Nothing is more comforting than a hot, melty grilled cheese sandwich. Serve this lunch time favorite with a bowl of tomato soup for dipping!

4 slices white bread (or sour dough)
2 tablespoons mayonnaise
4 ounces cheddar cheese (or American cheese)
2 tablespoons shredded cheddar (optional)

Steps:

  • Preheat a small skillet over low heat.
  • Spread mayonnaise over one side of each piece of bread and place mayonnaise side down in the skillet.
  • Top with cheddar cheese slices, black pepper to taste and remaining slice of bread, mayonnaise side out.
  • Grill until golden, about 4-5 minutes. Flip and grill the other side until golden.
  • Optional: Just before serving, add the shredded cheddar directly to the outside of the sandwich and grill an additional minute or so until it gets crispy.

12 slices thick-cut bacon, such as Nodine's applewood smoked
1 cup good mayonnaise
1/4 cup Dijon mustard
1/4 cup freshly grated Parmesan cheese
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 white pullman loaf or sourdough bread, sliced 1/2 inch thick (12 slices)
6 tablespoons salted butter, at room temperature
6 ounces aged Gruyere or Comte cheese
6 ounces extra-sharp Cheddar, such as Cabot or Shelburne Farms

Steps:

  • Preheat the oven to 400 degrees. Arrange the bacon on a baking rack set over a sheet pan in a single layer and roast for 20 to 30 minutes, until nicely browned. Drain on a plate lined with paper towels and cut in 1-inch pieces.
  • Meanwhile, combine the mayonnaise, mustard, Parmesan, salt, and pepper in a small bowl. Lay 12 slices of bread on a board and spread each one lightly with butter. Flip the slices and spread each one generously with the mayonnaise mixture. Don't neglect the corners!
  • Grate the cheeses in a food processor fitted with the largest grating disk and combine. Distribute the bacon evenly on half the slices of bread. Pile 1/3 cup grated cheese evenly on top of the bacon and top with the remaining bread slices, sauce side down.
  • Meanwhile, heat an electric panini press. When the press is hot, cook the sandwiches for 3 to 5 minutes in batches until the bread is toasted and the cheese is melted. Allow to cool for 2 minutes. Cut in half and serve warm.

Friends taught us to do this when we were kids. I just don't think a 'plain' grilled cheese sandwich is near as good.

2 slices bread
2 slices your favorite cheese
butter
jelly

Steps:

  • Butter one slice of bread and place in frying pan or on griddle. Place cheese on bread.
  • Butter the second slice of bread and place butter side up on top of cheese.
  • Fry on medium heat until golden brown, turn over and fry other side of sandwich. Remove from heat and spread jelly on the TOP of the sandwich and serve.
  • I prefer mozzarella or Colby jack cheese with strawberry jelly or American cheese with grape jelly.

Chakalaka and Cheddar Braaibroodjies (Grilled Cheese Sandwiches) image

The liberal spoonful of Chakalaka (spicy vegetable relish) makes this grilled cheese sandwich recipe extra special.

2 tablespoons mayonnaise
2 slices good-quality sandwich bread
¼ cup grated sharp white Cheddar cheese
¼ cup Chakalaka or any relish or chutney of your choice
2 thin slices onion (any type)

Steps:

  • Set a cast-iron pan or other heavy skillet over medium-high heat. Spread 1 tablespoon of the mayonnaise on one side of each slice of bread. Place one slice of bread mayonnaise-side down in the skillet and top it with half the cheese, then top with the chakalaka and onion. Sprinkle the remaining cheese on top of the onion, then place the second piece of bread, mayonnaise-side up, on top.
  • Cover the pan and cook until the bottom of the sandwich is browned, about 2 minutes. Give the sandwich a good press with a spatula and then carefully flip it over, cover, and cook until the second side is browned and the cheese has melted, about 2 minutes. Serve immediately.
