LOW FAT CARROT BRAN MUFFINS

Wonderful carrot bran muffins that are low in fat, yet, I find, taste almost buttery. They have a wonderful moist yet fluffy texture, and not too sweet delicious cinnamon flavour and aroma. The batter is quite thin, which creates smooth domed muffin tops. I have always made these with the soured milk instead of buttermilk. And yes, there really is 1 tbsp cinnamon in this recipe, it is not a typo! NOTE: Do not use muffin liners with this recipe - they are too moist and delicate for them so the muffins will stick to the liner.

Number Of Ingredients 14

1 1/2 cups whole wheat flour
1 1/2 cups all-bran cereal (such as all bran, bran flakes)
2/3 cup raisins
1/3 cup brown sugar (I often add only 1/4 cup for breakfast muffins)
1 tablespoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 egg, lightly beaten
1 3/4 cups skim milk, with
2 teaspoons lemon juice (or 1 3/4 cup buttermilk)
2 tablespoons margarine, melted
2 tablespoons unsweetened applesauce (or pumpkin, or just margarine)
1 cup carrot, grated
1 orange, rind of, grated (optional, but recommended)

Steps:

  • Preheat oven to 400°F.
  • In a medium bowl, combine flour, cereal, raisins (you may add the raisins in with the wet ingredients if you prefer), sugar, cinnamon, baking powder, and baking soda.
  • In a large bowl, combine egg, milk, margarine, applesauce, carrot and orange rind.
  • Add dry ingredients to wet ingredients and mix until just combined.
  • Spoon into sprayed or lightly greased muffin tin (for 12 muffins) - Do NOT use paper muffin liners.
  • Bake for 20 minutes, or until tops are firm to the touch, or when a toothpick inserted comes out clean.

1 cup of wheat bran
1 cup soured milk or buttermilk
1 1/2 cups of flour
1/2 cup of brown sugar
1 1/2 teaspoons of cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
2 eggs
1/2 teaspoon salt
1/2 cup of oil
1 tablespoon of molasses
1 1/2 cups of grated carrots
1 cup of raisins

Steps:

  • Preheat your oven to 350 °F. Line a 12 well muffin tray with paper liners or spray the wells with cooking spray. Set aside.
  • Mix your bran with the milk in a bowl and let it sit while you prepare the remaining ingredients.
  • In a large mixing bowl, combine all your dry ingredients and whisk them together.
  • Add the wet ingredients to the bran mixture and combine well.
  • Add the wet ingredients into the dry and combine until smooth and well mixed.
  • Bake at 350 degrees until the tops spring back when touched, about 15-20 minutes depending on your oven.

1-1/2 cups all-purpose flour
1 cup wheat bran
1/2 cup packed brown sugar
1-1/2 teaspoons ground cinnamon
1-1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
3/4 cup buttermilk
1/2 cup canola oil
2 tablespoons molasses
1-1/2 cups grated carrots
1 cup raisins

Steps:

  • In a large bowl, combine the first seven ingredients. Combine the eggs, buttermilk, oil and molasses; stir into dry ingredients just until moistened. Fold in carrots and raisins. , Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

3/4 cup nonfat milk
6 tablespoons plain fat-free yogurt (or can use fat-free blueberry or vanilla flavored yogurt)
1/2 cup unsweetened applesauce
1 large egg
3/4 cup brown sugar (if you prefer a sweeter muffin use 3/4 cup if not you may reduce slightly)
1 1/2 teaspoons vanilla
1 cup whole wheat flour
1 teaspoon baking powder (not scant, use a good teaspoon of baking powder)
1 teaspoon baking soda
1/2 teaspoon salt
1/2-1 teaspoon cinnamon (optional I like to add it in)

Steps:

  • Preheat oven to 350 degrees F.
  • Set oven rack to second-lowest position.
  • Generously coat 10 regular-size muffin tins with cooking spray or line with paper liners.
  • In a small bowl mix the wheat bran with milk and yogurt; allow to stand for 12-15 minutes, stirring a few times.
  • In a large bowl whisk the applesauce with egg, brown sugar and vanilla; mix in the bran mixture until thoroughly combined.
  • In a small bowl combine the flour with baking soda, baking powder, salt and cinnamon (then if using mix in the blueberries) add the bran mixture to the dry mixture; using a small spatula fold gently just until combined (fold gently).
  • Scoop into muffin tins filling almost full.
  • Bake for 20-22 minutes or until muffins test done (these won't take long to bake so watch closely).

This recipe came from my Canadian Living Cookbook.I have made these muffins for years and my family loves them and they're good for you. You can store the batter in the fridge for up to two weeks and make fresh muffins anytime you want. Use any bran cereal that is labelled all-bran or 100% bran; do not use bran flakes.

2 cups natural wheat bran
2 cups all-bran cereal
2 cups boiling water
4 cups buttermilk
1 cup shortening
2 cups granulated sugar
1 cup packed brown sugar
4 eggs
5 cups all-purpose flour
4 teaspoons baking soda
1 1/2 teaspoons salt
2 cups raisins

Steps:

  • In very large bowl, combine bran and bran cereal.
  • Add boiling water, stir to moisten and let stand 10 minutes. Add buttermilk.
  • In another very large bowl, cream shortening with sugars.
  • Beat in eggs one at a time.
  • Add bran mixture to creamed mixture, stirring until blended.
  • Mix together flour, soda and salt; add raisins.
  • Add to bran mixture, stirring until evenly mixed.
  • Cover tightly with foil and refrigerate at least 24 hours.
  • To make muffins, spoon batter into muffin tins lined with paper baking cups, filling about 3/4 full.
  • Bake in 375 oven for 20-25 minutes.
  • Make as many muffins as you wish, then return remaining batter to refrigerator.
  • Batter will thicken considerably, but don't stir it before spooning it out.
  • Recipe makes about 5 dozen muffins; it may be halved successfully.
  • Baked muffins freeze well.
