Chicken Fettuccine Alfredo image

Classic and easy to make, this version of Alfredo doesn't use flour to thicken the sauce. Instead, it relies on a slight simmer and a heavy dose of cheese.

12 ounces fettuccine
Olive oil, for tossing
12 ounces boneless, skinless chicken breast (about 2)
1 stick (8 tablespoons) unsalted butter
2 cups heavy cream
2 pinches freshly grated nutmeg
1 1/2 cups freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
  • Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
  • Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more. Transfer the chicken to a medium bowl.
  • Reduce the heat to medium. Add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce just warm.
  • Whisk the Parmigiano-Reggiano into the sauce. Add the chicken and cooked pasta and toss well. Season with salt and pepper. Serve hot in heated bowls.

1/2 cup 1% cottage cheese
3 tablespoons evaporated milk
1 tablespoon butter-flavored sprinkles
1 garlic clove, minced
2 tablespoons grated Parmesan cheese
2 teaspoons minced fresh parsley
1/8 teaspoon coarsely ground pepper
3/4 cup cubed cooked chicken breast
2 tablespoons chopped sun-dried tomatoes (not packed in oil)
1 tablespoon sliced ripe olives

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a small food processor, combine the cottage cheese, milk, butter sprinkles and garlic; cover and process until smooth. , Transfer to a microwave-safe bowl. Stir in the Parmesan cheese, parsley and pepper. Add the chicken, tomatoes and olives. Cover and microwave on high for 2-3 minutes or until heated through. Drain fettuccine; serve with chicken mixture.

2 teaspoons sesame seeds
2 teaspoons black sesame seeds
2 teaspoons poppy seeds
1 tablespoon dried onion flakes
1 tablespoon dried garlic flakes
2 teaspoons kosher salt
3 tablespoons unsalted butter
3 garlic cloves, chopped fine
2 cups heavy cream
1 lb chicken, sliced into 2x1/4-inch strips
2 tablespoons everything bagel seasoning, divided
1/2 cup finely grated parmesan cheese, plus 1/4 cup for topping
6 ounces cream cheese, cut into cubes
12 ounces cooked fettuccini noodles
4 cups cooked broccoli florets, cut into bite-sized pieces
ground black pepper

Steps:

  • To make Everything Bagel seasoning, in a medium bowl, stir to combine toasted sesame seeds, poppy seeds, onion flakes, garlic flakes and salt.
  • In a large skillet over medium heat, melt butter. Stir in the garlic and cook until fragrant, about 1 minute, then stir in the heavy cream. Bring to a simmer and stir in the chicken and 2 teaspoons everything bagel seasoning. Simmer for about 6-8 minutes until chicken is just cooked through, then stir in 1/2 cup grated parmesan cheese.
  • Continue to cook at a simmer for 3-4 minutes, then stir in the cream cheese, fettuccini and broccoli. Stir to coat and top pasta with 1 tablespoon Everything Bagel Seasoning, 1/4 cup grated parmesan cheese, salt and pepper.
