Steps:
- Preheat the waffle iron according to the manufacturer's directions.
- Place flour, baking powder, sugar, and salt in a bowl. Whisk to combine.
- In a small bowl, mix egg yolks, milk, and butter. Set aside.
- In a separate bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note
- Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites.
- Drop by large spoonfuls onto greased waffle iron, close the lid and cook about 3-5 minutes.

Every Sunday morning, my mom and I used to get up early and make these wonderful waffles. This recipe has been in the family for years, and I will definitly be passing it down to my children.

- In a large mixing bowl, whisk together all dry ingredients.
- Separate the eggs, adding the yolks to the dry ingredient mixture, and placing the whites in a small mixing bowl.

- Heat about 1 inch of oil in a large cast-iron or heavy-bottomed skillet over high heat. Whisk the hot sauce and egg in a medium bowl; toss the chicken in the mixture to coat.
- Combine the flour, poultry seasoning, and salt and pepper to taste in a medium bowl. Set aside 3 tablespoons seasoned flour in a separate bowl; dredge the chicken in the remaining seasoned flour until coated, shaking off any excess.
- Place the chicken in the hot oil and fry until golden and cooked through, 2 to 3 minutes per side, turning once. Transfer to a rack to cool slightly; discard the oil.

- Preheat the waffle iron to the high heat setting.
- In a medium bowl, mix the all purpose flour, whole wheat flour, baking powder, sugar, cinnamon, and kosher salt until thoroughly combined.
- In another bowl, whisk the oil, milk, vanilla and eggs (or see Fluffy Waffles variation**). Pour the wet ingredients into the dry ingredients and whisk gently until the batter is smooth.
- Grease or butter your waffle iron. Add the batter (a little over 1 cup for a Belgian waffle maker or a little over 1/2 cup for a standard waffle maker) into the center of the waffle iron, then cook according to the waffle iron's instructions until golden brown: about 3 to 4 minutes depending on your waffle iron. Remove the cooked waffles and place them on a parchment-lined or greased baking sheet without stacking. Make the waffles to order, or place cooked waffles in a 250°F oven to keep warm.
- Cooked waffles can be frozen; place them in a plastic bag and remove the remaining air with a straw before sealing. To reheat, remove from the freezer and lightly toast in a toaster.

- Preheat waffle iron. In a mixer on medium-high speed, blend together milk, vanilla and eggs. Slowly add melted butter. Mix for one minute before adding in flour and sugar. Mix until well incorporated. For convenience pour batter into a large measuring cup, and let sit for 3-5 minutes before using. The batter will thicken some while sitting. Pour batter onto preheated waffle iron, follow manufactures instructions for making waffles with your iron.
