I was looking for something for dinner and this caught my eye and so we had to try it. This is tender and very yummy. Make and excellent dish for a church brunch or pot luck. I got this recipe from The Best of Country Cooking 2002 Taste of Home.

2 eggs
1/2 cup milk
1 teaspoon Worcestershire sauce
3/4 cup dry breadcrumbs
1 1/2 teaspoons ground mustard, divided
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb cooked ham, ground (about 4 cups)
1 lb ground pork
1 (20 ounce) can sliced pineapple
1/2 cup packed brown sugar

Steps:

  • In a bowl, combine eggs, milk, Worcestershire sauce, bread crumbs, 1 teaspoon mustard, salt and pepper. Add ham and pork mix well.
  • Shape into eight oval patties, set aside.
  • Drain pineapple, reserving 1/2 cup of juice. Place a pineapple slice between each ham patty. (Refrigerate remaining pineapple and juice for another use.) Carefully place in an ungreased 9 in x 5 in x 3 in loaf pan.
  • Pat patties around pineapple to form a loaf. Combine brown sugar, remaining mustard and reserved juice; pour a small amount over loaf. Bake, uncovered, at 350 degrees for 1 1/4 hours or until lightly browned and meat thermometer reads 160 degrees, basting occasionally with remaining juice mixture.

An old fashion ham loaf with pineapple brown sugar glaze is a classic Amish dish and a great way to use up leftover ham.

2 large Eggs
1 cup evaporated milk
1 cup Panko bread crumbs
1/4 teaspoon ground black pepper
1 tablespoon dry seasoning blend
2 pounds Ham (ground, fully cooked)
1/4 cup diced sweet onion (**Optional)
1/3 cup Packed brown sugar
1/4 cup apple cider vinegar
1/2 teaspoon ground dry mustard
1/2 cup crushed pineapple
2 tablespoons Water

Steps:

  • Preheat oven to 350 degrees F.
  • Place ham in food processor and grind for approximately one minute (or use a meat grinder). Put the ground meat in a large mixing bowl.
  • Lightly beat the eggs in a small bowl. Then in the large bowl combine eggs, bread crumbs, milk, pepper and dry seasoning blend with the ground ham and mix well.
  • Shape the ham loaf mixture into a roughly 8 x 4" oval and place into a shallow baking dish or loaf pan.
  • Bake the large loaf uncovered for 25 minutes.
  • Combine glaze ingredients and spoon glaze over loaf.
  • Place loaf back into oven and bake for an additional 35 minutes, basting occasionally with the glaze.
  • Remove loaf from the oven and allow to cool a bit before putting on serving platter and slicing.

Cooking has been a big part of my life...I come from a family of eight, and my husband and I have five children, all grown now. I've made my ham balls for years. They're a great use for leftovers, especially if you're in a hurry. Bob and I farmed for 30 years before our son took over. My farmer still owns two tractors...along with a lawn-cutting and acreage-tilling business!

3 cups ground fully cooked ham
1/2 pound ground pork
1 cup soft bread crumbs
2 large eggs, beaten
1/4 teaspoon pepper
1 can (20 ounces) sliced pineapple
3/4 cup packed brown sugar
1/4 cup vinegar
1/2 teaspoon ground mustard

Steps:

  • In a bowl, combine ham, pork, bread crumbs, eggs and pepper and mix well. Chill. Form into 10 balls; set aside. Drain pineapple, reserving 1/2 cup of juice. Place juice in a saucepan with sugar, vinegar and dry mustard; cook and stir over low heat until sugar is dissolved. Arrange pineapple slices in the bottom of an ungreased 13-in. x 9-in. baking dish. Place a ham ball on each pineapple slice. Pour sugar mixture over all. Cover and bake at 350° for 1 hour or until ham balls are thoroughly cooked.

1 lb minced ham
1 lb ground lean pork
2 eggs
3/4 cup breadcrumbs
3/4 cup sour cream
2 tablespoons tomato sauce
8 slices drained pineapple
1 cup brown sugar
1/2 cup pineapple syrup
2 tablespoons lemon juice
1 teaspoon prepared mustard

Steps:

  • Mix all ingredients together except for the pineapple.
  • Roll into a loaf and divide into nine patties.
  • In a shallow, oven proof dish, form a long roll placing the pineapple in between each patty starting and finishing with meat.
  • Bake for 30 minutes in a slow oven 325 degrees.
  • Take from oven and pour some of the mixture of brown sugar, pineapple syrup, lemon juice, and mustard over the loaf and bake again for one hour, basting every 20 minutes with the glaze.

