GRANDMA'S EVERYDAY MEATLOAF



Grandma's Everyday Meatloaf image

Just simple and good. Grandma made meatloaf and served it hot for dinner and cold in sandwiches.

Number Of Ingredients 6

1 lb lean ground beef
1 c dry bread crumbs
1 egg
1/2 c chopped onion
1/2 c catsup
salt and pepper to taste

Steps:

  • 1. Preheat oven to 350 degrees. Mix all ingredients well and shape into a loaf. Place in a bread pan. Bake for 35 minutes. Remove meatloaf briefly from oven and drain as much grease from pan as possible. Top meatloaf with 2-4 tablespoons more catsup. Return to oven and continue to bake for 10-15 more minutes or until done.
  • 2. Grandma served this hot with scalloped potatoes or cold in sandwiches.

My sons loved meat loaf growing up. While all 3 were teenagers at home I would often double or triple this recipe for one meal. Even the one that hates onions loves this recipe. This recipe is from my mom's Better Homes & Gardens Cookbook (1954).

Number Of Ingredients 12

2/3 cup dry breadcrumbs
1 cup milk
1 1/2 lbs ground chuck
2 eggs, beaten
1/3 cup onion, finely chopped
1 teaspoon salt
1/2 teaspoon sage
1/2 teaspoon ground pepper
1/4 cup brown sugar
1/4 cup catsup
1/4 teaspoon ground nutmeg
1 teaspoon dry mustard

Steps:

  • Soak bread crumbs in milk.
  • Add beaten eggs, seasonings, onion (process in food processor to puree for picky eaters).
  • Mix together well.
  • With hands, gently add ground chuck and mix together lightly.
  • Place in loaf pan sprayed with PAM.
  • Bake in 350º oven 45-50 minutes.
  • Prepare topping in small bowl.
  • Pour over meat loaf during last 15 minutes of baking time.
  • *The more you handle the ground beef during the making of meat loaf the tougher it becomes.
  • **Edited - For different texture and taste sautee onion in a bit (1 Tablespoon +/-) of butter. Add 1/2 cup grated carrots (sautee with the onions) for a little extra punch of color and flavor.

1 teaspoons dry mustard

Steps:

  • Combine all ingredients. Mix well.

This is my favorite unstuffed meatloaf, it literally melts in your mouth.

Number Of Ingredients 19

3 lb ground chuck
1 tsp granulated garlic
1/2 tsp granulated onion
1 Tbsp mrs. dash original blend
salt & pepper to taste
1/2 sleeve of cracker crumbs, crushed
2 egg
1/2 c tomato sauce mix
TOMATO SAUCE MIX
2 can(s) (4oz) tomato sauce, no salt added
1/2 tsp bold & spicy mustard
1/3 c molasses
1/4 c worchestshire sauce
1/2 c brown sugar, packed
1/2 tsp granulated garlic
1/4 tsp granulated onion
1/4 tsp black pepper
1 Tbsp mrs. dash original blend
1/2-1 c water

Steps:

  • 1. In small saucepan mix together TOMATO SAUCE MIX ingredients well, EXCEPT water. Add the water AFTER you add about 1/2 c of this mix to meatloaf mix. Then heat sauce on low until meatloaf is done.
  • 2. In a large bowl add meat, spices, cracker crumbs, grated parmesan cheese and eggs until combined. Add just enough TOMATO SAUCE MIX to make meat moist, but not too wet. Mix together well. Form into a loaf and place in baking dish, bake 350º for about 1 hr - 1 1/2 hrs. or until internal temp reaches 155-160º. Brush sauce on top about every 15 minutes while baking.

1/4 cup grated onion
1 tsp salt
1/8 tsp pepper
1/8 tsp sage
Piquant Sauce:
3 Tbsp brown sugar
1/4 cup catsup
1/4 tsp nutmeg
1 tsp dry mustard

Steps:

  • Soak bread crumbs in milk; add meat, eggs, onion and seasonings; mix well.
  • Form individual loaves and place in greased muffin pans. Combine Piquant Sauce ingredients and cover meatloaves.
  • Bake at 350°F for 45 minutes. Or form a single loaf in loaf pan. Spread sauce over and bake 1 hour.
