture back to pan. Stir in chicken broth and Italian herbs.
  • Cover and cook for 20 minutes, simmering over low heat.

1 1/4 cups mayonnaise
2 tablespoons prepared Italian salad dressing (Ken's brand preferred)
2 teaspoons paprika
1/2 teaspoon ginger
1 -1 1/2 cup dried cranberries
2 cups chopped celery
2 -4 scallions, stalks finely chopped (amount is depending on your taste)
1/2 red onion, diced
1 cup chopped walnuts, toasted
1/2-1 small lime juice, freshly squeezed
1 lime peel, grated (optional)
3/4 teaspoon all purpose seasoning (or to taste, Adobo seasoning, Goya brand)
fresh ground black pepper, to taste

Steps:

  • Remove meat from rotisserie chicken. Chop into bite size pieces. Add to large bowl; set aside.
  • In a medium size bowl, add the next 9 ingredients; mix to blend. Add lime juice, adobo seasoning and black pepper to taste. Add to chicken and combine to distribute all ingredients evenly. Taste for seasoning and correct, if necessary. Chill for 1 hour before serving.
  • NOTE: Concerning the seasonings, I don't always add exactly the amounts given, it's all a matter of taste.
  • Tip: I sometimes add a bit of sugar, if I went over too much on the lime juice or if I want a hint of sweetness. I add about 1/2 - 1 tsp sugar.
  • Another Tip: If you go over too much on the salt, add a few more drops of lime juice. Both lime and lemon juice, make the saltiness disapear. Of course test it bit by bit when adding lemon or lime juice, because you don't want to over power with the juice flavor. This tip is one of the secrets of the restaurant trade.

My cousin Maxine is a marvelous cook. I have never had a meal at her house I didn't love. Maxine taught me how to make Southern Fried Chicken, as my Grandmother and Mother did not make Fried Chicken as we do here in America. It's still one of my favorite dishes. My son loves Chicken Salad and this is his favorite.

4 organic chicken breasts, cooked, skinned, deboned, diced
3 organic raw celery stalks, cleaned and chopped
seedless red grapes, cut in half (as many as you like)
1 pkg almonds, slivered and toasted lightly
1/2 c mayonnaise, hellman's or best food
1/4 c milk, cream, or half/half
pepper and salt to taste

Steps:

  • 1. Take the chicken breasts you have cooked, deboned, skinned, diced, and place them in a chilled bowl. Add the celery and grapes halves.
  • 2. Mix the mayo with a little milk to thin. Add to the chicken, celery and grape. Mix. Add your pepper and salt. Mix. Refrigerate.
  • 3. Just before serving add the toasted slivered almonds and toss to incorporate. Serve.

I've used it since 1976, adapted from a recipe that apparently came from Cornell Cooperative Extension. I changed it slightly, but always receive rave reviews when we serve it to company.

1/2 cup vegetable oil
1 cup cider vinegar

1 avocado
1 cup cherry tomatoes
4 green onions
1 lb chicken
1/2 tsp each salt & pepper

Steps:

  • 1- In small bowl, whisk oil, vinegar, sundried tomatoes, basil, sugar & garlic. Wash Mesclun & place in bowl with chopped avocado. Slice tomatoes in 1/2 & slice green onions. Cut chicken into bite size, sprinkle with salt and pepper. 2- Stir dressing. Pour 2 tbs into frying pan. Add chicken & cook 5 minutes or until no longer pink. 3- Pour in remaining dressing & add tomatoes and green onions. Toss with chicken. Cook 1 minute. Add chicken mixture to Mesclun and avocado. Delicious!

2/3 cup Italian seasoned breadcrumbs
1/3 cup grated parmesan cheese
1 tablespoon chopped fresh parsley
2 teaspoons grated lemons, rind of
2 garlic cloves, minced
2 tablespoons olive oil (see note)
2 tablespoons butter, melted (see note)

Steps:

  • Place chicken breasts between sheets of plastic wrap; pound chicken gently with mallet until very thin (about 1/8 inch thick).
  • On waxed paper, combine bread crumbs, cheese, parsley, lemon peel and garlic.
  • In shallow dish, combine olive oil and melted butter.
  • Dip chicken into butter mixture; coat with crumb mixture.
  • Tightly roll up and secure with wooden toothpicks, if needed.
  • Cut into 1-inch-thick pieces; thread onto metal skewer.
  • Remove wooden picks.
  • Repeat with remaining chicken.
  • To grill; Place skewers on lightly greased grid over medium hot coals.
  • Cover and grill for 5 minutes per side or until chicken is cooked through.
  • Note: To reduce fat and calories, substitute 1/4 cup buttermilk for the butter/oil mixture.

This recipe came out of our church cookbook. The ingredients sound crazy and the directions seem too easy, but just follow them and you will LOVE it! I like to serve it over penne noodles or rice.

