MOCHIKO CHICKEN

This is Hawaii's version of popcorn chicken! Marinate chicken overnight in a mochiko flour batter, then deep fry till crisp and golden.

Number Of Ingredients 9

2 pounds boneless, skinless chicken thighs
1/4 cup mochiko flour
1/4 cup cornstarch
1/4 cup sugar
1/4 cup soy sauce
2 eggs
1 teaspoon salt
6 cloves garlic, minced
1/4 cup green onions, chopped (optional)

Steps:

  • Chop the chicken into 1-inch, bite-size pieces.
  • Mix all the other ingredients (mochiko flour, cornstarch, sugar, soy sauce, eggs, salt, garlic, and green onions) together in a bowl.
  • Add the chicken to the bowl and marinate overnight (or at least 8 hours) in fridge.
  • Fill a small pot 1" high with vegetable oil. Deep fry on medium-high heat until the chicken is crisp and golden brown. This takes about 6 minutes. Eat with rice ^_^

Ethel was one of our women in our Sewing Bee, she passed away recently, she was a young 93. I made this chicken dish to take to the dinner following her memorial service. She gave this to me years ago. Easy to make, and very tasty. We usually throw a few potatoes into the oven before starting the dish, and cook some tiny garden peas at the end.

6 -8 chicken thighs
2 onions (chopped)
1/2 cup honey (wild)
2/3 cup whole grain mustard
1 teaspoon Coleman's dry mustard
1 teaspoon ground ginger
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce

Steps:

  • Arrange chicken in baking dish.
  • Put chopped onion over chicken.
  • Mix remaining ingredients and pour over chicken.
  • Bake at 350 degrees for about 1 hour.
  • Serve.

Mochiko chicken is a staple in the islands, usually found at every picnic table, at every plate lunch stop and at every lunchwagon. The addition of the toasty sesame seeds adds a wonderful flavor !

3 lbs. chicken drumettes
2 TB flour
1/4 c. Mochiko Flour (Click to Order)
1/4 c. cornstarch
1/4 c. sugar
1 TB salt
1/4 c. Aloha Aloha Shoyu Soy Sauce (Click To Order)
1 TB Oyster Sauce (Click to Order)
1 tsp. fresh ginger, grated
1 tsp. Thai fried garlic or 1 clove garlic, minced
2 eggs, beaten
1/4 c. green onions, chopped
1 c. sesame seeds, toasted
vegetable oil for frying

Steps:

  • In a large skillet over medium heat; warm oil.
  • In a large bowl, combine flour, cornstarch, mochiko, sugar, and salt.
  • Mix in soy sauce, oyster sauce, ginger, garlic, eggs, and green onions.
  • Dip chicken into batter and sprinkle generously with sesame seeds.
  • Fry in oil until done, about 10-12 minutes.
  • Drain.
  • Serves 8.

My husband's Aunt Ethel gave me this recipe. We loved it and had it often. Every time I have it, I think of her. She was such a fun lady and lived to be 100.

Number Of Ingredients 7

4 skinless, boneless chicken breasts
4 slice monterey jack cheese
1 1/2 can(s) cream of chicken soup (10 3/4-oz can)
6 Tbsp white wine
3/4 c mushrooms, sauteed
2 c stuffing mix (we use peppridge farm)
2 Tbsp butter, melted

Steps:

  • 1. Place chicken in flat casserole. Top with cheese. Combine soup and wine. Add mushrooms.
  • 2. Pour over chicken and cheese.
  • 3. Sprinkle stuffing mix evenly over all. Drizzle melted butter over top.
  • 4. Bake at 350ºF uncovered for 45 minutes to 1 hour.
  • 5. Crock Pot: Spray crock pot with cooking spray. Arrange chicken in bottom of crock pot. Top with cheese, layering cheese if necessary. Combine soup and wine. Pour over cheese. Sprinkle with stuffing mix. Drizzle with melted butter. Cook on LOW for 8 to 10 hours, or on HIGH for 4 to 6 hours.
