1 head lettuce (iceberg or romaine)
2 tomatoes (ripe)
1 red onion
1/3 to 1/2 cup extra-virgin olive oil ( Spanish olive oil )
1/8 to 1/4 cup red wine vinegar
Salt (to taste)
Optional: splash cold water

Steps:

  • Gather the ingredients.
  • Rinse the head of lettuce thoroughly and drain it well. Break or tear it into pieces into a large salad bowl.
  • Cut the tomatoes into eighths.
  • Cut about a quarter of the red onion into very thin slices (cut more if you desire).
  • Place tomatoes and onion on top of lettuce.
  • Combine oil and vinegar in a bowl and whisk together.
  • Just before serving, pour dressing over salad and toss. Sprinkle salt to taste and toss again. Add a splash of water if needed.

1 1/2 pounds ripe plum tomatoes, sliced 1/4inch thick
3 tablespoons fruity Spanish olive oil
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 teaspoon sugar (optional)
1 1/2 tablespoons white wine vinegar
1/2 bunch basil, leaves only, cut into chiffonade

Steps:

  • Arrange the tomatoes in opposing circles on an oval platter. Drizzle the olive oil evenly over the tomatoes. Sprinkle with the salt, pepper and, if desired, sugar. Let stand for about 15 minutes and, just before serving, sprinkle with the vinegar and basil.

1 tablespoon honey
1½ tablespoons reserve sherry vinegar
Kosher salt
¼ cup extra-virgin olive oil
¼ cup corn nuts, preferably Quicos
4 medium heirloom tomatoes, cut into wedges
4 cups 1-inch watermelon cubes
¼ cup very thinly sliced sweet onion
3 ounces goat cheese, such as Capricho de Cabra
2 tarragon sprigs

Steps:

  • Whisk the honey, vinegar, and ½ teaspoon salt in a small bowl. While whisking, add the oil in a slow, steady stream until emulsified.
  • Pulse the corn nuts in a food processor until finely chopped.
  • Arrange the tomatoes in serving dishes in a single layer and sprinkle with ½ teaspoon salt. Top with the watermelon and onion and drizzle with the dressing. Crumble the goat cheese and pluck the tarragon leaves on top. Sprinkle on the corn nuts and serve immediately.