4 boneless chicken breast
1/4 c melted butter
1 large package, shredded swiss cheese
1 can(s) cream of mushroom soup
1/4 c white grape juice
1 pkg good seasons (herb and garlic)

Steps:

  • 1. Place chicken breasts in baking dish.
  • 2. Top with cheese.
  • 3. Mix soup and juice together and pour on top of cheese.
  • 4. Mix dressing mix with butter and pour over soup. Bake at 350 for 1 hour.
  • 5. I substitued Gerber's pear juice once because it comes in a tiny bottle and I didn't want to buy a big bottle of white grape juice and it turned out great. I also discovered that Lipton Herb and Garlic soup mix is MUCH cheaper than the dressing mix and so I added 1/2 package of soup mix instead of a package of dressing mix.

The coating mix listing in this recipe is enough for 12 drumsticks, and the marinade ingredients in this recipe is for two bags of drumsticks (12 in each bag). For the next batch of drumsticks you will have to prepare another recipe of coating mix. When you are ready to make a bag of drumsticks, place them in the fridge overnight to thaw. If desired, increase the drumsticks to 48, double the amount of oil and soy sauce, an use 1 more onion, keep the garlic still at 1/4 cup, and make 4 bags of these to freeze, just remember to marinate overnight before placing in the freezer.... trust me kids of all ages love these, they are delicious!

Number Of Ingredients 10

24 chicken drumsticks, divided
2 small onions, chopped
1/4 cup chopped fresh garlic
3/4 cup vegetable oil
1/4 cup soy sauce
1/2 teaspoon cayenne
3 cups fresh breadcrumbs
3 tablespoons mustard
1/4 cup dry white wine (can use chicken broth in place of wine)
salt and black pepper

Steps:

  • To prepare the drumsticks, divide 12 drumsticks between two large resealable bags.
  • In a bowl whisk together onions, oil, garlic, soy sauce and about 1/2 teaspoon cayenne pepper.
  • Divide the onion mixture between the two bags, then add in 12 drumsticks in each bag.
  • Seal the bags, then turn to coat the drumsticks in the marinade.
  • Place in the refrigerator overnight, then the following day place in the freezer (or you can cook them!).
  • When ready to cook 12 drumsticks, set oven to 375 degrees.
  • Prepare a foil-lined baking sheet.
  • Remove the thawed drumsticks from the marinade and scrape off any onion and garlic.
  • Place the drumsticks in a large bowl.
  • In another bowl whisk together mustard and wine; drizzle over the drumsticks; toss well to coat.
  • Sprinkle the drumsticks with salt and pepper.
  • Coat each drumstick in the fresh breadcrumbs (coating lightly but evenly).
  • Place on prepared baking sheet.
  • Bake for 35 minutes.
  • Increase the oven heat to 400 degrees and bake for another 15 minutes longer.

These lemon marinated, flour/egg coated and deep-fried drumsticks are allowed to 'bloom' in the oil like roses in springtime! These drumsticks look very nice served with this special chile garlic sauce, and they are so tasty!

20 chicken drumsticks
2 tablespoons fresh lemon juice
salt and pepper to taste
1 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon garlic powder
½ teaspoon chili powder
2 egg whites, slightly beaten
1 tablespoon vegetable oil
2 cloves garlic, chopped
4 tablespoons tomato sauce
4 tablespoons chile sauce
salt and pepper to taste
1 teaspoon white sugar
1 tablespoon Worcestershire sauce
1 cup water
1 tablespoon cornstarch
1 tablespoon chopped fresh parsley
2 quarts vegetable oil for deep-frying
5 sprigs fresh parsley, for garnish

Steps:

  • To Marinate: Combine lemon juice and salt and pepper to taste in a nonporous glass dish or bowl. Mix together and add drumsticks; turn to coat. Cover dish and refrigerate for about 1 hour.
  • Place flour in a shallow dish or bowl and season with 1 teaspoon salt, 1 teaspoon pepper, garlic powder and chile powder. Place beaten egg whites in a separate glass dish or bowl; dredge marinated drumsticks in egg whites, then in seasoned flour. Refrigerate for another 30 minutes.
  • To Make Sauce: Heat 1 tablespoon oil in a large skillet over medium heat. Saute garlic until fragrant, then stir in tomato sauce and chile sauce. Season with salt and pepper to taste, sugar and Worcestershire sauce and bring to a boil. Add water, then stir in cornstarch and cook until thickened. Sprinkle in parsley and remove sauce from heat; set aside.
  • Heat 2 quarts oil in a large deep fryer and fry drumsticks one by one; hold drumstick by stick/handle at first and immerse other half in oil to let the chicken 'bloom', then fry the whole thing until cooked through and golden brown. Transfer chicken pieces to paper towelling with a slotted spoon as they are fried, until complete. Finish draining, garnish with parsley sprigs, and serve with reserved sauce.
