This will bring the tropic to you! Serve it on bread, in a cake glaze a chicken or over cream cheese as a spread. Love to see what you do with it! Will make about 8-10 (8 oz) half pints for gift giving or about 160 servings, 1 Tbsp. each for your own consumption. ;)

Number Of Ingredients 8

3 cups finely chopped pitted peeled mangoes (about 4 medium be sure they are NOT bruised)
2 cups crushed ripe bananas (not brown)
2 tablespoons lemon juice
1/2 vanilla bean, split in half Lengthwise
1 (1 3/4 ounce) package fruit pectin
1/2 teaspoon butter
5 1/2 cups sugar
1 tablespoon banana liqueur (optional)

Steps:

  • Crush bananas with lemon juice to prevent browning. Set aside.
  • Meanwhile prepare boiling water canner. Heat 7-10 (8 oz) half pint glass preserving jars with lids and bands in simmering water until ready for use. Do not boil. Set bands aside.
  • Combine mangoes, bananas and vanilla in a 6- or 8-quart saucepan. Gradually stir in pectin. Add up to 1/2 tsp butter to reduce foaming, if desired. Bring mixture to a full rolling boil that can not be stirred down, over high heat, stirring constantly.
  • Add entire measure of sugar and liqeuer if using, stirring to dissolve. Return mixture to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary.
  • Carefully remove vanilla and ladle hot jam into hot jars leaving 1/4 inch headspace. Wipe rim. Center lid on jar. Apply band until fit is fingertip tight.
  • Process in a boiling water canner for 10 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed. Lable.

2 mangoes, peeled and coarsely chopped
1 very ripe banana, peeled and coarsely chopped
1/4 cup finely diced sweet onion
1 tablespoon tomato paste
1 garlic clove, chopped
1 teaspoon kosher salt
2 tablespoons light brown sugar, packed
1 tablespoon molasses
1/4 cup balsamic vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon ground chipotle chile pepper
1/4 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/4 teaspoon freshly-grated nutmeg
1/4 teaspoon ground cloves
1/2 cup water
1 cup coarse breadcrumbs or 1 cup panko breadcrumbs
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon garlic powder
1/2 teaspoon dill weed
1/2 teaspoon lemon pepper
1/2 teaspoon kosher salt
1/3 cup parmesan cheese
1 teaspoon lemon juice
8 ounces raw lobster meat, finely chopped
1/4 cup green bell pepper, finely chopped
1/2 small sweet onion, finely chopped
3 eggs, well beaten
canola oil (for frying)

Steps:

  • For the sauce:.
  • Place the mangoes, bananas, sweet onions, tomato paste, garlic, salt, brown sugar, molasses, balsamic vinegar, and Worcestershire sauce in a food processor and pulse until pureed.
  • Transfer puree to a saucepan.
  • Add ground chipotle pepper, ginger, cinnamon, allspice, nutmeg, cloves, and water. Stir to combine.
  • Bring to a low boil. Reduce heat and simmer, stirring often, for 15 minutes.
  • Let cool to room temperature to serve.
  • Cover and refrigerate leftovers and use within two weeks.
  • For the lobster balls:.
  • Whisk together bread crumbs, flour, baking powder, garlic powder, dill weed, lemon pepper, salt, and Parmesan cheese.
  • Stir in lobster, bell pepper, onion, and eggs until well-combined. Let rest for 15 minutes.
  • Heat 1/2-inch of oil in a heavy skillet to 375°F or preheat a deep-fryer. Roll lobster mixture into balls about 1-1/2 inches in diameter. Deep-fry until golden brown.

2 table sugar
1/2 cup fresh cream
1 cup milk
flavoring

Steps:

  • juice the mange removing the pulp.
  • heat the milk with the sugar until it becomes thick and then add the cream and mango pulp.
  • Stir till the mixture becomes creamy.
  • Add the flavour.
  • Cool immediately and quick freeze till it becomes hard.
  • place in blender and make a smooth mixture to break any ice crystals.
  • place in refrigerator and serve chilled as needed with cherry.