THIS HAM LOAF CAN BE MADE WITHOUT THE PINEAPPLE. BUT MAKE SURE YOU GLAZE WITH SAUCE
1 lb ground ham
1 lb ground pork
3/4 tsp each - salt & pepper
1 1/2 Tbsp brown sugar
2 eggs
4 slice fresh wheat or white bread crumbs - or 2 cups worth
1/2 c milk
1 medium onion, minced
1/4 tsp paprika
1/4 - 1/2 CUP DRAINED CRUSHED PINEAPPLE FOR THE TOP
BASTING SAUCE
1/4 c vinegar
1/2 c brown sygar
1/4 c pineapple juice
1 Tbsp dry mustard

Steps:

  • 1. In a small saucepan, whisk together glaze ingredients and bring to a boil. Simmer for about 10 minutes, then cool. It will thicken some as it cools.
  • 2. Preheat oven to 350 degree F. Grease a baking dish or small roaster. In a large bowl, mix all ham loaf ingredients until thoroughly blended.
  • 3. Pour out meat mixture into prepared baking dish and shape into a loaf as you would a meatloaf. Brush the top of loaf with glaze. Place in oven and bake for 1 hour and 10 minutes, glazing several times during baking process.
  • 4. Remove from oven. sprinkle on the pineapple if using and drizzle with glaze. Place back into oven for another 10 - 15 minutes. I broiled the last 5 minutes.
  • 5. Place onto a serving platter and slice. Serve with remaining glaze.

1 tablespoon butter
1 tablespoon brown sugar
1 (8 ounce) can sliced pineapple, drained with juice reserved
3 cups ground cooked ham
¼ cup grated onion
¾ cup bread crumbs
2 eggs, beaten
¼ teaspoon mustard powder
1 pinch cayenne pepper
1 cup shredded Swiss cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Melt butter in the bottom of an 8x4 inch loaf pan. Sprinkle brown sugar over the butter. Slice pineapple rings in half, and arrange them over the sugar.
  • In a large bowl, mix together the ham, onion, bread crumbs, eggs, and 1/4 cup of juice from the pineapple. Blend in the mustard powder and cayenne pepper. Pack half of the mixture into the pan on top of the pineapple slices. Sprinkle the Swiss cheese over it, then pack the remaining ham mixture on top. Cover with aluminum foil.
  • Bake for 45 to 50 minutes in the preheated oven. Let cool in the pan for 5 minutes, then turn upside down onto a serving plate. Slice as you would a meatloaf, and serve.

My Grandma Robinson's best friend gave her this recipe. I was skeptical as a kid, but found I could not get enough of it. It was actually a family favorite. It is great as a leftover-even on a sandwich. The photo shows it granished with pineapple rings, so pretty!

1 lb fresh ham, ground
1 lb ground cured ham
16 crackers crushed (i use ritz) 1 cup
1/4 c milk
1/4 c brown sugar
1 can(s) crushed pineapple, drain -save juice
2 eggs
1/4 c ketchup
1/2 tsp salt
4 Tbsp dark or light corn syrup
MY FAVORITE GLAZE
2 Tbsp pineapple juice
2 Tbsp ketchup
1-2 Tbsp apple cider vinegar
1 tsp mustard

Steps:

  • 1. ***I call ahead to my meat market and have them grind the ham. You may use half ground pork if you like in place of half of the fresh ham.***
  • 2. Preheat oven to 350
  • 3. Crumble the ham in a bowl. Lightly beat the eggs and milk in a med. bowl, add the ketchup, syrup and brown sugar. mix well.
  • 4. Pour the egg mixture over the ham, add drained pineapple and salt, and mix with hands. Careful not to over-mix.
  • 5. Place in a loaf pan or make a free form loaf on a baking sheet. Spoon off grease twice during baking.
  • 6. Add the glaze during the last 15 minutes. Bake about an hour or until nicely browned.
